2 tablespoons cumin
2 tablespoons dry mustard, such as Coleman's
2 tablespoons onion powder
2 tablespoons smoked paprika
3 tablespoons kosher salt
1 tablespoons ground black pepper
1 tablespoon cayenne pepper
4 racks baby back ribs
4 whole dried bay leaves
4 cups BBQ sauce
Serving suggestions: fresh cut French fries and coleslaw

Steps:

  • Preheat the oven to 225 degrees F. Please note: The oven should not be hotter than 250 degrees.
  • Combine the cumin, dry mustard, onion powder, smoked paprika, salt, black pepper and cayenne pepper in a bowl mixing well.
  • To prepare the ribs, remove the silver skin from the back or under the rib side and rub the trimmed rib racks with the spice mixture. Place the racks on a sheet of plastic wrap, top with the bay leaves and wrap tightly. Place in the oven (the plastic will not melt at this low temperature) and roast for 2 hours.
  • Remove the ribs from the oven and allow them to rest for 10 minutes. Place the ribs on a baking sheet and coat with the BBQ sauce. Roast under the salamander on medium heat or in the oven set to broil until the sauce is caramelized, 3 to 4 minutes.
  • Remove the sauced ribs and allow them to rest for 3 to 5 minutes. Portion the ribs into serving-size pieces. Plate and serve with French fries and coleslaw.

BRAISED BISON SHORT RIBS WITH ASIAN SLAW



Braised Bison Short Ribs with Asian Slaw image

4 pounds bison short ribs
3 tablespoons all-purpose flour
1 teaspoon dry mustard
1 teaspoon salt
1/4 to 1/2 teaspoon ground black pepper
2 tablespoons canola oil
2 1/2 to 3 cups tomato sauce
3/4 cup dry red wine
1 1/2 teaspoons prepared mustard
3 tablespoons red wine vinegar
1 (3-inch) piece ginger, finely grated
1/2 cup rice wine vinegar
1 tablespoon soy sauce
1 lime, juiced
2 tablespoons sesame oil
1 head napa cabbage, sliced thin
1 red bell pepper, julienne fine
1 yellow bell pepper, julienne fine
1 large carrot, finely grated
3 green onions, cut on the bias, all of white part and half of the green
2 tablespoons chopped cilantro leaves
2 tablespoons chopped mint leaves
1/2 teaspoon ground black pepper

  • Ribs:
  • Preheat oven to 275 degrees F.
  • Cut away any membrane and fat from the meat side of the ribs. The thin connective membrane on the bone side of the ribs can be left intact. Cut ribs into 3 to 4-inch sections. Combine flour, dry mustard, salt and pepper in a large plastic or paper bag. Add ribs and shake to coat. Put the canola oil in a large saucepan and over medium-high heat, brown coated ribs on all sides. Transfer browned ribs to a 4 to 6 quart Dutch oven. Blend remaining ingredients in a medium-size bowl. Pour over ribs, cover and cook in oven for 3 hours. Remove from oven.
  • Asian Slaw:
  • In a small bowl, or food processor combine ginger, vinegar, soy sauce, lime juice, and oil. In a large bowl, combine all the other ingredients, add the dressing and toss to coat the slaw.
  • Serve ribs with slaw.

COFFEE-RUBBED SHORT RIB WITH CARAMELIZED SHALLOT-BLUE CHEESE FONDUE AND CROSTINI



Coffee-Rubbed Short Rib with Caramelized Shallot-Blue Cheese Fondue and Crostini image

2 tablespoons instant espresso powder
2 tablespoons Aleppo pepper
2 tablespoons dark brown sugar
2 teaspoons smoked paprika
1 1/2 teaspoons mustard powder
4/5 teaspoon chili powder
4/5 teaspoon ground ginger
One 6-ounce boneless short rib
Kosher salt and freshly ground black pepper
Grapeseed oil
1 ounce mirepoix (diced celery, carrot and onion)
2 ounces red wine
8 ounces beef stock
2 florets cauliflower, sliced thin or florets
Grapeseed oil
2 cloves garlic, thinly sliced
2 shallots, sliced thin
2 1/2 ounces heavy cream
2 ounces blue cheese crumbles
1 tablespoon thinly sliced green onion, for garnish

Steps:

