1 whole broiler/fryer chicken (3-1/2 pounds)
1-1/2 teaspoons salt-free lemon-pepper seasoning
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon seasoned salt
1/2 teaspoon dried thyme
1 medium lemon, halved
2 fresh rosemary sprigs

Steps:

  • Loosen skin around chicken breast, leg and thigh. Combine the seasonings; rub half under skin. Cut half of the lemon into quarters and place in the cavity along with rosemary sprigs. Skewer openings; tie drumsticks together with kitchen string. , Place chicken breast side up on a rack in a roasting pan. Squeeze the remaining lemon over chicken; rub with remaining spice mixture. Bake, uncovered, at 375° for 1 to 1-1/2 hours or until chicken juices run clear and a thermometer reads 180° (cover loosely with foil if browning too quickly). Cover and let stand for 15 minutes. Remove and discard skin, and discard lemon and herbs from cavity before carving.

This is a recipe I put together one night with some chicken leg quarters I had - it was such a hit! Super delicious and so easy (not to mention inexpensive!). I have made it many, many times since, for family and friends, and even people who generally "only like breasts" love this. It really works best with meaty bone in thighs, leg quarters, and you can use breasts, but I would leave the skin on!!!!

2 -3 lbs meaty skinless chicken pieces, with bone (I use thighs)
2 whole lemons
2 tablespoons lemon juice
4 cloves garlic
olive oil
lemon-pepper seasoning

Steps:

  • Spray a deep baking dish, or roaster with non stick spray.
  • Combine 1 TBS of olive oil, the juice and zest of both lemons, plus the additional lemon juice, and the 4 cloves of garlic minced in a small bowl.
  • Place the chicken in the roasting pan.
  • Sprinkle liberally with the Lemon Pepper Salt.
  • Pour the lemon mixture over all- you can throw the lemon rinds into the baking dish too.
  • Bake at 400 for about 45 minutes to an hour, turning the chicken over halfway through baking.
  • I sometimes make this, and seal it in a ziplock bag in the freezer, then when you are ready, thaw, dump in the roaster and bake- just adding the lemon pepper salt.
  • My family likes this when I take the sauce from the chicken, combine it with a small amount of half and half and serve it over pasta.

1 head garlic
2 tablespoons olive oil
chopped fresh parsley
2 lemons

Steps:

  • Cut up 1 lemon into 8 pieces and rub the outside of the chicken with the peel side of the pieces and then put the lemon pieces into the chicken with the garlic.
  • Season with salt and pepper.
  • Pour a mixture of half of the olive oil and half of the butter on top and pour the rest inside of the chicken.
  • Roast for 1 1/2 hours in a preheated oven of 325 degrees.
  • Half-hour before chicken is done roasting pour the juice from the second freshly squeezed lemon over the top and sprinkle the chicken with the chopped parsley and return the chicken to the oven to finish roasting.

2 tablespoons lemon juice
4 lemon slices (for garnishing)

Steps:

  • In a large container/bowl, season the chicken legs with dried oregano, dried thyme, coriander, smoked paprika, salt, pepper, and garlic.
  • Pour the olive oil and lemon juice over the chicken legs. Toss everything very well. Marinate overnight.

Juice of 2 to 3 lemons
1/2 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
4 cloves garlic, minced
24 whole chicken legs

Steps:

  • Preheat the oven to 450 degrees F. Line baking sheets with foil.
  • Melt the butter in a saucepan. Add the lemon juice, salt, black pepper, cayenne and garlic, and stir. Set aside.
  • Rinse and pat the chicken legs dry. With metal tongs, dip them one by one into the butter mixture and place on the prepared baking sheets.
  • Once all of the chicken legs are coated and on the baking sheet, take a pastry brush and give them one last coating of the butter mixture.
  • Place them into the oven for 30 to 35 minutes, basting a couple of times during roasting. If they need a bit more color, turn on the broiler for a couple minutes and watch them closely.
  • Remove them when they are nice and golden brown and fully cooked.

Kosher salt
1 tbsp dry oregano
1 tbsp black pepper
1 1/2 tsp coriander
1 tsp sweet paprika

1 head garlic (about 12 garlic cloves, peeled and chopped)
1 medium yellow onion (cut into wedges)
Zest and juice of 2 lemons + 1 lemon sliced
1/4 cup extra virgin olive oil

Steps:

  • Pat chicken dry and season with kosher salt, be sure to season under the skin too. If you have the time, arrange the chicken on a tray or a shallow dish and chill in the fridge uncovered for a few hours or overnight (optional.)

2 teaspoons salt
zest and juice from 2 large lemons (or 3 medium), separated
2 large cloves garlic, finely minced
1/4 teaspoon black pepper
1 tablespoon fresh thyme, optional
2 tablespoons honey

Steps:

  • Preheat the oven to 375 degrees.
  • Pat your chicken legs dry with paper towel and set aside.
  • In a small bowl, combine the salt, lemon zest (but not juice), minced garlic, pepper, and thyme. Use the back of a spoon to smash the mixture together and release any moisture the zest or garlic might have into the herbs (a mortar and pestle works well here but isn't a must). The goal is to have a spice mix that is well blended using the garlic to bring it all together.
  • Rub the spice mixture all over the chicken and set the chicken legs inside a baking dish (9x13 or 8x11 both work).
  • Bake the chicken for 40 minutes.
  • While the chicken is baking, mix together 1/3 cup of the lemon juice and the honey. If the honey is too thick, warm it just a bit so that it's mixed into the juice well.
  • After the 40 minutes, remove the chicken from the oven. Turn the chicken legs over in the pan and then drizzle the lemon juice mixture over the chicken. Return to the oven for 10 minutes.
  • Remove from the oven again. Flip the chicken over again and spoon the juice that has collected in the bottom of the pan over the chicken. Return to the oven and bake an additional 10-15 minutes or until the chicken is cooked through and reaches 165 degree F. on an instant-read thermometer.
  • Remove the chicken from the oven and spoon the pan juice over the top one more time. Enjoy hot.
