1 large zucchini, halved and sliced into 1/4-inch half-moons
1 large yellow squash, halved and sliced into 1/4-inch half-moons
1 large yellow onion, halved and sliced thin
1 medium orange bell pepper, seeded and chopped
1 medium red bell pepper, seeded and chopped
1/4 cup olive oil
1 tablespoon minced fresh oregano
1 tablespoon minced fresh thyme
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
3 cloves garlic, minced
4 cups chicken stock
One 14.5-ounce can stewed tomatoes
1 cup heavy cream
1 bay leaf
Juice of 1/2 lemon
1/4 cup chopped fresh parsley

Steps:

  • Preheat the oven to 475 degrees F.
  • Add the zucchini, yellow squash, onion and bell peppers to a large mixing bowl and toss with the olive oil, oregano, thyme, salt, pepper and garlic until coated. Divide the vegetables between 2 baking sheets and arrange them in a single layer. Roast, turning the vegetables halfway through, until they start to deepen in color and are slightly tender, about 10 minutes.
  • Add the roasted vegetables to the bowl of a slow cooker along with the stock, stewed tomatoes, cream and bay leaf. Set the slow cooker to low and cook for 3 hours.
  • Remove the bay leaf, add the lemon juice and, using an immersion blender, pulse to blend the soup until you achieve a smooth and rustic texture. Stir, taste and adjust the seasoning as needed.
  • Serve in a bowl garnished with the chopped parsley. If freezing, cool the mixture completely, then transfer to freezer-safe bags, seal and place in freezer.

6 beefsteak tomatoes, halved and cored
2 leeks, white and pale-green parts cut into 1/2-inch pieces
2 carrots, cut into 1/4-inch pieces
4 cloves garlic
2 tablespoons olive oil
Coarse salt and ground pepper
2 cans (14 1/2 ounces each) reduced-sodium vegetable broth
1/4 cup chopped fresh basil

Steps:

  • Preheat oven to 425 degrees. In roasting pan, toss tomatoes with leeks, carrots, garlic, and oil. Season with salt and pepper. Roast in a single layer (tomatoes cut sides down) until tender, 1 hour. Using tongs, peel off tomato skins.
  • In saucepan, bring vegetables, vegetable broth, and 1 cup water to a boil. Reduce heat; simmer 10 minutes.
  • In batches, puree in blender. Stir in basil.

I "created" this recipe just to get some of those veggies I don't like into my diet. LOL It is probably a combination of ideas I have seen on TV or on recipe sites LOL Each time I make it there is a change with what I put in for veggies and amounts.So feel free to add or subtract from it to make it your own. I even used my immersion blender to make a semi pureed soup. Great way to hide those veggies picky eaters would never try LOL All amounts listed are approximate .

2 lbs russet potatoes, about 4 large
1 lb turnip, about 2 small
1 large red onion
3 garlic cloves, minced
1 lb eggplant, about 1 medium sized
1/4 lb zucchini, about 1 medium
1 lb parsnip, about 2 small
1 lb carrot, about 3 large
1 large red pepper
1/3 cup olive oil
1/4 cup balsamic vinegar
1 teaspoon dry basil
1 teaspoon dried thyme
1 teaspoon dry oregano
6 cups beef broth or 6 cups vegetable broth

Steps:

  • Wash all veggies. Peel the potatoes, turnips, carrots , onion and parsnips. I don't peel the eggplant or zucchini. Cut into large chunks all veggies. place in a large bowl and toss with the oil and vinegar. Place on a foil lined baking sheets. I use two one for the firm fleshed veggies and one for the softer veggies.
  • Roast at 400 for about 15-25 minutes. Removing the vegetables that are cooking faster before they become soft.Remember these still need to cook as the soup. This is just to give some carmelization to the veggies.
  • I also use separate bowls when removing from the oven.
  • Eggplant, zucchini and red pepper in one bowl all other veggies in another one. If the eggplant is seedy I remove most of them now.
  • Once all veggies are toasted. Combine remaining ingredients and veggiesIn a large soup pot EXCEPT the eggplant, zucchini and red pepper.
  • Simmer over a medium low heat for about 30 minutes add remaining veggies and simmer another 20 minutes until fork tender.

These little flavor bombs come together quickly. Use standard pantry ingredients to make 3 varieties that kids will love. The longer you dry the chickpeas before baking, the crisper they will be. If you have time, strain and rinse them, pat them dry, spread them on a baking sheet and refrigerate them, uncovered, overnight, before roasting.

