ROASTED FENNEL AND ARTICHOKE HEARTS

Roasted Fennel and Artichoke Hearts image

Canned artichokes add subtlety and flavor to this meal. We like the Whole Foods 365 brand because the artichokes don't come out too salty when roasted.

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Time 35m

Number Of Ingredients 6

1 fennel bulb (12 ounces), cut into 3/4-inch wedges, 1 tablespoon fronds reserved for garnish

2 tablespoons roughly chopped flat-leaf parsley

ROSE'S BAKED ARTICHOKE HEARTS

Rose's Baked Artichoke Hearts image

If you like stuffed artichokes, you'll love this delicious and easy way to serve them without all the work! Frozen hearts are SO much better than canned! When Martha Stewart Living editors were asked to choose their favorite holiday side dish from childhood, this was Lucinda Scala Quinn's first choice and her family's most sought after leftover. It came from her mother Rose, who got tired of stuffing all those artichokes for a crowd. Use crusty bread with texture for the breadcrumbs and cover the baking dish with parchment paper before wrapping with foil. They were prepared in 2 smaller baking dishes for photos only. Also, you could cut the artichokes smaller and serve as appetizers. So good!

Time 1h5m

Yield 8 serving(s)

Number Of Ingredients 12

1 1/2 cups fresh breadcrumbs (Italian or French bread, crusts included)
1/4 cup finely chopped fresh parsley
2 ounces parmesan cheese, grated
2 ounces pecorino romano cheese, grated
1 tablespoon italian seasoning (or mixed dried herbs like thyme, oregano, savory, etc.)
1 teaspoon coarse salt
fresh ground pepper
3 (9 ounce) packages frozen artichoke hearts, thawed and drained
2/3 cup extra virgin olive oil, more to oil the baking dish
1 teaspoon finely grated lemon zest
1/4 cup fresh lemon juice (about 2 lemons)
2 garlic cloves, minced (2 teaspoons)

Steps:

  • Preheat oven to 325 degrees F. Combine breadcrumbs, parsley, cheeses, herbs and salt in a medium bowl, and season with pepper.
  • Brush oil inside a 9x13" baking dish or long, shallow casserole. Spread artichoke hearts in a single layer in the dish. Sprinkle breadcrumb mixture over artichokes, pushing it into cracks between hearts. Tap the bottom of the dish on the counter to settle the breadcrumb mixture.
  • Whisk oil, lemon zest and juice, and garlic in a small bowl. Drizzle dressing evenly over breadcrumb topping. Cover dish with parchment paper, then tightly with foil, and bake for 30 minutes.
  • Increase temperature to 375 degrees F. Uncover dish, and bake until breadcrumbs are golden brown, 20 to 25 minutes more. Serve immediately.

KUMQUAT'S ROASTED ARTICHOKE HEARTS

Kumquat's Roasted Artichoke Hearts image

A real treat, particularly for artichoke lovers. This was developed based on a dish I used to buy from an Italian deli around the corner from where I used to live. Now that I no longer get over there very often, I decided to come up with my own recipe. BF has decided it's better than the original! Quite a compliment considering it was our favorite dish! Now he wants me to make them every time I fix supper, LOL! To be honest I'm suprised there aren't more roasted artichokes here on Recipezaar. It uses canned (easier than fresh) and roasting them greatly enhances the taste and texture. It takes a while for the artichokes to roast, but it's not hard to make and I think you'll find it's very much worthwhile!

Time 1h30m

Yield 6 serving(s)

Number Of Ingredients 11

3 (15 ounce) cans artichoke hearts (whole)
2 teaspoons extra virgin olive oil
4 garlic cloves (halved or quartered)
1/3 cup fresh breadcrumb
1/3 cup parmesan cheese (freshly grated)
1/4 cup vegetable broth
1 lemon (fresh)
1 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper (or to taste)
1 tablespoon butter

Steps:

  • Preheat oven to 375°F.
  • Empty artichoke hearts into colander, rinse a bit to remove brine and drain well.
  • Mix gently with olive oil and garlic slices.
  • Place artichoke mix in metal roasting pan and roast for about 1 hour or more, or until artichokes start to brown. Toss once or twice if desired.
  • To make breadcrumbs, toast one slice or so of a good quality, dense bread such as sourdough or panzanella or whole wheat(or use day old bread). Tear into pieces and toss into blender. Blend until processed into fine crumbs.
  • Melt butter over medium-low heat in non-stick pan and add bread crumbs. Toss a few minutes until slightly browned (this will depend on how well your bread was toasted).
  • Remove from heat and add parmesan cheese, 1 teaspoon grated lemon rind, vegetable broth, thyme, salt and pepper. Mix well.
  • When artichokes are done roasting, remove from oven and increase oven temperature to 450°F Toss artichokes gently with juice of 1/2 lemon and then with breadcrumb mixture. Place artichokes in single layer of a 2 quart square baking pan. Sprinkle any remaining breadcrumb mixture over top.
  • Bake for 15 minutes or so until warm and cheese has melted.

  • Using a sharp knife, trim the artichoke stems to 1 inch and cut off 1 inch from the tops. Using kitchen shears, trim 1/2 inch from the leaves. Halve the artichokes lengthwise and, using a melon baller or spoon, scoop out the small spiky leaves and hairy chokes; leave a few layers of leaves. Rub the cut parts of the artichokes with the halved lemon and set them, cut side down, in a large steamer basket. Steam the artichokes over boiling water until the hearts are tender, about 10 minutes.
  • In a large deep skillet, heat 1/4 cup of the oil until shimmering. Add the fennel and onion and cook over moderately high heat, stirring, until translucent, about 5 minutes. Add the garlic and thyme, season with salt and pepper and cook until the vegetables are just beginning to brown, about 4 minutes longer. Remove from the heat and let cool slightly, then stir in the chopped parsley.
  • Preheat the oven to 375°. Toss the bread crumbs with 1 tablespoon of the oil and spread them on a baking sheet. Toast for about 3 minutes, or until golden. Transfer the crumbs to a plate. Raise the oven temperature to 450°.
  • Heat 1 tablespoon of the oil in a very large skillet. Pat the artichokes dry and add them to the skillet, cut side down. Cook over moderate heat until deep golden, about 4 minutes. Arrange the artichokes, cut side up, in a large baking dish and fill them with the fennel mixture. Sprinkle with the toasted bread crumbs and bake for about 15 minutes, or until heated through.
