PERFECT POT STICKERS



Perfect Pot Stickers image

Homemade pot stickers are so versatile--you can fill them with anything you want and as full as you want. And the play between the crispy, crusty bottom, and the tender parts, makes for a truly unique dumpling. These are filled with ground pork, green onions, ginger, and cabbage.

1 pound ground pork
4 cloves minced garlic
½ cup finely chopped green onions
3 tablespoons very finely minced fresh ginger
2 tablespoons soy sauce
1 teaspoon soy sauce
1 teaspoon sesame oil
1 pinch cayenne pepper
1 ½ cups finely chopped green cabbage
2 ½ cups all-purpose flour
¾ teaspoon kosher salt
1 cup hot water, about 130 -150 F (55-65 C)
¼ cup seasoned rice vinegar
¼ cup soy sauce
6 tablespoons vegetable oil for frying, or as needed - divided
8 tablespoons water for steaming, divided

Steps:

  • Place ground pork, green onions, garlic, ginger, 2 tablespoon plus 1 teaspoon soy sauce, sesame oil, and cayenne in a mixing bowl. Top with chopped green cabbage. Mix with fork until thoroughly combined. Tamp down lightly; cover with plastic. Refrigerate until chilled, about an hour.
  • Place flour and kosher salt in a mixing bowl. Slowly pour in hot water. Stir with a wooden spoon until mixture forms a shaggy dough. Flour your hands and transfer dough to a work surface. Knead dough until it becomes smooth and elastic. If dough seems too sticky, sprinkle with a bit more flour, about 3 to 5 minutes. Wrap dough ball in plastic, and let it rest about 30 minutes.
  • When dough has rested, divide into 4 equal pieces. Cover 3 pieces with a dish cloth while you work the first piece. Roll into a small log about the thickness of a thumb, about 3/4 inch. Divide each log into 6 equal pieces. Roll each piece into a thin 3 1/2-inch circle on a lightly floured surface to form the pot sticker wrappers. Repeat with the remaining dough pieces.
  • Lightly moisten the edges of a wrapper with your wet finger. Place a small scoop of the ground pork mixture onto the center of a wrapper. Fold up the 2 sides and pinch together in the center. Pinch together the remaining edges, forming "pleats" along one side. Tap the pot sticker on the work surface to slightly flatten the bottom; form a slight curve in it so it stands upright in the pan. Transfer to a well-floured plate. Repeat with remaining dough and filling.
  • Mix together seasoned rice vinegar and soy sauce in a small mixing bowl for the dipping sauce.
  • Heat oil in skillet over medium-high heat. Place about 6 or 7 pot stickers in the hot oil, flat side down. Cook until bottoms are golden brown, about 2 minutes. Drizzle in water and quickly cover the pan; steam for 3 minutes. Uncover; reduce heat to medium. Continue cooking until water evaporates and bottoms are browned and crunchy, 1 or 2 minutes. Transfer to a warm serving dish. Repeat with remaining pot stickers. Serve with dipping sauce.

BAKED SWEET POTATO AND CREAM CHEESE



Baked Sweet Potato and Cream Cheese image

Squacquerone is an amazing cream cheese made by my friend Patricia. When eaten with the baked sweet potato and dressed with the chili etc, this makes a great supper that is really quick to make. I buy my squacquerone from my friend Patricia at La Fromagerie. If you do not have somebody who makes this, you can make your own. To make 450m / 15 fluid ounces, you take 170ml / 6 fluid ounces of the coldest, best cream cheese you can buy and mix with a tablespoon of cold creme fraiche, 2 large tablespoons of cold buttermilk, 3 large tablespoons of cold untreated organic natural yogurt, the juice of 1 lemon and sea salt to taste. Mix this up, cover the bowl and keep at the bottom of the refrigerator to mature for a minimum of 24 hours. This is best matured for 3 days, and will have a shelf life of 6 days. Amazing stuff.

4 sweet potatoes, washed
Sea salt and freshly ground black pepper
2 red chiles, finely sliced
2 spring onions, finely sliced
Squacquerone
4 handfuls wild rocket, washed
1 lemon, zested and juiced
Extra-virgin olive oil

Steps:

  • Preheat the oven to 200 degrees C/400 degrees F/gas mark 6.
  • Wash the sweet potatoes, prick them with a sharp knife, then sprinkle with a little sea salt. Bake them on the top shelf of the oven for about 50 minutes until soft.
  • Mix the chili and spring onion together. To serve the potatoes, make a cut in each potato and open out on a plate. Spoon on some of the cheese, sprinkle on the chili mix, then a handful of rocket, a very fine grating of lemon, sea salt, pepper, a drizzle of olive oil and finally a squeeze of lemon juice on each one. 2 can(s) crescent rolls
1 pkg sweet potato patties (cut in half)
2 c sugar
2 c water
1 1/2 stick butter
1 Tbsp vanilla extract
1 Tbsp corn starch
1 1/2 - 2 Tbsp cinnamon for sprinkling on top

Steps:

  • 1. Preheat oven to 350° F.
  • 2. Cut each patty in half.
  • 3. Open and unroll the crescent rolls. Separate the triangles. Place each sweet potato patty on the wide end of each triangle.
  • 4. As you roll up each sweet potato half in the crescent roll, tuck the ends in. They don't have to be perfect, they don't have to be sealed so it's okay if the sweet potatoes aren't completely covered.
  • 5. After you finish rolling them up, place them in a 9x13" glass baking dish with the pointy end of the crescent roll facing down.
  • 6. In a saucepan, combine the water, sugar, and corn starch. Mix well. Add the butter. Heat over medium heat, stirring occasionally until the butter has melted and the sugar has dissolved.
  • 7. Remove from heat and stir in the vanilla extract.
  • 8. Pour the sugar mixture over the dumplings.
  • 9. Sprinkle with cinnamon.
  • 10. Bake in the preheated 350° F oven for 35 to 40 minutes.
  • 11. Let sit 15-20 minutes before serving.

