Skordalia (mashed potatoes with garlic) is a strong-flavored, appetizing, and very healthy dip that can also be served as a side dish to seafood dishes!

800 grams / 1lb 12 oz potatoes (about 3 medium-sized )
6 garlic cloves
6 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
kosher salt
ground pepper

Steps:

  • Peel the potatoes and cut them into small squares.
  • Add them in a medium-sized cooking pot and cover with water. Season with kosher salt. Bring to a boil over high heat.
  • Reduce heat to medium and cook (partially covered) until they're completely soft when you prick them with a knife (to the point they fall apart). Time depends on the variety of potatoes. It might take from 20 to 30 minutes.
  • Transfer potatoes to a large mixing bowl. Keep the water they've boiled in aside.
  • In a food processor blend garlic with olive oil and vinegar until smooth paste forms.
  • Add the garlic paste to the potatoes. Using an electric mixer with the whisk attachment on, start mashing the potatoes on low speed.
  • Gradually add bits of the "potato-water" in the potatoes until they get nicely whipped and fluffy. NOTE: You don't have to use all the water. Just enough to reach the right consistency that's why it is added in small bits at a time.
  • Season with extra salt if needed and some ground pepper on top.
  • Once it's ready you may keep covered in the pot until you're ready to serve (it gets even better if it sits for a while about 30 minutes for example).
  • Serve with Greek olives and some rustic bread.

1 package (8 oz) cream cheese, softened
1/2 cup sour cream
1/2 teaspoon chicken bouillon granules
1 clove garlic, finely chopped

Assorted cut-up fresh vegetables

Steps:

  • Cook potatoes as directed on bag. In medium bowl, place potatoes; let stand until slightly cooled, 10 to 15 minutes.
  • Meanwhile, in another medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Add sour cream, bouillon and garlic; beat until smooth.
  • Mash potatoes with potato masher until slightly smooth. Add to sour cream mixture; beat on medium speed until well combined. Gently stir in parsley. Serve with assorted vegetables. Store dip in refrigerator. Let stand at room temperature 15 minutes before serving.

3 lb russet (baking) potatoes (6 to 8 medium; preferably organic)
1 small head garlic (2 inches in diameter)
3/4 stick (6 tablespoons) unsalted butter, softened
1 teaspoon salt
1/4 teaspoon black pepper
Accompaniment: onion and spinach dip

Steps:

  • Preheat oven to 350°F.
  • Prick each potato once or twice with a fork. Cut off and discard top fourth of garlic head, then wrap garlic tightly in foil. Bake garlic and potatoes on same rack in lower third of oven until potatoes are tender, 50 minutes to 1 hour. Remove potatoes from oven and cool on a metal rack 15 minutes. Continue to bake garlic until tender, about 15 minutes more, then cool in foil on rack.
  • While garlic cools, halve potatoes lengthwise, then quarter each half (to form short wedges). Scoop out potato flesh (reserving it for another use), leaving 1/4-inch-thick potato skins.
  • Increase oven temperature to 425°F.
  • Squeeze garlic into a small bowl, discarding garlic skins, and mash to a paste with butter, salt, and pepper using a fork.
  • Divide garlic paste among potato skins (about 1/2 teaspoon each), spreading evenly, then roast skins in a large shallow baking pan (1 inch deep) until golden and crisp, 20 to 25 minutes.

4 large heads green garlic
about 6 tbsp olive oil
few sprigs fresh thyme
250-300g/9-10oz soft cheese , such as soft goat's cheese, ricotta or Philadelphia
a little milk if necessary
2 tbsp chopped fresh herbs - mixture of parsley, tarragon and chives is nice
squeeze of lemon juice (optional)
2 large green garlic cloves, thinly sliced
choose from boiled new potato or globe artichokes, lightly cooked asparagus
raw or lightly cooked baby carrot , cooked baby beetroot
tiny raw broad bean , young radishes
slices or pepper, wedges or raw fennel or celery
- allow for about 450g vegetables per person

Steps:

  • Heat the oven to 190C/gas 5/fan 170C. Cut a slice off the top of each head of garlic and place on foil. Spoon over 4 tbsp of the oil, tuck in the thyme and wrap. Season with salt and pepper and bake for up to 1 hour - until the garlic is very soft. Cool.
  • Beat the cheese in a bowl until smooth. Squeeze the roasted garlic out of its skin into the cheese and mash with a fork until smoothish. Beat in sufficient oil and/or milk to get a good dipping consistency. Beat in the herbs and season to taste - add a squeeze of lemon too, if necessary.
  • Heat 1 tsp oil in a small pan and fry the sliced garlic gently until golden brown (not too brown or it will taste bitter). Drain and scatter the garlic over the dip. Serve the dip in the centre of a large platter of vegetables.

