2 pounds radishes with greens
2 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
Coarse salt and freshly ground pepper
2 cloves garlic, minced

Steps:

  • Preheat oven to 400 degrees. Separate greens from radishes; wash both well. Slice radishes in half; toss with 1 tablespoon each oil and vinegar. Season with salt and pepper. Arrange in a single layer on a rimmed baking sheet, cut-side down. Roast until tender and golden, 25 to 30 minutes.
  • Meanwhile, heat remaining oil and vinegar and the garlic in a medium skillet over mediumhigh heat. Cook radish greens, tossing, just until wilted, about 1 minute. Season with salt and pepper. Serve with radishes.

I saw a recipe for baked radishes in a magazine long, long ago and the thought so intrigued me I just had to give it a try. This is my personalized version of the original. I often switch out the thyme with either rosemary, basil, or crushed garlic, depending on my mood and what main dish these will be served with.

2 bunches radishes, trimmed
2 tablespoons extra-virgin olive oil
1 teaspoon ground thyme
salt to taste
½ lemon, juiced

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Cut radishes into halves; cut any large radishes into quarters. Stir olive oil and thyme together in a bowl and toss radishes in mixture to coat. Spread radishes onto prepared baking sheet; sprinkle with salt.
  • Roast in the preheated oven until tender but firm in the centers, tossing every 5 minutes, 15 to 20 minutes. Drizzle with lemon juice.

1 teaspoon kosher salt
4 fresh lemon wedges
2 tablespoons flat leaf parsley (torn)

Steps:

  • Gather your ingredients. Preheat the oven to 350 F. Gently wash the radishes under cold, running water. Dry carefully and thoroughly.
  • Snip or cut off and green top leaving a tiny piece of stalk, you do not have to remove the root unless it is very long. If the radishes are large, cut them in two or even four; smaller radishes can be cooked whole.
  • Place the radishes into a roasting tin ovenproof grill pan (using this pan can give the radish tiny marks which can be attractive). Drizzle over the olive oil, sprinkle with the salt are roll the radishes around to coat well. Finally, add the lemon wedges.
  • Roast the radishes in the center of the preheated oven until soft, about 20 minutes.

1 lb. fresh radishes, stems removed, ends trimmed, and halved
1 tablespoon melted ghee, butter coconut oil or avocado oil)
1/2 teaspoon sea salt
1/8 teaspoon black pepper
1/4 teaspoon dried parsley, dried chives, or dried dill or mix
2 garlic cloves, finely minced
Optional toppings: Ranch dressing for drizzling or garnish of fresh parsley, dill, or chives

Steps:

  • Preheat oven to 425℉. In a bowl, combine the radishes, cooking fat (ghee, butter or oil), dried herbs, salt, and pepper; toss until the radishes are evenly coated. (Note: don't add the minced garlic until step 3).
  • Spread radishes out in a single layer in a large 9×13 inch baking dish.
  • Bake for 20-25 minutes, tossing every 10 minutes. After the first 10 minutes of baking add the minced garlic and toss. Return to oven to bake an additional 10-15 minutes or until radishes are golden brown and easily pierced with a fork.

LOL). I also put them out as part of an appitizer buffett on a platter with cauliflower that I cooked the same way....they disappeared!
