Easy to make ham and cheese roll ups

2 8 oz packages cream cheese
1 ranch seasoning packet
10 American cheese slices
5-10 deli ham slices
5 tortillas

Steps:

  • Stir ranch seasoning into softened cream cheese. (For extra creamy cream cheese, beat with a mixer for 2-3 minutes.)
  • Spread a thin layer of cream cheese mixture over top of the tortilla. Layer 1-2 pieces of ham and 2 slices of cheese down the middle of the tortilla.
  • Roll up as tightly as possible and then wrap in plastic wrap. Continue making rolls until ingredients are finished. Store in the refrigerator for at least one hour.
  • Once the rolls have chilled, remove plastic wrap and use a knife to cut off the ends. Slice roll into 1/2 inch rounds and serve.

2 (8 ounce) packages shredded Cheddar cheese
1 bunch green onions

Steps:

  • In a medium microwave safe bowl, mix cream cheese and Cheddar cheese. Microwave on high heat approximately 45 seconds, stirring frequently until melted and smooth.
  • Lay ham slices flat, and spread with cheese mixture. Place one green onion parallel to one edge of each ham slice. Tightly roll the ham slices into thin logs around the green onions.
  • Slice the logs into 1/4 to 1/3 inch wide rings. Arrange rings flat on a large serving platter. Cover and chill until serving.

1 17.5 oz package (2 sheets) store-bought puff pastry(thawed but still cool)
1/2 cup pizza sauce
12 slices deli ham
1-1 1/2 cup shredded cheese (mozzarella)
2 Tablespoon olive oil
1 teaspoon dried basil or oregano ( you can combine both)
2 tablespoon grated parmesan cheese

Steps:

  • Preheat oven to 400 F and line two large baking sheets with silicone baking mats or parchment paper and set aside.
  • Place a sheet of thawed puff pastry onto a baking paper dusted with flour and roll out into approximately 8×12 inch rectangle (dimension may vary depending on brand of pastry you use) It should be rolled out thin but don't thin it out too much or it won't be able to hold the filling.
  • Spread athin layer of pizza sauce, arrange ham slices and sprinkle with shredded cheese (do not over-top or else you won't be able to roll the dough into neat log, you can add more cheese onto top of each slice before baking).
  • Tightly roll up the dough like a cinnamon bun with the baking paper already under the dough(lift the edge of baking paper and roll). Repeat the process with the second sheet of puff pastry and the other half of the filling.
  • You can place rolls onto 1 prepared baking sheet and set it in the freezer for 10 minutes , it will be easier to cut, or you can cut it immediately.
  • Cut roll into slices, approximately 1-inch wide and place onto baking sheet keeping 2 inch apart.(while you cut the roll slices will flatten and lose their shape but using your finger shape them back into circle when place them onto baking sheet).
  • Combine olive oil with basil or oregano and brush the tops and edges of each slice, then sprinkle with parmesan.
  • Bake in preheated oven about 15-20 minutes (until the edges are golden brown).
  • Let them cool 5-10 minutes onto baking sheet (if the bottoms are stick a little run a thin knife under each slice and transfer them onto a serving plate).
  • If you want make them ahead and keep in the freezer pack them into a foil. When you're ready to bake take them out the freezer for 15 minutes before cutting into slices, then let the slices sit another 15 minutes at room temperature to thaw completely before baking(brush with oil, sprinkle with parmesan and bake).

2 tablespoons brown sugar
1 cup warm milk (110-115F)
2 1/2 cups flour
warm milk, mixture
1/4 ounce instant dry yeast
1/2 cup ham, finely chopped (or slices)
1/2 cup mozzarella cheese, finely shredded (or slices. Use another if you want to do so)

Steps:

  • Combine milk and brown sugar in a bowl and stir til sugar is dissolved.
  • Add flour and .25 oz instant dry yeast.
  • Stir until a soft dough forms. Add more flour as needed (up to 1/2 cup).
  • Turn the dough out onto a lightly floured surface and gently knead a few times, forming a smooth ball.
  • Brush the inside of a large clean bowl with olive oil. Transfer the dough to the bowl and cover tightly with plastic wrap. Alow it to rise in a warm, draft-free area for about 2 hours, or until the dough has doubled in size and bubbles appear on the surface.
  • Turn the dough onto a lightly floured surface. Divide it into 4 equal pieces. Lightly dust a rolling pin with flour and roll each piece of dough into roughly a 12x4-inch rectangle.
  • With the long sides facing you, place the ham topped by the cheese onto the bottom third of each piece of dough.
  • Starting with the long edge with ham and cheese, roll tightly into logs.
  • Cut each roll into 12 pieces.
  • Transfer to a silpat (parchment) lined sheet and let them rest for 30 minutes.
  • Preheat oven to 400°F.
  • Bring 6 cups of water to a boil. Add 4 teaspoons of baking soda to the boiling water and reduce the heat to a gentle simmer.
  • Boil the pretzels in batches, cooking for about 20 seconds each and turning once. If you are having casualties, pinch the ends closed just a little.
  • They should look slightly puffed when they are done. Use a slotted spoon to transfer them back to the baking sheet.
  • Bake in the preheated oven until they are puffed and golden, about 15 minutes.
  • Brush with 4 tablespoons of melted butter and sprinkle with 1-2 tablespoons of coarse kosher salt.
  • Best served warm. Or enjoy room temperature.
  • Consider a mustardy dipping sauce.

1 tsp ground mustard
1/2 tsp onion powder
1/4 tsp cayenne
1/3 cup frozen unsalted butter (grated)

1 cup chopped fully cooked country ham
2 Tbsp chopped fresh chives (plus additional for garnishing)
2 Tbsp melted butter (to brush tops)

  • Preheat oven to 400°F. Line 2 large baking sheets with parchment paper. Set aside.
  • In a medium size mixing bowl, use a whisk to sift together flour, garlic, mustard, onion powder and cayenne. Add grated butter, mixing until evenly distributed. To the bowl add buttermilk, mix well.
  • Once dough is formed, add cheese, ham and chives. Use a non stick spatula to gently mix through the dough until fully combined.
