EASY SHRIMP AND PESTO PIZZA



Easy Shrimp and Pesto Pizza image

This deliciously easy pesto pizza is perfect for lunch or dinner. Ready in under 15 minutes, this blackened shrimp and pesto pizza will soon be a household favorite.

1 Naan flatbread or pre-made and cooked Pizza crust
6 shrimp (tails removed)
butter or olive oil for cooking the shrimp
2 tsp your favorite seasoning, I used VooDoo Chef DUST
1-2 tbsp pesto (I used homemade, but store will work as well)
¼ cup diced tomatoes (more or less to your preference)
1 tbsp Freshly grated Parmesan Cheese

Steps:

  • Preheat oven to 425°
  • Place naan flatbread or cooked pizza crust on a baking sheet.
  • Top with pesto, spread evenly over the whole crust.
  • Bake for about 5-10 minutes or until the naan flatbread begins to get crispy.
  • While the naan flatbread is in the oven it's time to sauté your shrimp in a bit of butter or olive oil and sprinkle heavily with your favorite all purpose seasoning, I used DUST by VooDoo Chef. Shrimp only takes a minute or two to cook, so keep an eye on it!
  • Remove the shrimp from heat when it's cooked thoroughly.
  • When the naan flatbread is done, remove from oven and top with the blackened shrimp, fresh tomatoes and sprinkle with Parmesan cheese.
  • You can place it back in the oven for a minute or two if you like your tomatoes warm.
  • Cut, serve and ENJOY

Steps:

  • Combine yeast and warm water in a small bowl. Let stand for 5 minutes. Stir in honey and olive oil. Combine whole-wheat flour, cornmeal, and salt in a medium bowl. Stir in yeast mixture. Stir in as much of the all-purpose flour as you can.
  • Turn dough out onto a lightly floured surface. Knead in enough of the remaining all-purpose flour to make a moderately stiff dough that is smooth and elastic (3 to 4 minutes total). Shape dough in a ball. Cover; let rise in a warm place until nearly double in size (30 to 45 minutes).
  • Preheat oven to 425 degrees F. Grease an extra large baking sheet or two small baking sheets; set aside. Punch dough down; divide dough in half. Let rest for 10 minutes.
  • Roll each dough half on a lightly floured surface into a 10- to 12-inch oval. Transfer to prepared baking sheet(s). Prick dough oval with a fork. Bake for 6 to 8 minutes or until lightly browned.
  • If desired, halve shrimp lengthwise. Toss shrimp with 1 tablespoon of the pesto to coat. Spread the remaining 4 tablespoons pesto over baked crusts. Top with shrimp; sprinkle with mozzarella cheese. Bake for 5 to 8 minutes more or until bubbly. Cut each pizza into six slices.

Homemade or store-bought Pizza Dough
Homemade or store-bought pesto sauce
1 cup fresh or thawed frozen shrimp, tails off, cut into small pieces
1 cup mushrooms, sliced
2 cups shredded mozzarella cheese or your favorite dairy-free alternative
1/2 cup pine nuts

Steps:

  • Make the homemade pizza dough. Or, use your favorite store-bought pizza dough or pizza crust.
  • Make the spinach pesto sauce. Or, use jarred store-bought pesto.
  • Preheat oven to 425°F. Roll out the pizza dough. Brush olive oil on top of the dough. Sprinkle dried oregano over the top. Spread pesto sauce, then top generously with the shrimp, mushrooms, cheese, and pine nuts. Bake at 425°F for 8-12 minutes, until the crust gets a nice golden brown color, the shrimp turns pink, and the cheese is just melted.

15 garlic cloves, peeled (about 1 head)
1 cup olive oil, plus extra for tomatoes
1 pound cherry tomatoes
Salt and freshly ground black pepper
1/4 cup grated Parmesan
1 cup packed basil leaves
1 pound linguine
1 1/4 pounds large shrimp, shelled and deveined
1/4 cup pine nuts, toasted

Steps:

  • Preheat oven to 375 degrees F.
  • Place garlic cloves in a single layer in a small baking dish. Add 1/2 cup olive oil to cover cloves, cover with foil, and bake 45 minutes, until golden brown and fork-tender. Meanwhile, in another baking dish, toss tomatoes with enough oil to coat. Lightly season with salt and pepper and roast at same temperature until tomatoes blister, about 25 minutes.
  • Strain garlic cloves and set aside in a small bowl, reserving infused oil separately. In a blender, add the roasted tomatoes, roasted garlic, Parmesan, and basil. Pulse until combined. While machine is running, drizzle in 1/2 cup olive oil until pesto comes together. Season with 1 1/2 teaspoons of salt. Remove to a bowl, cover with plastic wrap and reserve.
  • Bring a large pot of salted water to a boil over medium heat. Add the linguine and cook until al dente. Drain.
  • Meanwhile, heat a saute pan over medium-high heat. Add 2 tablespoons of the garlic oil. Season the shrimp with salt and pepper and saute until the shrimp turn pink and is cooked through.
  • In a large bowl add the linguine and some of the pesto. Toss to coat and top with the shrimp. Garnish with toasted pine nuts and serve.
  • Note: There will be leftover pesto.