  • For the coffee rub: Combine the espresso powder, Aleppo pepper, brown sugar, smoked paprika, mustard powder, chile powder and ground ginger. Mix to blend.
  • For the short rib: Sprinkle the short rib with salt and pepper, and then coat with 1 ounce of the coffee rub. (Reserve the remaining coffee rub for another use.) Refrigerate overnight.
  • In a hot skillet, add a small mount of grapeseed oil and sear the coffee-rubbed short rib on all sides. Remove the short rib from the pan, add the mirepoix, and deglaze with red wine. Cook until reduced by half, 2 to 3 minutes.
  • Add the beef stock, bring to a boil, and then turn down to a simmer. Braise until the short rib is tender, 2 1/2 to 3 hours (longer if needed).
  • Remove the short rib from the braising liquid, and reduce the sauce to 1 ounce.
  • For the fondue: Saute the cauliflower in grapeseed oil until lightly browned, 2 minutes. Add the garlic and shallots; saute until caramelized, another 3 minutes.
  • Add the heavy cream, reduce for 2 minutes to thicken, and then stir in the blue cheese to make a fondue. Add salt and pepper to taste.
  • To plate: Place some cauliflower in the center of a serving plate and spoon over the fondue. Set the braised short rib on the cauliflower; drizzle the reduced sauce over the top. Garnish with green onions.

SHORT RIB, BACON AND EGG BURGERS



Short Rib, Bacon and Egg Burgers image

2 pounds ground short rib
1 tablespoon mixed salt and black pepper
Butter, softened, for toasting
4 buns, 1/4-inch thick
1 tablespoon grapeseed oil
4 eggs
8 bacon slices, fried semi crisp
4 tomato slices

Steps:

  • In a bowl, blend the ground meat with the salt and pepper, mixing well but not over mixing. Divide into four 8-ounce portions and press flat with a burger press or between plates, should be 1/2-inch thick. Next, on a preheated flat top or griddle, sear the burgers on the first side, 4 minutes, and then flip and repeat the process. Cook the burgers until the internal temperature reaches 140 degrees F for medium.
  • For the buns, preheat a saute pan over medium heat (or use the griddle from the burgers). Then spread butter on both sides of the interior of the buns. Toast the buns until browned, 1 to 2 minutes.
  • Finally, heat the oil in a saute pan over high heat. Add the eggs and cook until the whites are set, with a soft yolk, for over-medium eggs.
  • To build, stack a burger on a toasted bun with 2 bacon slices, a tomato slice, a fried egg and the bun top. Repeat with the remaining ingredients.

BRAISED SHORT RIBS WITH SEARED SHRIMP AND GRITS



Braised Short Ribs with Seared Shrimp and Grits image

4 ounces beef short rib
Salt and freshly ground black pepper
4 ounces mirepoix (equal parts chopped celery, carrots and onions)
1 cup red wine
2 ounces beef stock
1/2 cup stone-ground white grits
2 ounces cream cheese or mascarpone
2 tablespoons sliced green onions
2 ounces grapeseed oil
2 ounces green beans
4 jumbo shrimp (size 16/20), peeled and deveined
2 ounces goat cheese

Steps:

  • Preheat the oven to 200 degrees F.
  • Heat a high-sided saute pan over medium-high heat. Sprinkle the beef with salt and pepper, and then sear the meat to render the fat. Add the mirepoix and cook to caramelize the vegetables. Deglaze with the wine and reduce. Add the beef stock, then transfer to the oven and cook until tender, 3 hours.
  • Cook the grits according to the package instructions, then mix in the cream cheese and green onions to finish.
  • Heat the grapeseed oil in a large saute pan and saute the green beans and shrimp until cooked through, 5 minutes. Season with salt and pepper, then add the goat cheese.
  • On a serving plate, add a line of grits, place the short rib on one area with some of the sauce from the bottom of the braising pan. Place the green beans next to the short rib and the shrimp over the green beans. Serve hot.

2 tablespoons cayenne powder
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons white pepper
2 tablespoons kosher salt
1 tablespoon dry mustard, such as Coleman's
1 tablespoon course black pepper
5 teaspoons seafood seasoning, such as Old Bay
1 teaspoon ginger powder

Steps:

  • With a wooden spoon, blend the brown sugar, cayenne, garlic powder, onion powder, white pepper, salt, dry mustard, black pepper, seafood seasoning and ginger powder until mixed. Then bag until usage.