2 Yukon Gold or russet potatoes (peeled and cubed)
1 tsp kosher salt
1 cup olive oil
1 cup blanched almonds
1/2 cup water
3 cloves garlic
1 lemon ((2 tbsp lemon juice))

red pepper flakes
3 green onions (green tops finely cut)

Steps:

  • Bring salted water in a medium saucepan to a boil and cook potatoes until fork tender (5-6 minutes). Drain and mash in a medium bowl.
  • In a blender add the olive oil, almonds, water, garlic and lemon juice. Puree until smooth and emulsified.
  • Pour the almond mixture over the mashed potatoes and stir to incorporate. Season to taste with salt.
  • Garnish with a drizzle of olive oil, red pepper flakes and green onion tops. Serve warm with chips, pita or chopped vegetables.

  • Preheat oven to 425 F degrees.

3 heads garlic, unpeeled
1 tablespoon olive oil
½ cup sour cream
¼ cup mayonnaise
1 green onions, chopped
1 tablespoon red wine vinegar
½ teaspoon salt
¾ tablespoon ground black pepper

Steps:

  • Preheat an oven to 300 degrees F (150 degrees C).
  • Cut off the top of the head of garlic to expose the cloves, trimming about 1/4 inch off of the top of each clove. You may need to trim individual cloves along the sides of the head. Brush the cut cloves with a small amount of olive oil, then nestle the head into a piece of aluminum foil.
  • Bake in the preheated oven until the cloves are tender and nicely browned, about 1 hour. Remove, and allow to cool to room temperature.
  • Once cool, squeeze the garlic cloves out of their skins and into a mixing bowl. Mash well with a wire whisk, then add the sour cream, mayonnaise, green onions, vinegar, salt, and pepper. Whisk until evenly blended, then refrigerate 2 to 4 hours to allow the flavors to blend.

1/3 cup olive oil
1/4 cup balsamic vinegar
3 garlic cloves, grated

1/4 cup water
1/4 cup parmesan cheese, grated
1/2 cup fat free sour cream

1 lime, juice of
1/8 cup fresh parsley, chopped

Steps:

  • Wash and chunk potatoes. Can peel if you want. I usually don't.
  • Mix all ingredients except the parmesan cheese and toss with potatoes.
  • Pour into a baking dish.
  • Marinade for 30 minutes.
  • Bake at 350 for 60 minutes or until fork tender.
  • Sprinkle with the cheese just before serving.
  • Time depends on size of potatoes.
  • NOTE: Depending on your personal likes you can mix the potatoes and oil/seasoings in a bowl,marinade then just spoon the potatoes into an oiled or sprayed baking dish and then drizzle with as much of the oil/seasoning mixtue as you would like to use.
  • Sour Cream Dip.

Skordalia is a beautiful Greek-style garlic dip that has a thick base of either day-old bread or mashed potatoes. This easy skordalia recipe is made of mashed potatoes and flavored with garlic, crushed almonds, and lemon juice.

1 lb gold potatoes, peeled and cubed (see cook's tip #1)
kosher salt
3 ounces blanched almonds (or shelled walnuts)
3 to 6 garlic cloves or roasted garlic (see cook's tip #2 below)
1/4 cup plus 2 tbsp fresh lemon juice
3/4 cup Greek extra virgin olive oil (I use either Private Reserve or Early Harvest EVOO), more for later
1 green onion, trimmed and thinly sliced, for garnish
Fresh chopped parsley, for garnish
Zest of 1 lemon, for garnish

Steps:

