POMEGRANATE GLAZED PORK

Steps:
- Remove the pork roast from the refrigerator 30 minutes before cooking.
- Preheat the oven to 350 degrees F. Place the rack on the lower middle section of the oven.
- Place the carrot halves on the bottom of a small roasting pan and set aside.
- Trim off any thick areas of fat from the roast. Make shallow slits about 1 inch apart in a crosshatch on the meat of the roast. Mix together the cinnamon, cloves and 1 tablespoon salt in a small bowl. Sprinkle the seasoning mixture evenly over the roast and rub to coat. Place the roast on the carrots and add 1/2 cup water to the pan. Roast for 1 hour, adding another 1/2 cup water if the pan gets dry.
- Meanwhile, combine the pomegranate juice and thyme in a small saucepan. Place over medium heat and reduce by half, about 15 minutes. Stir in the maple syrup and mustard and continue to reduce until slightly thickened, another 3 to 4 minutes. Season with the remaining 1/4 teaspoon salt and remove and discard the thyme.
- Baste the meat with the pomegranate mixture and roast until the internal temperature reaches 120 degrees F, another 30 minutes. Remove the roast from the oven and turn the oven up to 450 degrees F.
- Baste the roast again with the pomegranate mixture. Return the roast to the hot oven for an additional 20 minutes, basting with the pomegranate sauce every 5 to 10 minutes until the internal temperature reaches 135 degrees F and the roast is evenly glazed. Remove the roast to a platter to rest for 10 minutes. Add any juices from the pan to the sauce and bring to a simmer over medium heat. Stir to combine. Slice the roast and serve with the sauce on the side.
GLAZED DOUBLE-CUT PORK CHOPS

- Prepare the pork: Mix 2 tablespoons salt, the black pepper, brown sugar and paprika in a bowl, then rub all over the chops. Wrap in plastic wrap and refrigerate 2 to 4 hours.
- Meanwhile, make the sauce: Melt the butter in a saucepan over medium heat, then add the onions and cook until translucent, about 4 minutes. Stir in the vinegar and brown sugar until dissolved. Add the ketchup, apple juice, syrup, bourbon, prunes, Worcestershire sauce, cayenne, 1 tablespoon salt and 1 1/2 teaspoons black pepper and bring to a boil. Reduce to a simmer and cook until thickened, about 30 minutes. Puree with an immersion blender or in a regular blender.
- Preheat a grill to medium. Brush the grates with vegetable oil, then place the chops directly over the flame and grill until marked and cooked halfway through, about 15 minutes. Turn the chops and place on a cooler area of the grill (such as the edges); cover and cook until a thermometer inserted into the thickest part registers 140 degrees F to 145 degrees F, 15 to 20 minutes. Uncover and brush the chops on all sides with the prepared sauce, then cover and cook until glazed, about 5 more minutes. Transfer to a cutting board and brush with more sauce. Tent with foil and let rest 10 minutes. Serve with more sauce and Smoky Corn on the Cob.
- Peel back the husks from the corn and remove the silk. Butter the kernels and sprinkle with salt and smoked paprika. Fold the husks back over the corn and grill over low heat until cooked through, turning occasionally, 12 to 15 minutes.
DOUBLE-CUT PORK CHOPS WITH GARLIC BUTTER

- Make the brine: Combine the salt, peppercorns, sugar, rosemary sprigs, bay leaves, 3 tablespoons each juniper berries and fennel seeds, the garlic and 2 cups water in a large saucepan. Bring to a boil, whisking occasionally, then remove from the heat. Transfer the brine to a large bowl and add 6 cups cold water; let cool completely. Submerge the pork chops in the brine, cover and refrigerate overnight.
- Preheat a grill to medium. Make the roasted garlic butter: Cut off the top 1/4 inch of the garlic head and set it on a piece of foil. Drizzle with olive oil, then wrap in the foil and transfer to the grill. Cook until the garlic is softened, about 30 minutes; let cool. Meanwhile, remove the pork from the brine and pat dry with paper towels; set aside.
- Squeeze the roasted garlic cloves from the skins into a food processor. Add the butter, rosemary, lemon juice and a pinch of salt and pulse until smooth. Transfer to a bowl and set aside.
- Prepare the pork: Grind the remaining 1 teaspoon juniper berries and 2 tablespoons fennel seeds in a spice grinder or finely chop. Season the pork with the ground spices and salt and pepper. Lightly brush the grill grates with olive oil; transfer the pork to the grill. Cover and cook until marked, 15 minutes, rotating the pork 45 degrees halfway through to create a crosshatch pattern. Flip and repeat, cooking until an instant-read thermometer inserted into the center of the pork registers 145 degrees F.
- Remove the pork chops from the grill and spread the roasted garlic butter on top. Let rest at least 10 minutes.
PASTELLES
One of Roger Mooking's most beloved family traditions is making this Trinidadian take on tamales for the holidays. The banana leaves help the filling stay moist, like corn husks would, says the chef and host of Cooking Channel's Man Fire Food. "My family and I would spend half the day on pastelles duty!" he says. "They're a true labor of love."