Three 15-ounce cans chickpeas
3 tablespoons vegetable oil
3/4 teaspoon chili powder
1/4 teaspoon ground coriander

Steps:

  • For the chickpeas: Preheat the oven to 400 degrees F.
  • Put a few layers of paper towels on your work surface. Strain and rinse the chickpeas in a colander, then shake off as much water as possible. Transfer them to the paper towels, top with more paper towels, then pat them gently and roll them around a bit to dry. Discard any papery skins that have peeled off or are about to. Slide the chickpeas onto a large rimmed baking sheet, and let stand at room temperature for at least 30 minutes.
  • Roast the chickpeas, stirring them occasionally to keep them from burning in spots, until a little shriveled and pretty crispy, about 45 minutes. Start checking them at around 35 minutes to make sure they are not burning.
  • Meanwhile, make the seasoning mixes. For the Taco Seasoning: Mix the chili powder, coriander, cumin, granulated garlic and onion and 1/2 teaspoon salt in a small bowl.
  • For the Vinegar-Lime Seasoning: Mix the vinegar, lime zest and 1/2 teaspoon salt in a small bowl.
  • For the Onion-Garlic Seasoning: Mix the granulated garlic and onion and 1/2 teaspoon salt in a small bowl.
  • When the chickpeas are done, divide them evenly among 3 medium bowls. Toss each batch with 1 tablespoon of the oil, then toss 1 batch with each of the seasoning mixes.
  • Return the chickpeas to the baking sheet, keeping each batch separate. Roast them for 3 minutes, just to cook the seasonings slightly. Let cool completely on the pan on a rack, about 30 minutes, then transfer to airtight containers. The chickpeas will keep for 1 day and will soften slightly as they sit.

1 quart Roasted Winter Vegetables, recipe follows
Kosher salt and freshly ground black pepper
For serving:
Brioche Croutons, recipe follows
Good olive oil
1 pound carrots, peeled
1 pound parsnips, peeled
1 large sweet potato, peeled
1 small butternut squash (about 2 pounds), peeled and seeded
3 tablespoons good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons chopped fresh flat-leaf parsley
6 ounces brioche loaf or challah
1 tablespoon good olive oil
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Preheat the oven to 350 degrees F.

Steps:

  • In a large saucepan, heat 3 cups of chicken stock. Coarsely puree the Roasted Winter Vegetables and the chicken stock in the bowl of a food processor fitted with the steel blade (or use a handheld blender). Pour the soup back into the pot and season, to taste. Thin with more chicken stock and reheat. The soup should be thick but not like a vegetable puree, so add more chicken stock and/or water until it's the consistency you like.
  • Serve with Brioche Croutons and a drizzle of good olive oil.
  • Preheat the oven to 425 degrees F.
  • Cut the carrots, parsnips, sweet potato, and butternut squash in 1 to 1 1/4-inch cubes. All the vegetables will shrink while baking, so don't cut them too small.
  • Place all the cut vegetables in a single layer on 2 sheet pans. Drizzle them with olive oil, salt, and pepper. Toss well. Bake for 25 to 35 minutes, until all the vegetables are tender, turning once with a metal spatula.
  • Sprinkle with parsley, season to taste, and serve hot.
  • Slice the bread about 3/4-inch thick. Cut off the crusts and then cut the slices in 3/4-inch dice. You should have 3 to 4 cups of croutons.
  • Place the croutons on a sheet pan and toss them with the olive oil, salt, and pepper. Bake for 10 to 15 minutes, tossing once, until they're nicely browned on all sides. Cool to room temperature before using and store in a sealed plastic bag.

