2 lb Smaller Tomatoes, (halved (I used Campari tomatoes) )
2 to 3 garlic cloves, (minced)
Kosher salt and black pepper
2 tsp fresh thyme, (stems removed)
1 tsp sumac
1/2 tsp dry chili pepper flakes,
Extra virgin olive oil,
Crumbled feta cheese, (optional)

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the tomato halves in a large mixing bowl. Add minced garlic, salt, pepper, fresh thyme, and spices. Drizzle a generous amount, about 1/4 cup or more, quality extra virgin olive. Toss to coat.
  • Transfer the tomatoes to a baking sheet with a rim. Spread the tomatoes in one single layer, flesh side up.
  • Roast in your heated oven for 30 to 35 minutes or until the tomatoes have collapsed to your desired doneness.
  • Remove from heat. If you are planning to serve it soon, feel free to garnish with more fresh thyme and a few sprinkles of feta cheese. Enjoy warm or at room temperature.

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Place a piece of aluminum foil over a baking sheet.

Recently had an extra pint of cherry tomatoes on hand and was in search of comfort food. Devised this soup in a pinch and thought it was worth sharing. Mine was a quick soup for one but the recipe has been scaled up and uses the more economical Roma tomato. If you have lots of cherry or grape tomatoes -- they have a sweetness that pairs beautifully with the vinegar -- use them or do a mix with the roma tomatoes. If you are making this Kosher, skip the cheese or be sure to use vegetable broth.

2 lbs plum tomatoes
6 garlic cloves, peeled and whole
1/4 medium red onion
1 tablespoon olive oil
1 tablespoon balsamic vinegar
2 sprigs oregano, remove leaves from stem
3 -4 basil leaves

2 cups fat-free chicken broth or 2 cups water
1/4 cup parmesan cheese, shaved or grated (optional)

Steps:

  • Pre-heat oven to 375 degrees.
  • Wash and cut tomatoes, placing in a shallow baking dish cut side down.
  • Add onion pieces, garlic, oregano and basil to the pan.
  • Drizzle vegetables with olive oil and balsamic vinegar.
  • Season with salt and pepper.
  • Bake for 45 minutes.
  • Place roasted vegetables in food processor bowl or blender and begin puree. Slowly add broth or water until soup has desired consistency. Continue blending until smooth.
  • An immersion blender also works very well. (If you warm the broth first, the soup will be hot without reheating.).
  • Serve garnished with cheese if desired.

A tiny amount of sugar

2-3 tablespoons olive oil
4-6 garlic cloves

1 teaspoon salt
black pepper to taste
2 red onions (finely chopped)
2-3 garlic cloves (thinly sliced)
2 teaspoons Italian herbs
1-2 teaspoons smoked paprika (to taste)

1-2 teaspoons sugar (optional)
½-1 cup vegetable stock

  • Pre-heat the oven to 200ºC.

  • Prepare your tomatoes by slicing them lengthwise in half. Remove as much fluid and as many seeds as possible. You can use a spoon to help you with this process.
  • Prepare a grill basket or grill pan with brushed on olive oil. Or, if using the oven method, prepare your pan. Alternatively, if you are using a pan or (baking sheet) you can use aluminum foil with nonstick spray.
  • Preheat you oven to 450 or your grill on high if using a grill.
  • In a medium bowl, combine together the remaining olive oil with the garlic and seasonings.
  • Dip each individual tomato half the bowl, covering the entire piece well and allowing the remaining mixture to drip back into the bowl. Then place the tomato half on the prepared basket or pan with the sliced side up.
  • Drizzle any remaining oil mixture over the tomatoes after you are done placing them all on to the prepared basket or pan.
  • Grill the tomatoes until they are charred and then allow them to cool before serving (it should take just a few minutes).