  • Place cubed potatoes in a big colander and rinse with cold water until the water is clear (see cook's tip #1). Transfer to a saucepan and add water to cover the potatoes by at least 2 inches. Salt the water well. Bring to a boil over high heat, then reduce heat to medium-low and simmer for about 10 to 15 minutes or until the potatoes are well cooked through (test by inserting a knife, it should break the potatoes with no resistance). Drain the potatoes in the same colander and rinse again, this time with hot water, for 30 seconds. Set the potatoes aside for 5 to 7 minutes to allow excess moisture to evaporate.
  • While potatoes are cooling, combine almonds, garlic, large pinch of kosher salt, and lemon juice in the small bowl of a food processor fitted with a blade. Run processor until the garlic and almonds turn into a paste (as smooth as you can get it).
  • Using a potato masher or a food mill (do not use food processor), mash the potatoes thoroughly.
  • To the mashed potatoes, add about 1/2 of the olive oil, a little bit at a time, mixing well with a wooden spoon. Add the garlic and almond paste and mix well. Then add the remaining olive oil, again a little bit at a time, mixing well with your wooden spoon. Taste and add more kosher salt if needed. Mix well to combine. (At this point, if you're not serving the skordalia, you can let it cool then chill in the fridge until later).
  • Transfer the mashed potato dip into a serving bowl or dish. Add a generous drizzle of extra virgin olive oil and top with chopped green onions, parsley and lemon zest. Serve at room temperature or chilled (if you had chilled it before adding garnish).

1 ¼ pounds russet potatoes
6 cloves garlic, sliced, or to taste
1 teaspoon kosher salt, or more to taste
½ lemon, juiced
¼ cup white wine vinegar
½ cup olive oil
1 pinch cayenne pepper
1 drizzle olive oil, or to taste
1 pinch minced fresh oregano

Steps:

  • Peel and quarter the potatoes and add to a saucepan with enough cold salted water to cover by 1 inch. Place over medium-high heat; bring to a simmer. Reduce heat to medium and continue to simmer until potatoes are tender, but not falling apart, 15 to 20 minutes.
  • While potatoes are cooking, add garlic and 1 teaspoon kosher salt to a mortar and pestle. Crush into a fine paste and reserve.
  • Drain potatoes, reserving some of the cooking water to thin the dip out with later if desired. Let sit for 5 minutes.
  • Transfer the potatoes to a mixing bowl. Mash with a potato masher or potato ricer until smooth and lump free. Stir in garlic paste. Add lemon juice and vinegar and stir in with the masher.
  • Whisk in 1/2 cup olive oil in 3 or 4 additions. Add cayenne and more salt if needed. Pass dip through a mesh strainer into a bowl. Serve at room temperature, garnished with olive oil and oregano.

  • MAKE THE ROASTED GARLIC DIP:
  • Preheat the oven to 400°. Place the garlic cloves in an ovenproof dish, then pour in the olive oil and toss to coat. Spread out in a single layer and roast in the preheated oven of 25 min or until tender. Remove from the oven and let stand until cool enough to handle.
  • Peel the garlic cloves, then place on a heavy cutting board and sprinkle with a little salt. Mash well with a fork until smooth. Scrape into a bowl and stir in the sour cream and mayonnaise. Season to taste with salt and paprika. Cover the bowl with plastic wrap and let chill until ready to serve.
  • MAKE THE POTATOES:.

1 1/2 pounds potatoes for boiling
1/2 teaspoon freshly ground black pepper
6 to 12 cloves of garlic (minced or grated, to taste)
1 cup extra virgin olive oil
1/3 cup good quality red or white wine vinegar

Steps:

  • Add the salt to a large pot of water. Peel the potatoes and boil in the salted water until well done and are easily pierced with a fork. Place in a colander to drain.
  • Return the potatoes to the pot and sprinkle with pepper and mash to combine.
  • In the blender bowl of a food processor (or with a hand mixer ), puree the potatoes and garlic until well mixed, about 30 to 45 seconds. Still pureeing, slowly add the olive oil and vinegar, alternating between them, tasting as you go, until the mixture is smooth. Skorthalia should be creamy and thick. If it gets too thick, add a little cold water (but not more than 1/4 cup).
  • Skordalia is a matter of taste, some prefer a mild garlic taste, while others prefer a strong garlic taste. If the taste is too strong, increase the number of potatoes a bit. If the taste is not strong enough, increase the garlic.

Steps:

  • Cut the top third off each head of garlic so the cloves are exposed and wrap in foil. Roast the garlic until the cloves are very soft and golden, about 45 minutes. Cool slightly and then pop the cloves from the skins and finely chop.
  • Meanwhile, heat the oil in medium skillet over medium heat. Add the pancetta and cook, stirring occasionally, until crisp, about 8 minutes. Using a slotted spoon, transfer the pancetta to paper towels to drain.