1 tablespoon extra-virgin olive oil
4 cups unsalted vegetable stock
1 small head escarole, root-end removed, washed and cut into 1-inch strips
One 15-ounce can navy beans, drained and rinsed
1 leftover Parmesan rind or 1/2 cup grated Parmesan
Kosher salt
2 teaspoons fresh thyme leaves
2 teaspoons lemon zest (from about 1 1/2 lemons)
5 medium carrots, cut on the bias into 2-inch lengths
4 medium-large parsnips, halved lengthwise and cut on the bias into 2-inch lengths
3 medium golden beets, peeled and cut into 1/2-inch wedges
1 bunch radishes, trimmed
4 sprigs thyme
1 clove garlic, coarsely chopped
3 tablespoons olive oil
1/2 teaspoon freshly grated nutmeg
Kosher salt and freshly ground black pepper
1 teaspoon finely grated lemon zest

Steps:

  • Cut the Roasted Winter Vegetables into 1/2-inch pieces. Heat the olive oil in a medium Dutch oven over medium heat. Add the roasted vegetables and cook for 2 to 3 minutes to heat through. Add the vegetable stock, escarole, navy beans, Parmesan rind and 4 cups water, and bring to a boil. Reduce the heat to a simmer and cook for 30 minutes to melt the Parmesan into the soup and combine the flavors. Season to taste with salt. Remove and discard the Parmesan rind.
  • Right before serving, stir in the thyme and lemon zest.
  • Preheat the oven to 425 degrees F.
  • In a large bowl, toss the carrots, parsnips, beets and radishes together with the thyme, garlic, olive oil, nutmeg, 1 teaspoon salt, and pepper to taste.
  • Arrange the vegetables in one layer on a rimmed baking sheet. Roast until tender and golden brown in places, stirring once, about 25 minutes. Stir in the lemon zest, then transfer to a serving bowl.

3 tablespoons extra-virgin olive oil, plus more for drizzling
2 scallions, sliced (white and green parts separated)
2 tablespoons chopped peeled fresh ginger
2 cloves garlic, smashed
5 carrots, chopped
Kosher salt and freshly ground pepper
1 14-ounce can light coconut milk
1 15-ounce can cannellini beans, undrained
1/2 acorn squash, seeded and chopped into 3/4-inch pieces
3 cups roughly chopped broccoli florets and tender stems (about 1 head)
2 slices crusty bread, cut into 1-inch pieces, plus more bread for serving

Steps:

  • Preheat the oven to 450 degrees F. Heat 1 tablespoon olive oil in a large wide pot or Dutch oven over medium-high heat. Add the scallion whites, ginger and garlic and cook, stirring occasionally, until softened, about 2 minutes. Stir in the carrots and season generously with salt and pepper. Add the coconut milk, beans with their liquid and 3 cups water. Cover and bring to a boil over high heat. Uncover and cook, stirring occasionally, until the carrots are very tender, 18 to 20 minutes.
  • Meanwhile, toss the squash, broccoli and bread with the remaining 2 tablespoons olive oil and 1/4 teaspoon each salt and pepper on a rimmed baking sheet. Roast, stirring, until the vegetables are tender and browned and the bread is toasted, about 15 minutes.
  • Puree the soup with an immersion blender (or transfer to a regular blender in batches and puree); season with salt and pepper. Divide the soup among bowls. Drizzle with olive oil and top with the vegetable-crouton mixture and scallion greens. Serve with bread.

8 ounces carrots, peeled and cut into 2-inch chunks
8 ounces sweet potatoes, peeled and cut into 2-inch chunks
8 ounces butternut squash, peeled and cut into 2-inch chunks
8 ounces parsnips, peeled and cut into 2-inch chunks
8 ounces red bell peppers, seeded and cut into 2-inch chunks
8 ounces white onions, peeled and cut into 2-inch chunks
2 tablespoons olive oil
2 -3 fresh rosemary, large springs
1 head garlic, left whole for roasting
6 cups vegetable stock (good quality is important)
fresh black pepper, to taste
6 -8 ounces gruyere cheese, grated
6 slices baguette (optional)

Steps:

  • Preheat oven to 350°F.
  • Wrap garlic tightly in aluminum foil and set aside.
  • Toss the chunked vegetables with the olive oil till well coated, spread onto jelly roll pan and add rosemary.
  • Place in oven for 1 1/2 to 2 hours add the foil wrapped garlic for the last hour of roasting.
  • Remove the rosemary sprigs while place all veggies in soup pot.
  • Squeeze the garlic out of papery skins and into soup pot; add stock.
  • Keep warm on low while emulsifying or while whirling small batches in the blender; warm to desired serving temperature.
  • Serving:.
  • Option 1: Ladle into bowls and sprinkle with grated gruyere. Enjoying with fresh backed bread.
  • Option 2: Arrange baguette slices in single layer on baking sheet and bake in a 400F oven until the bread is dry, crisp and golden on the edges about 10 minutes.
  • Adjust oven rack 6 inches from broiler element and heat broiler. Set individual broiler safe crocks on a baking sheet and fill each about 3/4 full with soup. Top each bowl with toasted baguette slice and sprinkle evenly with gruyere. Broil until cheese is melted and bubbly about 3-5 minutes. Let cool 5 minutes before serving.