- Make the corn dough: Combine the cornmeal, coconut sugar and sea salt in a stand mixer with the paddle attachment. Turn the mixer speed to low and pour in 3 1/2 cups water, then the melted butter. Once the mixture starts to come together, increase the speed to medium and mix 5 minutes. Cover with plastic wrap, touching the surface of the dough, and set aside, 1 hour.
- Turn out the dough onto a work surface and divide into 24 equal-size balls, around the size of an ice cream scoop. Place the dough balls on a baking sheet; cover with a damp towel to prevent them from drying out.
- Make the filling: While the dough rests, heat a large rondeau pan or large pot over high heat. Add the vegetable oil, then the beef and pork. Cook until half-cooked, finely breaking up the meat with a potato masher, about 3 minutes. Reduce the heat to medium high, then add the onion and cook, stirring, until soft, 3 to 5 minutes. Add the garlic and cook 1 minute. Add the thyme, oregano and Thai chiles and cook 1 minute. Add the olives, raisins, chicken stock, tomato paste, capers and Worcestershire sauce; simmer over medium heat until almost fully reduced and the meat is a paste-like consistency. Season with salt and let cool completely.
- Assemble the pastelles: Cover your prep surface with several layers of newspaper (this can be a messy job). Using an 8-inch pastelle/tortilla press, place a 16-inch-long piece of foil on the bottom of the press. Place a banana leaf on the foil and lightly coat with vegetable oil. Place a dough ball on top, rolling the ball over the leaf to coat it in oil. Brush another square of foil with vegetable oil and place on top of the dough ball. Press the dough using the pastelle/tortilla press until flat. Remove the top square of foil and save it to reuse.
- Transfer the bottom piece of foil, banana leaf and flattened dough to a work surface. Place 2 heaping tablespoons of the filling on half of the dough, making sure to leave a 1/2-inch border of dough. Fold the uncovered dough over the meat into a half-moon using the banana leaf and foil. Press the edges to seal. Wrap in the banana leaf, then the foil, to seal into a rectangular package. Repeat with the rest of the dough and filling.
- Bring a large pot of water to a boil. Add as many pastelles as you want to the water. Boil until fully cooked, about 20 minutes. Remove from the water with tongs and set aside until cool enough to handle, about 2 minutes.
- Make the avocado-cilantro root puree: Put the avocado, lemon juice and cilantro root in a food processor and pulse until very smooth. Season with salt and pepper. Transfer to a nonreactive bowl. Cover and refrigerate until ready to serve.
- Serve the pastelles hot with the avocado-cilantro root puree.
BRAISED MUSTARD GREENS

- On medium heat, saute garlic and bacon in a large saute pan.
- While bacon is cooking boil water in a large pot. Blanch mustard greens in boiling water until bright green. Drain greens.
- In a saute pan with the bacon, add greens and garlic. Stir together. Add chicken stock and raisins. Mix well together. Add salt and pepper, for taste, and let simmer for 5 minutes.

- In a skillet, heat oil over medium-high heat and brown pork chops on both sides; place in bottom of slow cooker when browned.
- In same skillet, reduce heat to medium and saute onions until softened; add garlic, dry mustard, salt and pepper, and cayenne and cook, stirring, for 1 minute.
- Add flour and cook, stirring, for 1 minute.
- Add vinegar and wine and cook until thickened.
- Pour this mixture over pork chops, put lid on crock pot and cook on Low for 4 to 5 hours or on High for 2 to 2-1/2 hours (I did Low for 4-1/2 hours), or just until pork is tender.
- Remove pork chops from slow cooker and place on a warmed platter.
- Stir Dijon mustard and whipping cream into juices in slow cooker; when well combined, turn slow cooker off and pour sauce over chops on platter and serve immediately.
PORK CHOPS WITH DIJON SAUCE
In the Burgundy region of France, home of Dijon, pork chops are traditionally served in a sauce made with mustard, cream and white wine, and there are very few pairings that are better. Richard Olney, a prominent food writer and authority on French cooking, sautéed sliced apples and chops and then baked them all together with cream and mustard dribbled on top. I prefer the method here, but you could always fry up some apples and serve them on the side. (For a dish with roots closer to Normandy than Burgundy, make the same recipe but omit the mustard, deglaze the pan with Calvados instead of wine and stir sliced sautéed Granny Smiths into the sauce itself.)

- Melt butter in the oil in a large deep skillet over high heat. Season chops with salt and pepper and add them, browning well, about 2 or 3 minutes a side, reducing the heat slightly if chops brown too quickly.
- Remove chops to a platter and pour off most of the fat. Add green onions or shallots and cook over medium-high heat until softened, about 1 minute. Add wine and bring to a boil, scraping brown bits off the bottom. Stir in the stock and return chops to the pan. Bring the sauce to a simmer, cover and cook until chops are tender, about 15 to 20 minutes.
- Remove the chops to a warm platter; cover with foil to keep warm. Raise the heat and boil pan juices to reduce by half, about 2 minutes. Add cream and boil 2 minutes more, until sauce reduces a bit and thickens. Remove from the heat and whisk in mustard and the parsley, if using. Taste and add more mustard if desired. Immediately spoon sauce over the chops and serve.

- In a wide skillet, cook bacon in olive oil until crisp, crumble bacon and set aside.
- Salt and pepper pork loin to taste, and brown on all sides.
- Place potatoes in bottom of crock pot, place pork loin on top.
- Cook leeks, carrots, and celery in remaining bacon fat and olive oil, add to crock pot.
- Deglaze pan with stock and 1 cup pomegranate juice, bring to a boil, and add to crock pot.
- Sprinkle herbs and bacon on top of pork loins, cook on low about 6 hours.
- Remove pork loins and potatoes from crock pot, set aside and keep warm.
- Move 2 cups of cooking liquid to a wide skillet, add remaining pomegranate juice, balsamic vinegar, and marmalade. Reduce liquid to about 1 cup.
- Slice pork loin, drizzle with pan sauce, serve with potatoes and maybe a nice spinach salad. Enjoy!
