TURKEY AND CHORIZO CHILI

- Heat the oil in soup pot or Dutch oven over medium-high heat. Add the chorizo and brown. Add the turkey and break up with a potato masher, then season with some black pepper. When the turkey is browned, add in the corn.
- Place the reserved corncob in a small pot and add the stock and a little water to cover. Bring to a bubble and simmer.
- To the meat and corn, add the chipotle puree, stirring until fragrant. Add the cinnamon, garlic and onions, and partially cover to soften, 5 minutes. Add the tomato paste and stir until fragrant, about 1 minute.
- Remove the cob from the corn stock, then add the stock and beans to the chili, and stir to combine. Cool and store the chili for a make-ahead meal.
- Reheat over medium heat, adding a little more stock or water if necessary.
- To serve, top with cilantro and the juice of a wedge of lime and some crushed corn chips.

- Brown beef and chorizo in Dutch oven or large deep skillet over medium heat; drain. Return meat to pan. Add onions, peppers and garlic; cook and stir 5 min. or until crisp-tender.
- Add tomatoes and water; stir. Bring to boil; cover. Simmer over low heat 30 min., stirring occasionally. Add beans; cook, stirring frequently, 2 to 3 min. or until heated through.
- Serve topped with sour cream and cheese.

- Place a pot of water on to boil for macaroni. When it boils, salt water and cook pasta until a little under done, just shy of al dente.
- While pasta cooks, place a small nonstick skillet over medium-high heat and add a drizzle of olive oil and chorizo.
- Brown the chorizo then add the canned tomatoes to the pan and heat them through. Remove from heat and reserve.
- While chorizo begins to cook, heat a medium sauce pot over medium-low heat.
- Add 1 tablespoon olive oil, then add onions and chipotles and cook 3-5 minutes to sweat it out and turn the juices sweet. Raise heat up a bit, add the flour and whisk together until mixture bubbles up. Cook 1 minute more.
- Whisk in milk and stock and raise heat up a little more to bring the sauce to a quick boil. Once it bubbles, drop heat back to a rolling simmer sauce to thicken, 3-5 minutes.
- Drain macaroni or pasta. Add cooked pasta back to the large pot.
- Add cheese to milk sauce and stir to melt, a minute or so.
- Stir in chorizo and tomatoes and season sauce with salt and pepper.
- Pour sauce over cooked pasta in large pot and toss to combine. Transfer to a large serving platter, garnish with chives and serve.

CHIPOTLE CHILI RECIPE
This chunky chipotle chili recipe is made with a mix of peppers, chili seasoning, and lots of chipotles in adobo sauce for the best rich and smoky flavor.

- Heat the oil in a large pot to medium-high heat and add the ground turkey (or beef), onion and peppers. Cook them down about 10 minutes, or until the meat is cooked through and the vegetables are softened.
- Add the garlic and cook another minute, stirring.
- If using fresh tomatoes, chop them and add them to the pot. Cook about 10 minutes to let them break down. If using canned fire roasted tomatoes, just add them to the pot and go to the next step.
- Add the remaining ingredients and give it all a good stir.
- Reduce the heat and cook the chili on low heat for at least 1 hour to let the flavors develop, stirring every now and then. Adjust for seasonings if you wish. Alternatively, you can transfer everything to a slow cooker or crock pot at this stage and cook on high for 1-2 hours, or on low for 3-4 hours, until the flavors develop to your preference.
- Serve in bowls with your favorite fixin's.

The chorizo gives this a very good flavor. Spice it with whatever you like. I used a habanero spice mix called "Hotter than Hell". But this doesn't have to be hot if you like it mild. Just season with whatever you are comfortable with.

- Brown ground beef and chorizo with onion in a large heavy pan, breaking up meat lumps. Drain any fat.
- Add garlic paste, salt, pepper, cumin, paprika, chile powder, and ground habanero (or any other hot pepper or sauce you would like, in whatever quantity you like).
- Stir in beef broth and crushed tomatoes, and simmer covered, for 1 hour, stirring occasionally.

Stir in the coriander, cumin and tomatoes, followed by the turkey, stock, chipotles, cornmeal and honey. Simmer over low heat to thicken, 45 minutes. Top with the chips, and serve with a lime wedge alongside. Cook's Note: Cool and store for a make-ahead meal, reheating over medium heat.

- Cook the onions in olive over medium-high heat for about 4 minutes. This can be done in a frying pan or directly in a slow cooker dish if it’s heat-proof. Then add the diced chorizo, stir and cook for a further 2 minutes, until slightly browned.
- Repeat the same steps as above but cook everything in a large pot or a deep frying pan with a lid. Once all ingredients are added and brought to a simmer, cover with a lid and cook for 30-45 minutes, stirring a few times.

- Pour black beans and their juice into a small saucepot over medium heat; cover and simmer until hot. This usually takes only 10 minutes, but if you forget you can also heat them quickly over high heat in under 5 minutes or in the microwave.
