PAN-ROASTED CHICKEN WITH MOREL MUSHROOM SAUCE

Morel mushrooms are one of the most delicious-and fleeting-signs of spring, and this one-pan dish is a decadent way to usher in the new season. In it, tender whole chicken legs are finished in a creamy sauce that's layered with the flavors of morels, herbs and white wine. Round out the meal with a salad of mixed greens, oven-roasted potatoes or rice pilaf for an impressive dinner-party menu.

Number Of Ingredients 11

4 whole chicken legs (about 12 ounces each)
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
3/4 cup thinly sliced shallots (about 2 medium shallots)
4 cloves garlic, crushed
8 ounces fresh morel mushrooms, cleaned and halved
1 cup dry white wine
1 cup low-sodium chicken broth
6 sprigs thyme
1/2 cup heavy cream
1 tablespoon finely chopped fresh chives

Steps:

  • Season the chicken generously all over with salt and pepper.
  • Heat the olive oil in a large heavy pan over medium-high heat. Once the oil is shimmering and just starting to smoke, add the chicken skin-side down and cook until golden brown all over, flipping halfway through, about 12 minutes. Transfer the chicken to a plate; set aside.
  • Return the pan to medium heat and add the shallots and garlic to the pan. Cook, stirring often, until the shallots are soft and the garlic is lightly browned, about 2 minutes. Add the mushrooms and cook, gently stirring and scraping up any browned bits from bottom of the pan with a wooden spoon, until the mushrooms begin to release liquid, about 2 minutes. Transfer the mushroom mixture to a medium bowl and set aside.
  • Add the wine to the pan and bring to a boil. Cook until the wine is reduced by half, about 4 minutes. Add the broth and thyme and bring back to a boil. Return the chicken to the pan, skin-side up, along with any juices from the plate and cover with the lid slightly ajar. Reduce the heat to medium-low and simmer until the chicken is cooked through, about 15 minutes.
  • Swirl in the cream and return the mushroom mixture to the pan. Simmer (uncovered) over medium-high heat, stirring occasionally, until the sauce thickens slightly, about 8 minutes. Season with salt and pepper. Place the chicken on a serving plate, spoon the mushroom sauce over and sprinkle with chives.

This recipe is an adaptation of a dish the chef Angie Mar serves at the Beatrice Inn in Manhattan, the chicken crisped in a pan, then napped in a Madeira-laced cream sauce dotted with morels. Which sounds fancy and hard to make but isn't, really. Brown the chicken, and set it aside to rest. Cook the morels in the remaining fat - you could swap them out for another wild mushroom or even button mushrooms in a pinch - and then flash them with Cognac, which you'll find will come in handy again and again once you start cooking with it. (Try it on steak au poivre!) Then build up a sauce with cream and a little butter and crème fraîche for gloss, get the chicken into it and add some fresh savory and tarragon at the end - or just one of those, or neither. Make the dish as you prefer or as you can. It's luxurious, every time.

1 chicken, 4 to 4 1/2 pounds, cut into pieces, or some combination of chicken parts on or off the bone, approximately 3 pounds
Kosher salt to taste
2 tablespoons olive oil
12 to 15 morels or other wild mushrooms, approximately 3 1/2 ounces
1/4 cup Cognac
1 1/2 cups chicken stock, homemade or low-sodium
2/3 cup heavy cream
1/2 cup Madeira wine
1 tablespoon unsalted butter
1 tablespoon crème fraîche or Greek-style yogurt
2 teaspoons finely chopped savory
1 tablespoon finely chopped tarragon
1/2 tablespoon finely chopped parsley, to finish

Steps:

  • Season the chicken parts aggressively with salt. Set a Dutch oven or large, high-sided sauté pan over high heat, and swirl the olive oil into it. When it is shimmering and about to smoke, turn the heat to medium high, and working in batches, add the chicken to the pan, skin-side down, setting the pieces aside to rest when they are golden and crisp on one side and just kissed by the heat on the other, approximately 30 minutes for all the meat.
  • Discard all but 2 tablespoons of fat in the pan, then return it to medium-high heat and add the mushrooms, tossing to coat them with fat. Cook, stirring often, until the mushrooms just begin to soften, approximately 3-4 minutes, then remove the pan from the heat. Add the Cognac, and carefully ignite it with a match, or simply cook it on very low heat until the alcohol has evaporated and the mushrooms are glossy.
  • Scrape the mushrooms to the sides of the pan, then add to it the chicken pieces, arranged in a single layer if possible. Pour 1 to 1 1/2 cups of chicken stock around the chicken. It should rise about halfway up each piece. Lower heat to medium, allow the mixture to come to a low simmer, then put a lid on the pan and allow the mixture to cook slowly until the meat has cooked through, approximately 15 minutes.
  • Remove the lid from the pan, and transfer the chicken pieces to a platter to rest. Turn the heat to medium high, and allow the chicken stock to reduce by 1/3, then add the heavy cream, and stir to incorporate. Let this mixture simmer for a minute or 2 until it starts to thicken, then add the Madeira, and swirl again to combine.
  • Continue cooking the sauce until it can enrobe the back of a spoon, approximately 2-3 minutes more, then stir in the butter, crème fraîche and chopped savory and stir to combine. Turn the heat off, add the tarragon, stir one more time and then return the chicken pieces to the pan. Spoon some sauce over the chicken, sprinkle with the parsley and serve.

