COD WITH TOMATO-FENNEL SAUCE

2 tablespoons extra-virgin olive oil, plus more for brushing and drizzling
1 onion, sliced
1 fennel bulb, trimmed, cored and thinly sliced, plus chopped fronds for topping
Kosher salt and freshly ground pepper
3 cloves garlic (2 minced, 1 smashed)
1 tablespoon chopped fresh oregano
1/3 cup pitted kalamata olives, halved
1/2 teaspoon red pepper flakes
1/3 cup dry vermouth or dry white wine
1 28-ounce can whole peeled tomatoes, crushed by hand
4 skinless center-cut cod fillets (6 to 7 ounces each)
4 slices ciabatta bread, halved

Steps:

  • Preheat the broiler. Heat the olive oil in a large skillet over medium heat. Add the onion, fennel and a pinch each of salt and pepper; cook, stirring, until the vegetables are tender and just starting to brown, about 10 minutes. Add the minced garlic, oregano, olives and red pepper flakes and cook until the garlic is softened, 1 to 2 minutes. Add the vermouth and cook until almost completely evaporated, about 3 minutes. Add the tomatoes and bring to a boil. Reduce the heat to medium low and simmer until slightly thickened, about 5 minutes.
  • Generously season the cod with salt and pepper and nestle in the sauce. Cover and cook until the fish is mostly cooked through, 6 to 8 minutes. Turn off the heat and let the fish finish cooking in the sauce, about 3 more minutes.
  • Meanwhile, brush the ciabatta with olive oil and broil until toasted, 1 to 2 minutes per side. Rub with the smashed garlic.
  • Divide the sauce and fish among shallow bowls; drizzle with olive oil. Top with fennel fronds and serve with the ciabatta.

Peel the cloves from 1 garlic bulb and toss with the fennel and fronds, 1 quartered lemon, 3 tablespoons olive oil and 1 teaspoon each salt and sugar on a baking sheet. Roast in a 500 degrees F oven until golden, about 20 minutes. Toss in 1 pint grape tomatoes; roast until the tomatoes burst, 7 more minutes.

500g new potatoes
3 large fennel bulbs
2 tbsp olive oil
250g cherry tomatoes , halved
50g small black olives

Steps:

  • Boil potatoes until tender, about 8 mins.
  • Heat oven to 190C/170C fan/gas 5. Halve and quarter the fennel through the root, then trim off the hard core. Slice the fennel and tip into a roasting tin with the olive oil, salt and pepper. Toss the fennel in the oil until it is glistening. Roast for 20-25 mins, until starting to soften.
  • Add tomatoes, olives and potatoes and stir well. Return to the oven for 10-15 mins until the fennel is tender, with a bit of crunch. Tip into a warm dish to serve.

Roasting the fennel tempers the liquorice-like flavor and enhances the sweetness of this bulbous vegetable. A pinch of peperoncini adds spice. Use a short pasta (rigatoni, fusilli or cavatelli are all good choices). Adapted from a recipe by Blake Royer at Serious Eats, which he adapted from _The Splendid Table's How to Eaty Supper_.

2 fennel bulbs, cored and sliced
2 large onions, peeled and sliced
8 garlic cloves, roughly chopped
1/3 cup olive oil
1/2 teaspoon chili flakes
2 tablespoons fennel seeds
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 (14 ounce) can whole tomatoes, crushed by hand
1/2 cup shredded parmesan cheese
1 lb short pasta

Steps:

  • Preheat the oven to 450°F Combine the fennel, onion, garlic, oil, chili flakes, fennel seeds, salt, and pepper in a roasting dish and roast, tossing once or twice during cooking, for 15 minutes.
  • In the meantime, bring a pot of salted water to boil and cook the pasta until al dente. Reserve some pasta cooking water.
  • After 15 minutes of roasting, stir the crushed tomatoes into the vegetables, combining well. Roast 5 to 10 minutes more, until the fennel is tender and starting to brown.
  • Reserve 1 cup of the pasta cooking water. Drain the pasta and toss with the roasted vegetables and Parmesan, adding some pasta cooking water if necessary until the sauce is loosened and coats the pasta. Serve immediately.

2 slices orange peel (3-inch x1-inch)
3 tablespoons orange juice
3 lbs ripe round tomatoes, cored, peeled, seeded, and cut into 1/2-inch pieces (about 3 1/4 cups)
3 tablespoons fresh basil leaves, chopped
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Heat 2 tbls. olive oil in a 10" skillet over medium high heat till shimmering.
  • Add fennel and cook, stirring occasionally, until softened and browned around the edges, 4-6 minutes.
  • Add garlic, fennel seed, saffron(if using), pepper flakes, and orange peel; cook, stirring constantly, until fragrant, about 30 seconds.
  • Now stir in the tomatoes and cook till tomato pieces lose their shape to form a chunky sauce, about 10 minutes.
  • Remove and discard orange peel. Stir in the orange juice, basil, salt, pepper, and sugar to taste.
  • Toss the sauce and the remaining 2 tbls. olive oil with your favorite pasta and serve! Enjoy!

1 pound ripe plum tomatoes (about 6)
4 garlic cloves
1 fennel bulb (about 1 pound), trimmed and cut into 1/4-inch dice
1/4 cup red-wine vinegar
1 tablespoon capers, rinsed and drained
1/4 teaspoon crushed red-pepper flakes or finely chopped fresh red chile
2 tablespoons extra-virgin olive oil
1 cup loosely packed fresh basil leaves
1 cup loosely packed fresh flat-leaf parsley leaves, coarsely chopped
Olive-oil cooking spray

Steps:

  • Preheat oven to 400 degrees. Coat a baking sheet with cooking spray. Slice tomatoes in half lengthwise; arrange them, cut side down, in a single layer on prepared baking sheet. Place garlic cloves on baking sheet next to tomatoes. Roast in oven until tomatoes are soft and wrinkled, and garlic is aromatic and tender, about 35 minutes. Remove from oven, and let cool.

3/4 teaspoon dried oregano
Pinch of sugar
12 ounces spaghettini
Freshly grated Parmesan cheese

Steps:

  • Preheat oven to 375°F. Arrange fennel halves cut side down in 8 x 8 x 2-inch glass baking dish. Drizzle with 1 1/2 tablespoons oil. Roast until fennel is light brown and tender, about 45 minutes. Cool. Cut fennel into 1/2-inch pieces.
  • Heat remaining 1 1/2 tablespoons oil in heavy large skillet over medium-high heat. Add onions and garlic and sauté until onions are tender, about 6 minutes. Add tomatoes with juice, oregano and sugar; bring to boil. Reduce heat and simmer until thickened to sauce consistency, about 6 minutes. Add fennel and simmer 5 minutes longer.   • Add sauce to pasta; toss to coat. Season with salt and pepper. Transfer to large bowl. Sprinkle with Parmesan and serve.
