Steps:
- Brown and crumble sausage in large bottom pot or pan. I use a potato masher to achieve small crumbles. Cook to desired crispness. Remove sausage and set aside. Leave oil in pan.
- Add potatoes to pan and fry over medium/high heat. Add additional oil as needed. Toss and fry until potatoes are browned and tender.
- Add sausage back to pan. Season with salt, pepper and seasoning blend. Toss and serve.

Steps:
- Heat a large skillet over medium heat. Add the butter, and allow it to melt. Once the butter melts, add the potatoes in an even layer. Allow them to brown on one side, the flip so the opposite side is able to brown. Continue to cook the potatoes until brown, crispy, and fork tender, about 12 to 15 minutes.
- Push the potatoes to one side of the pan, and add the oil and sausage. Cook the sausage until lightly browned, about 5 to 7 minutes.
- Stir in the onion, green bell pepper, red bell pepper, Italian seasoning, garlic powder, onion powder, salt and pepper. Cook for 3 to 5 minutes until they begin to soften.
- Serve hot with fresh fruit. Store leftovers in the refrigerator for up to 3 days.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce the heat; simmer, uncovered, until tender, 8-10 minutes. Meanwhile, crumble sausage into a large skillet; add onion. Cook over medium heat until meat is no longer pink; drain if necessary. , Drain potatoes; arrange in an ungreased 13x9-in. baking dish. Drizzle with butter. Add the sausage mixture and stir gently. - Begin by boiling the brats in whatever liquid you're using. I used vegetable broth, because it was what I had on hand.
- Saute the onions in the olive oil until the onions are golden brown.
- Add the diced potatoes and cover. Add salt and pepper to taste, as well as sage. You will need to stir them occasionally so the onions don't burn. Cook for about 5-10 minutes or until the potatoes are brown and crispy on the edges and flaky on the inside.
- Add eggs and mustard, mix, and heat through.
- Brown brats in the same skillet and garnish the potatoes with paprika.

SAUSAGE POTATO HASH
Steps:
- Add the olive oil to a large skillet and heat over medium heat. Add the cubed potatoes, season with salt and pepper and cook for 7 to 10 minutes, until they're about half way cooked through, stirring occasionally.
- Add the onion and cook for another 3 minutes, stirring occasionally.
- Add the sausage, bell peppers, garlic and red pepper flakes to the skillet and stir. Reduce the heat, and continue cooking until potatoes are cooked through, another 10 minutes. You can also cover the skillet, this will cook the potatoes a bit faster.
- Taste for seasoning and adjust with salt and pepper if needed. Serve with fried eggs.

SAUSAGE AND POTATO BREAKFAST CASSEROLE
This is a super easy and delicious brunch dish. I found it on Epicurious.com. I made it this weekend and doubled it. I also used cubed hash browns instead of shredded and did not use a glass pan. I think I would add to the cooking time by 5-10 minutes to accomodate these changes. I also omitted the green onion and suggest using O'Brien potatoes as a variation. Everyone loved this. I reheated leftovers the next day and added eggs which was another tasty concoction.

- Preheat oven to 350*.
- Butter a 8x8 glass pan.
- Cook sausage until browned, breaking up into small pieces.
- Add flour to sausage, then milk.
- Stir until mixture comes to a boil and thickens, about 5 min.

- Top with 1/3 of onions, 1 C.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
- Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
- Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
- Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
- Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.