Roasted Butternut Squash and Sweet Potato Soup with a bit of a kick to keep you warm in the winter months.

Steps:

  • Put the squash and sweet potato in a roasting tray with olive oil and seasoning (garlic, chilli, curry, salt, pepper) , put in the pre heated oven at 180 for 20-25 mins or until lightly browned
  • Lightly fry the onions in butter, if you want you can add seasoning to the onions and remove from heat. Have the stock ready.
  • When the sweet potato and squash is ready take out of oven and leave to cool slightly.
  • After about 5 minutes put the roasted vegetables in the pot with the onions and resume cooking.
  • Add the stock and simmer for 15 minutes (or until the vegetables are soft enough to blend).
  • Allow to cool for 5 minutes and blend until smooth.
  • Optional: When serving add a spoonful of natural yogurt

SPICED LENTIL AND ROASTED VEGETABLE SOUP

This is a really thick comforting lentil and tomato soup with a bit of added interest. Great way to use up the veg left in the fridge at the end of the week. The tomatoes can be soft and not the freshest but need to be tasty.

6 large tomatoes
4 medium onions
2 red bell peppers
4 garlic cloves, peeled and sliced
2 tablespoons olive oil
1 large onion, diced
1 tablespoon butter
1/2 cup red lentil
1 stalk celery, diced
2 tablespoons nigella seeds (black onion)
2 cardamom pods
1 teaspoon dried chili
1 pint chicken stock

Steps:

  • Cut tomatoes in half, peel and halve onions, halve peppers and deseed and take off stalk.
  • Place above into roasting tray and place slices of garlic onto each piece of vegetable, sprinkle with olive and salt.
  • Roast in medium oven for 30 - 40 mins until vegetables are slightly browned and tomatoes are very soft.
  • Meanwhile sweat diced onion and celery in butter in a heavy pan for 5 minutes.
  • Add nigella seeds, chilli pepper and cardamon, stir well and add chicken stock, then add lentils.
  • Bring to a boil and then simmer, covered.
  • When roasted vegetables are ready add contents of the roasting pan with juices to the soup pan and stir well.
  • Simmer for 20 mins then season to taste with fresh black pepper and salt.
  • Blend with a stick blender or in a processor, soup should retain a rough consistency but not big lumps.Add more water if necessary and reheat.
  • Serve with a drizzle of good olive oil on top.

MOROCCAN ROASTED VEGETABLE SOUP

Roasted roots are perfect for making soup- we used parsnips, butternut squash and carrots, flavoured with ras el hanout spice mix

1 red onion, cut into 8 wedges
300g carrot, cut into 2cm chunks
300g parsnip, cut into 2cm chunks
300g peeled butternut squash, cut into 2cm chunks
1 small potato, cut into 2cm chunks
2 garlic cloves
1 tbsp ras el hanout
1 ½ tbsp olive oil
1.3l hot vegetable stock
6 tbsp Greek-style yogurt and 1 tbsp finely chopped mint, to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Tip all the vegetables and the garlic into a roasting tin. Sprinkle over the ras el hanout and some seasoning, drizzle over the oil and give everything a good stir. Roast for 30-35 mins, turning the vegetables over halfway, until they're tender and starting to caramelise a little.
  • Transfer the roasted veg to a large saucepan, pour over the hot stock and simmer for 5 mins. Purée the soup in a food processor, or in the pan with a hand blender, until smooth, then ladle into a flask for work. If eating at home, serve with a dollop of yogurt, a scattering of mint and a grinding of black pepper.

My favorite comfort food on a cold day. It makes your house smell amazing! It makes a huge batch, however can be 1/2ed or doubled easily depending on your groups size. You can used leftover turkey or rotisserie chicken too, great way to use up leftover meats and veggies. I serve this with my Loaded Foccacia Bread and everyone's happy! I made the seasoning amounts a little vague because you should taste the soup as you season so it works according to your tastes.

3 cups cubed leftover roasted chicken
2 -3 cups chopped celery
2 small chopped onions

  • Add the diced chicken and cook about 5 more minutes.