8 tablespoons salted butter
3 sprigs thyme, leaves removed
2 cloves garlic, minced
1 large onion, sliced thinly
Kosher salt
1 cup leftover mashed potatoes
1/2 cup shredded white Cheddar
1/4 cup sour cream
20 wonton wrappers
1/2 cup white wine
1/4 cup chopped fresh parsley, plus more for garnish

Steps:

  • Melt 3 tablespoons of the butter in a large skillet over medium heat. Add the thyme, garlic and onion. Cook, stirring, until the onions are golden, about 10 minutes.
  • Meanwhile, bring a large pot of salted water to a gentle boil.
  • Add the potatoes, cheese and sour cream to a small bowl and mix, then set aside.
  • Working one at a time, lay out a wonton wrapper and use your finger to dampen the edge of the wrapper with water. Place 1 tablespoon of the potato mix in the center of the wrapper. Fold into a triangle, sealing the edges and pushing out as much air as possible. Set aside and repeat with the remaining wrappers and filling.
  • Drop the dumplings into the salted water and cook until they rise to the surface, 2 to 3 minutes. Remove with a slotted spoon and add to the skillet with the onions. Cook until the dumplings are golden, 2 to 3 minutes. Deglaze with the white wine, allowing it to boil and reduce, about 1 minute. Remove from the heat and stir in the parsley and remaining 5 tablespoons butter. Continue to stir until the butter is melted and you have a glossy sauce. Serve immediately garnished with more parsley.

Delicious, crispy pan-fried potstickers filled with roasted sweet potato, red onions, cream cheese, and chives. Perfect as an appetizer, snack, or light meal.

1 large sweet potato*, peeled and chopped into 1/2 inch chunks
½ cup red onion, diced
½ cup plain cream cheese, room temperature
¼ cup chives, sliced, plus more for garnish
1 package of dumpling wrappers
salt and pepper, to taste
small bowl of water
vegetable oil, for roasting and frying
Optional: sour cream for dipping

Steps:

  • Preheat oven to 425 degrees F. On a baking sheet, toss the sweet potato with a tablespoon of oil, salt, and pepper and roast for 15 minutes before adding the red onions. Flip the sweet potatoes and roast for an additional 10 minutes, until the sweet potato is completely soft.
  • Place the roasted vegetables into a large bowl and, using a potato masher or fork, mash the sweet potato until completely mashed. Add the cream cheese and chives and mix together well. Taste for additional salt and pepper.
  • Take a dumpling wrapper and lay it flat on a clean surface. Place a small spoonful of the sweet potato mixture in the centre of the wrapper. With your finger, dab water around the edge of one half of the wrapper, and then fold over to seal the wrapper. Repeat the process until all the sweet potato filling is gone. Makes about 36 potstickers.
  • On medium-high heat, add a teaspoon of vegetable oil to a non-stick frying pan. Have a plate ready nearby to place your cooked dumplings on.
  • Place dumplings in the frying pan so that they are not touching. Pan fry until golden brown on each side, around 1-2 minutes per side. Add a shallow layer (2 - 4 tablespoons) of water to the frying pan, cover the pan with a lid, and continue cooking the potstickers until all the water has evaporated. Once the water has evaporated, give the potstickers another 30 seconds in the frying pan to develop a crispy exterior. Transfer the potstickers to a plate and repeat the process until all potstickers are cooked.
  • Garnish with additional chopped chives and red onions. Serve warm with sour cream for dipping, if desired.

1 tablespoon butter
2 tablespoons brown sugar
1/4 teaspoon pumpkin pie spice

Steps:

  • Scrub and pierce sweet potatoes and place on a microwave safe plate.
  • Microwave, uncovered, on high for 10-13 minutes or until tender (turning twice).
  • Meanwhile, in a small mixing bowl, beat the cream cheese, butter, brown sugar and pumpkin pie spice until smooth.
  • Make a slice in the top of each potato; fluff pulp with a fork.
  • Dollop with cream cheese mixture.

  • Preheat oven to 350°. Combine cake mix and pecans; cut in butter until crumbly. Press mixture onto bottom of a greased 13x9-in. baking dish., Beat cream cheese, sugar, 1 egg and 2 tablespoons milk until smooth; set aside. Stir together sweet potatoes, remaining eggs, remaining milk and pie spice; pour over pecan mixture. Dollop cream cheese mixture over sweet potato mixture. 1-1/2 cups finely grated peeled sweet potatoes
1 medium onion, finely chopped
1 cup finely shredded cabbage
1 tablespoon sesame oil
1 tablespoon reduced-sodium soy sauce
2 teaspoons grated fresh gingerroot
1 teaspoon pepper
24 pot sticker or gyoza wrappers
2 tablespoons canola oil, divided
1 cup chicken broth, divided
Additional reduced-sodium soy sauce, optional

Steps:

  • In a small bowl, combine the first seven ingredients. Place 1 teaspoon of filling in the center of one wrapper. (Until ready to use, keep remaining wrappers covered with a damp paper towel to prevent them from drying out.) , Moisten entire edge with water. Fold wrapper over filling to form a semicircle. Press edges firmly to seal, pleating the front side to form three to five folds. Holding sealed edges, stand each dumpling on an even surface; press to flatten bottom.