1/2 cup balsamic vinegar
2 tablespoons Dijon mustard
1 tablespoon honey
Kosher salt and cracked black pepper
3/4 cup canola oil
5 pounds roma tomatoes, quartered
1 tablespoon dried basil
1 tablespoon kosher salt
1 teaspoon dried garlic powder
1 teaspoon onion powder
1 teaspoon cracked black pepper
1/2 teaspoon dried Italian seasoning

Steps:

  • For the balsamic vinaigrette: Combine the vinegar, mustard, honey and salt and pepper to taste. Stir with a whisk or fork, then drizzle in oil, whisking constantly, until combined.
  • For the roasted tomatoes: Preheat the oven to 400 degrees F. Line a sheet pan with foil and spread out the tomatoes evenly to ensure a proper roast on each. Sprinkle the dried basil, salt, garlic powder, onion powder, pepper and Italian seasoning over the tomatoes, making certain that each tomato is well seasoned. Drizzle 1/4 cup vinaigrette over the tomatoes, making sure not to over-coat the tomatoes.
  • Roast the tomatoes 45 minutes. (This is a fast roast, not an oven-dried tomato. Do not flip or shake the pan. The tomatoes will caramelize slightly on the top and the bottoms will remain juicy.) Turn the oven off and let sit in the oven 15 additional minutes.

12 plum tomatoes (about 3 pounds)
1/4 teaspoon sugar
Coarse salt and freshly ground pepper
2 tablespoons fresh thyme leaves
3 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 275 degrees. Slice tomatoes in half lengthwise, and place cut side up in a single layer on a rimmed baking sheet. Sprinkle with sugar, and season with salt and pepper. Place a few thyme leaves on top of each half, and drizzle lightly with oil.
  • Roast until tomatoes have started to shrivel and caramelize, about 2 1/2 hours. Remove from oven; let cool until ready to use, up to 5 days.

Steps:

  • Preheat oven to 425 degrees F. For plum tomatoes, slice the tomatoes in half lengthwise. For cherry tomatoes, leave whole.
  • Lay tomatoes out onto an un-greased baking sheet. Drizzle with olive oil and sprinkle garlic cloves throughout. Season with sugar and salt and toss to coat. Spread out into a single layer.
  • Roast in the preheated oven for 15 to 20 minutes for cherry tomatoes, and 35 to 40 minutes for plum tomatoes.

6 Roma tomatoes, halved
1/4 cup olive oil
2 cloves garlic, finely chopped
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes
Fresh basil leaves, for garnish
Fresh oregano leaves, for garnish
1/4 cup fresh basil leaves
1/4 cup extra-virgin olive oil
2 tablespoons fresh oregano leaves and tender stems
1 tablespoon capers
Juice of 1 lemon
Kosher salt and freshly ground black pepper

Steps:

  • For the tomatoes: Preheat the oven to 400 degrees F.
  • Place the tomato halves in a bowl. Drizzle with the olive oil, add the garlic, salt, black pepper and red pepper flakes and toss to coat. Arrange them on a baking sheet cut-side up and roast for 30 minutes.
  • For the herb drizzle: Meanwhile, add the basil, olive oil, oregano, capers, lemon juice and some salt and pepper to the bowl of a food processor and blend until smooth and pourable. Taste and adjust the seasoning if needed.
  • Arrange the roasted tomatoes on a platter and top with some of the herb drizzle. Garnish with fresh basil and oregano leaves.

1.2 kg of ripe mixed-colour cherry tomatoes
1 bulb of garlic
2 sprigs of oregano, (optional)
olive oil
red wine vinegar

Steps:

  • This works great as a stand-alone recipe, but also as a component in Jamie's Sunny Gathering from Together - see the full collection of menus here.
  • GET AHEAD Halve the tomatoes, placing them in a large roasting tray as you go. Halve the bulb of garlic across the middle and add to the tray. Pick in the oregano leaves, if you've got some, then add 1 tablespoon each of olive oil and red wine vinegar and a pinch of sea salt and black pepper. Toss together and arrange in a single layer. Cover and refrigerate overnight.
  • TO SERVE Preheat the oven to 180°C/350°F/gas 4. Roast the tomatoes for 1 hour, before you cook the salmon. Great hot or warm.

4 excellent tomatoes
4 teaspoons butter
2 teaspoons balsamic vinegar
1/2 cup fine breadcrumbs
1/2 cup parmesan cheese, grated
1 clove garlic, minced
1 teaspoon dried basil, crumbled
2 tablespoons green chives, chopped
2 tablespoons minced parsley

Steps:

  • Preheat oven to 350F.
  • Cut tomatoes in half, place them in a buttered baking pan just large enough to hold them, and sprinkle a little salt and pepper over them.
  • Melt butter and stir in balsamico.
  • Mix dried ingredients.
  • Pour melted butter into mix.
  • Stir until coated with butter.
  • Spoon onto cut side of tomatoes, distributing evenly.
  • Bake for 15 to 20 minutes, until tops are golden.