1 - ounce dried morels, soaked for 30 minutes in 3 cups very hot water
6 boneless, skinless chicken breasts
Kosher salt
Freshly ground black pepper
All-purpose flour, for dredging
1 ¿4 cup clarified butter
1 ¿3 cup chopped shallots (2 large)
1 tablespoon minced garlic (3 cloves)
1 cup Madeira wine
1 cup (8 ounces) creme fraiche
1 cup heavy cream
2 tablespoons freshly squeezed lemon juice

Steps:

  • Preheat the oven to 375 degrees F.
  • Lift the morels carefully from the hot water in order to leave any grit behind in the liquid. Rinse a few times to be sure all the grittiness is gone. Discard the liquid and dry the morels lightly with paper towels. Set aside.
  • Sprinkle the chicken breasts with salt and pepper. Dredge them in flour and shake off the excess. Heat half the clarified butter in a large saute pan and cook the chicken in 2 batches over medium-low heat until browned on both sides, 8 to 10 minutes. Remove to an ovenproof casserole.
  • Add the rest of the clarified butter to the pan along with the shallots, drained morels, and garlic. Saute over medium heat for 2 minutes, tossing and stirring constantly. Pour the Madeira into the pan and reduce the liquid by half over high heat, 2 to 4 minutes. Add the creme fraiche, cream, lemon juice, 1 teaspoon salt, and 3¿4 teaspoon pepper. Boil until the mixture starts to thicken, 5 to 10 minutes. Pour the sauce over the chicken and bake for 12 minutes, or until the chicken is heated through. To make ahead, refrigerate the chicken and sauce in the casserole and reheat slowly on top of the stove.

3/4 ounce dried morel
3 lbs chicken, cut up
1 1/2 tablespoons butter
salt & pepper
10 ounces dry sherry
1 cup heavy cream
6 ounces fresh mushrooms (preferably morels)
fresh parsley, chopped

Steps:

  • Rinse dry morels & place in small bowl.
  • Pour 1/2 cup boiling water over top& soak for 1/2 hour.
  • Cut the chicken into 8 pieces (2 legs, 2 thighs, 4 half brests); reserve wings & backs for making stock or soup.
  • Melt butter in heavy frying pan over medium heat.
  • Add chicken pieces & cook until golden on each side (about 5- 8 minutes).
  • Remove to plate, season to taste & keep warm.
  • Discard fat in pan, then add sherry & scrape the bottom of the pan to deglaze.
  • Boil until the sherry is reduced by half.
  • Drain the liquid from the soaking mushrooms through a fine sieve (to remove any grit) into the frying pan.
  • Add the cream & bring to a boil; simmer for 3 minutes.
  • Cut the soaked morels into halves or quarters (depending on their size) and add to pan.
  • Return chicken to pan & cook for another 10 minutes, uncovered.
  • Clean the fresh mushrooms, add to the pan, cover & cook for another 10 minutes or until chicken is cooked through.
  • Garnish with parsley.

I have made so many that are experiments but you kinda know the ingredients will work, I wasn't sure with this one, but it was lovely.

2 chicken breasts
1/2-3/4 cup chopped swiss brown mushrooms (I used just over 1/2 a cup.)
250 g soft goat cheese, rind removed
2 tablespoons butter
1/2 tablespoon fresh thyme leave
1/2 tablespoon fresh parsley, chopped finely
1 tablespoon butter
1 shallot, finely chopped
1/2 cup dry white wine
1/2 cup water
1/2 cup cream
1 1/2 teaspoons cornflour
2 1/4 tablespoons morels (I used dried as I couldn't get fresh so you will have to adjust amount for fresh.)