Prime Rib with Herb Rub image

1/2 cup parsley, minced
2 tablespoons minced garlic
2 tablespoons grapeseed or olive oil
2 tablespoons sea salt or kosher
1 tablespoon ground black pepper
4 pounds prime rib, bone out

Steps:

  • First, preheat the oven to 400 degrees F, for rib cooking.
  • Next, in a bowl, blend the parsley, garlic, oil, salt and pepper together well to incorporate.
  • To prepare the beef, trim the fingers from the bottom of the beef and the tail of the rib, retaining the center rib section. Then evenly apply the rub to the entire rib.
  • To cook the rib, begin cooking for 20 minutes, then reduce the heat to 225 degrees and finish for 1 1/2 hours for medium-rare to medium.

MOLASSES BRAISED SHORT RIBS

1 red bell pepper, stems and seed removed
3 tablespoons grapeseed oil (1 tablespoon to roast the bell pepper, and 2 tablespoons to saute the vegetables)
4 pounds beef short ribs, cut into lengths which will fit into a pan to saute
Salt and freshly ground black pepper
2 tablespoons grapeseed oil
2 stalks celery, diced small
2 large carrots, peeled and diced small
1 large onion, diced small
1 quart beef stock
2 tablespoons tomato paste
1/4 cup molasses
1 tablespoon minced fresh rosemary leaves, stripped from 5 or springs
1 tablespoon minced fresh thyme leaves, stripped from 3 or 4 large sprigs
2 tablespoons cornstarch
2 tablespoons minced fresh flat-leaf parsley

Steps:

  • Preheat oven to 425 degrees F. Brush bell pepper with grapeseed oil (reserving the rest of the oil) and roast in oven until charred, about 15 minutes. Remove from oven and place in a covered container or a plastic bag to sweat. Allow oven heat to drop to 350 degrees F.
  • Season short ribs with salt and pepper. Heat remaining 2 tablespoons of grapeseed oil in a large saute pan with a lid. Sear short ribs on all sides and remove to a utility platter. In the same pan, saute celery, carrots, and onion until the onion turns translucent. Add beef stock, tomato paste, molasses, rosemary, and thyme, and stir to combine. Return short ribs to pan, cover with a lid or foil and braise at 350 degrees F until the meat falls from the bone, about 1 to 1 1/2 hours.
  • While the short ribs are braising, peel the roasted bell pepper and cut julienne.
  • Remember to use an oven mitt when you remove the pan from the oven.
  • Remove rib meat and bones to a utility platter. Strain the pan juices into a bowl and then return them to the pan over medium-high heat. Create a slurry by whisking 2 tablespoons water into a small bowl of the cornstarch. Whisk the slurry into the pan juices and allow the mixture to thicken.
  • Arrange rib meat on a platter and spoon sauce over. Garnish with julienned roasted peppers, and sprinkle with parsley leaves.

1 cup soy sauce
1 cup Worcestershire sauce
2 tablespoons Rib Rub, recipe follows
BBQ Sauce, recipe follows
3 tablespoons light brown sugar
2 tablespoons cayenne powder
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons white pepper
2 tablespoons kosher salt
1 tablespoon dry mustard, such as Coleman's
1 tablespoon course black pepper
5 teaspoons seafood seasoning, such as Old Bay
1 teaspoon ginger powder
3 cups ketchup
1 cup brown sugar
1 cup rice wine vinegar
1/2 cup stone ground mustard
1/3 cup Worcestershire sauce
2 tablespoons cayenne pepper
1 tablespoon sea salt

Steps:

  • Prepare a smoker to high heat, 450 degrees F. To prepare the ribs, remove the silver skin from the back or under rib side. Mix the soy and Worcestershire sauces together. Then on a baking sheet or pan, mop on the basting liquid and sprinkle with the Rib Rub. After basting and seasoning, place the ribs on the rack of the smoker and cook for 1 hour. Mop or baste twice during cooking. Once the ribs have cooked for 1 hour, glaze with BBQ Sauce and finish for a final 10 minutes to allow the sauce to glaze the ribs. Serve and enjoy. Cook's Note: Ribs may require additional cooking time due to size and tenderness.
