TOMATO GARLIC BREAD

Steps:
- Preheat the oven to 400 degrees F.
- Split the bread in half lengthwise and place it on a baking sheet. Drizzle the cut side with the olive oil. Bake until golden brown and toasted, 5 to 8 minutes.
- While still warm, rub the cut side of the bread halves with the garlic. Cut the tomato in half and rub it on the bread halves.
- Sprinkle with course salt, then cut into 4 pieces.
CHUNKY ITALIAN TOMATO DIP
This recipe was given to me by my Italian FIL. I don't measure when I make this, I just eyeball it. So if you wish to make any adjustments to the amounts, feel free. Eat it with a crusty or toasted Italian bread. It is yummy! Entered for the Zaar World Tour 2005.

Steps:
- Mix all of the ingredients together. Cover and let them meld in the refrigerator overnight. Shake the container occasionally to mix a little.
- This can be eaten right away if you wish, but it does taste better if it marinates for a while before you eat it.
- Enjoy!

ROASTED GARLIC OLIVE OIL BREAD DIP
Steps:
- Preheat the oven to 200°C/400°F.
- Place the halved head of garlic on a piece of foil then drizzle over the two teaspoons of oil and season with salt. Wrap in the foil, making sure the garlic is completely enclosed.
- Place in the oven and allow to roast for 30-45 minutes or until completely soft.
- Remove from the oven and allow to cool for 15 minutes.
- Squeeze the roasted garlic out of the papery skins and mash into a bowl.
- Add the olive oil, herbs, chilli flakes, lemon juice, salt and pepper. Mix then taste and adjust seasoning if necessary.
- Serve the dip with good bread.

ROASTED GARLIC BREAD & TOMATO DIP
Roasted Garlic Bread & Tomato Dip

- Preheat oven to 400°F.
- Cut the top off the garlic head to reveal cloves. Place cut bulb in the center of a piece of aluminum foil and drizzle with olive oil and salt. Bring edges of foil together to encapsulate garlic. Place in the oven and cook for 30 minutes or until garlic cloves are very soft. Allow garlic to cool before squeezing out roasted garlic cloves. Set aside.
- Mix together the softened butter, roasted garlic and half of the Hidden Valley® Original Ranch® Dips Mix. Spread the butter mixture onto the sliced baguette and place on a baking sheet. Bake for 20 minutes or until golden and crispy. Remove from oven and slice into 2-inch thick pieces.
- Meanwhile, stir together the marinara and remaining Hidden Valley® Original Ranch® Dips Mix. Heat over low or microwave until warm.
- Serve roasted garlic bread with the seasoned tomato dip.

Steps:
- Remove the papery outer skin from the garlic.
- Cut tops off of bulbs and brush with 1/2 teaspoon of olive oil.
- Wrap each bulb in foil.
- Place garlic and tomatoes on a foil lined baking pan.
- Brush tomatoes with remaining oil.
- Bake at 425 degrees for 30 minutes, or until garlic is softened.
- Cool for 15 minutes then squeeze garlic into a mixing bowl.
- Drain any liquid from tomatoes, chop, and add to garlic.
- Stir in cream cheese and seasonings.
- Serve with crackers.

- Place tomatoes and whole, skin-on garlic cloves on a baking sheet. Sprinkle with olive oil and toss to coat. Roast in a preheated 450 F oven for 25-30 minutes. Remove from oven and cool completely. Remove paper skin from garlic cloves. Place tomatoes, peeled garlic, cream cheese, sour cream, and salt and pepper into the work bowl of a food processor fitted with metal chopping blade. Process until smooth. Garnish and serve at room temperature. Can be made up to 2 days in advance. Refrigerate leftovers.

- Preheat oven to 375 degrees.
- Remove white papery skin from garlic head. Do not peel or separate the cloves.
- Wrap head in foil.
- Bake for 45 minutes; cool for 10 minutes.
- Separate cloves. Squeeze to extract garlic pulp. Discard skins.
- Bring 1 cup water to a boil in a saucepan.
- Add tomatoes.
- Cover and removed from heat.

- Griddle 2 slices of rustic bread for about 2 mins each side until lightly charred. Tear up and put in a blender. Chop 400g very ripe tomatoes and add to the blender with 1 sliced garlic clove, 1-2 tbsp sherry vinegar, 50ml extra virgin olive oil and a pinch of smoked Spanish paprika. Blend until smooth and serve with breadsticks.