Steps:

  • Heat butter in pan, add mushrooms and cook until tender and liquid has evaporated, add thyme and parsley stir to combine.
  • Take chicken breast and using a meat mallet flatten until almost equal thickness all over, Lay three slices of goats cheese over each breast, top with mushroom mixture and fold other half of chicken over to cover. Tie at close intervals with kitchen string.
  • Heat a small amount of olive oil in a pan and brown chicken breasts on both sides.
  • Transfer chicken to a lightly oiled oven proof dish and bake in preheated oven 180c for 30-35 Min's or until chicken is cooked through.
  • For The Sauce.
  • Melt butter in a pan, add shallot and cook until softened.
  • Add wine, water and pepper to taste and bring to a boil, turn heat down to a simmer, mix a little water with the cornflour and pour into sauce, stir until sauce has thickened. (don't worry if it seems too thick as you still have the cream to add.).
  • Add cream and chopped morels and stir until heated through serve over chicken.
  • To Serve: I sliced chicken into thick slices and served over potato crisps topped with sauce.

1 cup dried morels, about 1 1/4 ounces
8 skinless, boneless halved chicken breasts, about 1/4 pound each
Salt to taste if desired
Freshly ground pepper to taste
4 tablespoons butter
3 tablespoons finely chopped shallots
1/2 cup dry white wine
1/2 cup heavy cream
1/3 cup rich chicken broth

Steps:

  • Put morels in mixing bowl and add warm water to cover. Let stand 30 minutes or longer. Drain.
  • Put each chicken breast half on flat surface, trim off all remnants of fat and sprinkle with salt and pepper.
  • Heat 1 tablespoon of butter in small heavy skillet and add 1 tablespoon of shallots. Cook, stirring, until wilted. Add drained morels, salt and pepper. Cook, stirring, about 1 minute and add 1/2 of wine. Cook until liquid is reduced by half. Add cream and cook 2 minutes.
  • Heat 2 tablespoons of butter in skillet large enough to hold chicken in one layer. Add chicken pieces and cook over moderately high heat. As chicken pieces cook, stir gently without turning about 3 minutes or until nicely browned. Turn and continue cooking about 5 minutes.
  • Transfer chicken to warm serving dish, arranging neatly. Add remaining shallots to skillet and stir briefly. Add remaining wine and stir to dissolve brown particles that cling to bottom of pan. Cook down until not quite evaporated. Add chicken broth and cook 1 minute.
  • Heat morels in cream and spoon around chicken.
  • Swirl remaining tablespoon of butter into sauce with chicken broth and spoon over chicken pieces.

She didn't give me the recipe, but she did give me the ingredients. I then experimented a few times until I got it right. Treat yourself & make it with Duck Breasts, although Chicken Breasts are also very good.

1/4 cup water
1/4 cup sugar
1/4 cup red wine vinegar
1 tablespoon balsamic vinegar
3 tablespoons butter
1 ounce dried morel
1/8 teaspoon dried chives

3 cloves garlic, chopped
2 cups dry red wine
2 cups chicken broth
1 bunch red swiss chard
2 boneless skinless chicken breasts, flattened

2 black trumpet mushrooms

Steps:

  • In a small heavy saucepot boil water with sugar, without stirring, until a golden caramel.
  • Remove pot from heat& carefully add red-wine vinegar& 1 tablespoon Balsamic vinegar down side of pan.
  • Stir mixture over moderate heat until caramel is dissolved, about 3 minutes.
  • Remove from heat.
  • In a heavy saucepan sautè the Morel Mushrooms in butter, stirring over moderate heat until the liquid from the mushrooms is evaporated, about 5 minutes.
  • Transfer mushrooms with a slotted spoon to a bowl& reserve.
  • Add shallots& garlic to pan& cook, stirring until golden.
  • Stir in wine& boil until reduced to about 1 cup, about 15 minutes.
  • Add chicken broth& the reserved morel soaking liquid& reduce to about 1 1/4 cups, about 15 minutes.
  • Remove pan from heat& stir in caramel mixture, chives& parsley.
  • Add mushrooms to sauce with salt& pepper to taste.
  • If desired, stir in additional Balsamic vinegar, 1 teaspoon at a time& lemon juice.
  • Wilt the red chard& set aside.
  • Slightly season the flattened breasts with salt, pepper,& just a little bit of allspice (do not overdo allspice).
  • Place each breast onto a leaf of Chard.
  • Place a sautèed black trumpet mushroom in the middle of each breast.
  • Place Morel mushroom mix in middle of each breast.
  • Roll up the breasts.
  • Wrap each breast in saran wrap& then tie both ends together, which will keep the saran wrap from opening.
  • Cook in boiling water 16 minutes for medium rare.
  • Remove& serve topped with the Morel Sauce.
  • NOTE: This recipe is best with duck breasts, rather than chicken breasts, but duck breasts can only be gotten in a specialty gourmet store& are usually expensive.
  • However, if you wish to really treat yourself or impress someone, use duck breasts.
