- In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain and return to pot.
- Season chicken with salt, pepper, garlic powder, and Italian seasoning. In a large skillet over medium-high heat, heat oil, then cook chicken until browned on both sides and cooked through. Dice chicken, set aside, and cover to keep warm.
- Wipe skillet clean, then melt butter over medium-high heat. Stir in garlic and cook, 1 to 2 minutes. Sprinkle flour over butter and garlic and stir until thick.
- Gradually whisk in heavy cream until a smooth sauce is formed, then add salt and pepper and stir in Parmesan until melted.
- Stir in chicken and penne, then top with pepper, thyme or parsley, and more Parmesan. Serve immediately.

- As soon as you get the chicken home, salt it inside and out, wrap it and keep it in the refrigerator for up to 2 days.
- When you are ready to cook the chicken, first preheat the oven to 425 degrees F.
- Pat the outside of the chicken dry with paper towels. Liberally salt and pepper the inside of the chicken and stuff the cavity with the all the garlic and lemon. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place it in a roasting pan just large enough to hold it and the vegetables. Scatter the onion slices, carrots and potatoes around the chicken. Brush the outside of the chicken with the butter and sprinkle with salt and pepper.
- Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken to a platter and cover with aluminum foil. Place the vegetables back in the oven and continue cooking for an additional 15 minutes.
- When the vegetables are cooked, carve the chicken and place the slices on the platter surrounded by the vegetables. Drizzle some pan juices over the chicken and vegetables.

- Preheat the oven to 425 degrees F. Heat the olive oil in a large ovenproof skillet over medium-high heat. Season the chicken with salt and pepper and cook, skin-side down, until browned, about 5 minutes.
- Separate the heads of garlic into cloves but do not peel. Flip the chicken; add the garlic and rosemary to the skillet and transfer to the oven. Roast until the chicken is cooked through but still moist, 15 to 20 more minutes.
- Place the bread on a platter and top each slice with a chicken breast. Add the vinegar to the skillet and scrape up any browned bits with a wooden spoon. Add 3 tablespoons water and simmer until the sauce thickens slightly, about 2 minutes. Pour the sauce and garlic over the chicken and bread.
- Tip: You can squeeze the garlic out of its skin and spread on the chicken or bread.
PENNE PASTA & OVEN ROASTED CHICKEN (BY FLORIDA NATIVE)
This is my stab at Romano's Macaroni Grill's dish called "Penne with Oven Roasted Chicken". I think it is my favorite chicken and pasta dish, and I've tried alot of them and made up a few myself. I found a couple of recipes for this but could not get the exact ingredients so I improvised and this is what I ended up with. I added no salt as the chicken broth and cooking wine I used both had salt. I think it's pretty close, not exactly Romano's but still YUMMY! Specifics: I used Perdue's Perfect Portions Roasted Garlic with White Wine Boneless-Skinless Chicken Breasts, Gourmet Garden Basil Herb Blend (in the tube in the refrigerated produce section, I used 3 teaspoons), Holland House White Cooking Wine with Lemon Flavor, and Barilla Plus Penne Pasta.

- Preheat oven to 325 degrees.
- Place chicken in a baking pan and brush with olive oil. If not using pre-seasoned chicken, sprinkle with a little basil, garlic powder and parsley.
- Bake chicken 30-40 minutes or until thoroughly cooked through.
- Remove from oven, cool, and slice into bite-size chunks.
- While baking chicken, cook penne pasta according to package directions, and pre-measure or chop other ingredients.
- Once the chicken is chopped and the penne is prepared, you're ready to put it all together.
- Add 1 tablespoon each of the reserved sun-dried tomato oil and the olive oil to a large skillet.
- Over medium-high heat, stir-fry the asparagus for about 3 minutes.
- Add the chopped chicken, sun-dried tomatoes, garlic, basil (1/4 cup if using fresh), oregano, chicken broth, wine and tomato paste.
- Stir together well and bring to a boil.
- Reduce heat to medium-low and simmer about 5 minutes until the asparagus is crisp-tender.
- Add prepared pasta and stir well to coat. Cook 1-2 minutes or until pasta is thoroughly heated.
- Remove pan from heat.
- Add the buffalo mozzarella chunks and toss mixture about 5 seconds.
- Serve in individual pasta bowls with warm garlic bread.

- Cook 1 lb boneless skinless chicken breast in 1 tbsp olive oil for 5-7 min or until almost done add ½ cup green pepper and ½ cup sweet onion. Cook until tender.
- Cook 1 lb penne pasta.
- Add chicken, green peppers and onions too Penni pasta.
- Cook 1 stick of butter or margarine until melted, add 2 handfuls of flour to make a paste, cook approx 3-5 minute Add 2 cloves of garlic, minced; cook 3-5 min more. Add 2 cups of milk and bring to boil, stirring constantly. Cook until is consistency of a sauce for pasta, approx 10-15 min stirring frequently (I use a wire whisk).
- Add pasta and chicken to sauce, add lemon zest, salt and pepper and a pinch of nutmeg.
- Bake in a 375°F oven for 15 minute add ½ cup of Parmesan cheese and bake another 10-15 min covered.
- I add grated cheese sometimes at the end of baking for a more cheesy taste.

- Cook the pasta in a large pot of boiling salted water, until al dente. Drain well.
- Season chicken with salt and pepper. Heat a large grill pan over medium high and add chicken. Grill until golden and completely cooked. Remove to a plate and slice.
- Add the garlic and red pepper flakes to a saute pan with 3 tablespoons of olive oil and saute until fragrant. Add the cooked pasta and turn heat off. Mix all together.
- Remove pasta to a large bowl. Add chicken to the warm pasta and season with salt and pepper. Sprinkle in chopped parsley. Add the juice of 2 lemons and mix. Before serving top with Parmesan.

- Sprinkle chicken w/ salt & pepper. Spray a lg skillet w/ cooking spray. Place skillet over med-high heat. Cook chicken until no longer pink inside, about 5 min per side. Remove chicken from pan. - SAUCE:
- ~~NOTE: Before you start the sauce, put your breasts on a griddle and cook them, be sure to keep an eye on them.~~.
- Put the garlic, basil and olive oil in the food processor and whirl it up until it is mixed well throughout. A blender or just slicing by knife works fine if you do not own a food processor. Set aside.
- In a small saucepan: combine cornstarch, milk, and cheese. Mixture should be kind of runny, if not add some milk until desired consistency.
- Once you have reached a desired consistency, add the garlic mixture to the cause and bring to a low boil.
- After the sauce has boiled put it through a small wire sift to get any clumps of starch out. Set aside
- CHICKEN:
- ~~NOTE: Before you start the chicken, start the water for your pasta~~.
- Cut your cooked chicken breasts into 2-3 inch pieces and put into a frying pan on low heat.
- Add the cheese, breading, and garlic and turn the heat to Medium-High so that the cheese can melt and the breading will stick.
- ~~Check your water, if it is boiling, add the pasta.~~.
- When all the cheese is melted and the chicken pieces are covered, remove them from the heat.
- FINISHING:.
- Drain the pasta and then re-sift the sauce onto the noodles.
- Mix the sauce and noodles and then add the chicken.
- Mix all together in a pot and serve warm.