Add the yeast mixture, the remaining water, and 2 teaspoons oil, and stir until combined. Transfer the dough to a floured surface and knead until smooth. Grease a large bowl with the remaining 1 teaspoon oil, add the dough and turn to coat. Cover and put in a warm place until doubled in volume, about 1 to 1 1/2 hours.
  • Preheat the grill to medium-high. Once the dough has risen, divide it in half, and set aside half for another use or for the Red Chile-White Anchovy Caesar Salad Pizza. Then divide the half into 4 balls. Roll each ball into 8-inch circles. Brush each circle with oil and grill on both sides until golden brown. Add 1/2 cup grated cheese to each pizza and grill until the cheese is just melted. Remove from the grill and spread a few tablespoons of the cilantro pesto over each pizza. Top each pizza with 4 shrimp and sprinkle with cilantro leaves.
  • Put all ingredients in the work bowl of a food processor. Process until smooth. Season with salt and pepper to taste.;

Came up with this one for pizza night...A hit with everyone in my family. Great with chicken or shrimp...whatever you have leftover. I think the balance of the savory pesto with the sweetness of tomato and caramelized onions turned out really nice. If you use a sweet onion such as Vidalia, you can omit the sugar. I used recipe #144195 with great results. Hope you enjoy!

1 cooked chicken breasts, shredded or 1/2-3/4 cup raw shrimp, peeled and deveined

  • Meanwhile, spread roasted garlic over crust.

This is a gourmet style pizza easy to throw together with a prepared crust or take a little time and make your crust. Sure to love it if you love Shrimp! Prep time is for prepared crust...if you make your own it will take more time but it's worth it!

2 pizza dough, 9 inch frozen or home made
30 large shrimp, peeled and de-veined with tails removed
10 cloves garlic, peeled and minced
1/8 cup extra virgin olive oil
1 cup grated mozzarella cheese
1 cup grated Fontina cheese or 1 cup mild swiss cheese, such as finlandia swiss cheese
2 ounces goat cheese
2 tablespoons grated parmesan cheese
1/4 cup yellow peppers or 1/4 cup red pepper, diced
1 cup cherry tomatoes, cut in half

Steps:

  • In a 10" to 12" frypan, heat the cup of olive oil to medium low and add the shrimp and garlic.
  • If the shrimp is raw, sauté for 3 minutes on each side.
  • If the shrimp is already cooked, sauté for two minutes on each side (all you are doing is flavoring the shrimp with the oil and garlic).
  • Remove from the pan and let cool.
  • Place your baking stones in the oven and heat to 550ºF.
  • On a floured surface, press the dough into a 9" circle (if you are doing home made).
  • Place pizza dough on a surface that can slide on the stone or use a pizza peel covered with parchment paper.
  • With a pastry brush, coat the dough with the garlic olive oil.
  • For each pizza, add half the mozzarella, half the Fontina, and 1/2 the diced pepper.
  • Now place 15 shrimp on each pizza and 1/2 the goat cheese in chunks.
  • Add half the cherry tomatoes and sprinkle with 1/2 the Parmesan cheese.
  • Dribble some of the remaining garlic oil over the pizza.
  • When adding the topping, leave a 1" border on the edges so the dough can rise all around the edges.
  • It is easy to stretch the dough out on the edges after the toppings are on.
  • Pull out an oven rack and using a spatula, slide a pizza onto a stone.
  • Rotate the pizza (s) 180º after about 3 minutes.
  • Bake for 2 more minutes.
  • At 550º, total baking time is 5 or 6 minutes, until the cheese is bubbling.
  • Remove, slice, and serve.

SHRIMP AND PESTO PIZZA



Shrimp and Pesto Pizza image

In a departure from the standard pizza toppings, grilled dough is spread with basil pesto and scattered with shrimp, sliced tomatoes, and shaved Parmesan. No grill? No problem. Cook this dough in a cast-iron skillet over high heat, or on a preheated sheet pan or pizza stone in a 500-degree oven.

Yield Makes one 10-inch pizza

Number Of Ingredients 8

2 tablespoons basil pesto
3 ounces grilled shrimp
2 small tomatoes, sliced
1/4 small red onion, sliced
shaved Parmesan
Basic Grilled Pizza Dough
Herb Oil
Coarse salt and ground pepper

Steps:

  • Heat it up:Set up a grill with heat source, coals or gas, on one side over medium-high. Clean and lightly oil hot grill.
  • Stretch it:On a lightly floured work surface, stretch or roll 1 piece Basic Grilled Pizza Dough or 4 ounces store-bought dough into a 10-inch-long oval or other desired shape. Brush one side lightly with Herb Oil or olive oil and season with salt and pepper.
  • Grill it:Using your hands, place dough, oiled side down, directly over heat source. Brush dough with herb oil or olive oil and cook until underside is lightly charred and bubbles form all over top, 1 to 2 minutes. With tongs, flip dough and cook until lightly charred, 1 to 2 minutes. Slide dough to cooler side of grill.
  • Top it:Top with pesto, shrimp, tomatoes, onion, and Parmesan; cover grill. Cook until cheese melts and toppings are heated through, 2 to 5 minutes.
