- Mix all the marinade ingredients together. Add the meat. Knead in the marinade. Refrigerate in a non-reactive container or gallon-size plastic bag up to three days. If using food coloring instead of curing salt, overnight is long enough. Fry on medium heat in a non-stick frying pan or cast iron with a little oil added. Fry till the edges of fat crisp up. Serve with steamed or fried rice and lightly fried eggs. Garnish with sliced tomatoes, roasted green chiles or grilled zucchini.

- In a bowl, combine pork, sugar, salt, garlic, pepper, and red food coloring. Massage meat with curing mixture until well-distributed and evenly colored.
- Store in a covered container or ziplock bag and refrigerate overnight to cure.
- In a pan over medium heat, add pork including marinade and enough water to cover. Bring to a boil.
- Lower heat, cover and simmer until meat is tender and cooked through, adding more water in 1/2 cup increments as needed.
- When water is completely absorbed and meat is tender, add oil and cook, stirring regularly, until meat caramelizes. Serve hot.

- In a bowl add 700 g of sliced pork shoulder, 1/3 cup packed brown sugar, ½ tablespoon salt, 1 tablespoon garlic powder, 2 tablespoons chopped garlic, ¼ teaspoon black pepper, 1/8 to 2/8 teaspoon red food coloring, 1 tablespoon dark soy sauce, and 1 can of pineapple juice. Mix and massage the marinade well into the pork.
- Place the marinated pork in a sealed container or a zip-lock bag. If you’ll be cooking the meat the following day, leave it in the fridge overnight. If the meat is to be cooked at a later date, let the marinated pork sit at room temp or in the fridge for at least 1-3 hours before adding it to the freezer.
- In a pan at medium heat, add the pork and marinade. Cover and let boil the till liquids have reduced. Mix often to keep the meat from burning at the bottom.
- Once liquids have lessened, fry the Tocino with the fat that has been melted from the cured pork. If there is too much oil scoop this out.

Slice the meat thinly. 1/4 inch (0.6 cm)-thick slices or 1/8 inch (0.3 cm)-thick pieces if you want it to be extra thin. Make sure to remove all bones. In a big bowl, combine all ingredients except for the pork slices. Mix until well blended.
