This recipe is mine that I have worked on for a few years. People love it. This is a great recipe to enjoy with a nice sourdough bread.

1 pound bacon, diced
3 onions, diced
1 bunch celery, diced
3 tablespoons minced garlic
2 quarts water, divided
1 gallon heavy whipping cream
1 cup butter
1 ¾ cups all-purpose flour
18 potatoes, peeled and diced
2 (16 ounce) packages frozen corn
1 red bell pepper, diced
2 pinches red pepper flakes, or to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Place bacon in a large heavy-bottom pot and cook over medium-high heat until crispy, about 10 minutes. Add onions and celery to bacon and stir until coated in bacon grease; add garlic.
  • Pour 1 quart water over onion mixture and cover pot; steam vegetables until partially tender, about 5 minutes. Add remaining 1 quart water and cream; reduce heat to medium.
  • Melt butter in a saucepan over medium heat; stir flour into melted butter and cook until mixture forms a paste. Add potatoes to flour-butter paste and cook until paste is lightly browned and the raw flavor of flour is gone, about 5 minutes. Slowly stir potato mixture into vegetable and cream mixture and cook until soup is smooth, potatoes are tender, and temperature is 170 degrees F (75 degrees C) to 180 degrees F (80 degrees C), 30 to 40 minutes.
  • Cook and stir corn and red bell pepper together in a cast iron skillet over medium heat until golden brown, 10 to 15 minutes. Mix corn mixture into soup and season with red pepper flakes, salt, and pepper.

1/2 pound bacon strips, chopped
1/4 cup chopped onion
1-1/2 pounds Yukon Gold potatoes (about 5 medium), peeled and cubed
1 can (14-3/4 ounces) cream-style corn
1 can (12 ounces) evaporated milk
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1-1/2 teaspoons in pan. Add onion to drippings; cook and stir over medium-high heat until tender., Meanwhile, place potatoes in a large saucepan; add water to cover. Bring to a boil over high heat. Reduce heat to medium; cook, uncovered, 10-15 minutes or until tender. Drain, reserving 1 cup potato water., Add corn, milk, salt, pepper, potatoes and reserved potato water to saucepan; heat through. Stir in bacon and onion.

½ pound thick sliced bacon, cut into 1/2-inch pieces
2 carrots, diced
4 stalks celery, chopped
1 bay leaf
2 tablespoons butter
2 tablespoons flour
4 cups milk
2 large potatoes, peeled and diced
1 (15.25 ounce) can whole kernel corn, drained
1 pinch paprika

Steps:

  • Cook the bacon pieces in a large skillet over medium heat until the fat has rendered, and the bacon is crispy, about 8 minutes. Remove the bacon, leaving the grease in the pan. Stir the carrot, celery, and bay leaf into the bacon grease; cook for 5 minutes.
  • Meanwhile, melt the butter in a large pot over medium-low heat. Whisk in the flour, and cook for 5 minutes, stirring constantly. Slowly whisk in the milk, and bring to a simmer over medium-high heat. Once simmering, cook for 5 minutes, whisking frequently. Add the bacon, cooked vegetables, potatoes, and corn. Return to a simmer, then reduce heat to medium-low, and cook until the potatoes are tender, about 20 minutes more. Use additional milk as needed to to achieve desired consistency. Garnish with paprika to serve.

1/2 cup finely chopped onion
1/4 cup chopped celery
2 cups lower-sodium chicken broth, divided
3 1/2 cups fresh corn kernels, reserving 3 of the stripped cobs (6 to 8 medium ears corn)
1 lb unpeeled red potatoes, cubed (1/2 inch, about 3 cups)
2 tablespoons chopped fresh thyme
2 bay leaves
1 teaspoon coarse salt
1/4 teaspoon pepper
2 cups hot milk
1/4-1/2 teaspoon hot pepper sauce

Steps:

  • Cook bacon in large pot over medium heat 8 minutes or until crisp. Drain on paper towels; reserve bacon drippings in pot.
  • Add onion and celery to pot; cook and stir 3 to 4 minutes or until almost translucent. Increase heat to high; add 1/2 cup of the broth, stirring to scrape up any browned bits from bottom of pot. Add reserved corn cobs, remaining 1 1/2 cups broth, potatoes, thyme, bay leaves, salt and pepper; bring to a boil. Cover; reduce heat to low.
  • Simmer 15 minutes or until potatoes are tender; uncover.
  • Add milk and hot sauce; simmer 5 minutes.
  • Add corn kernels; simmer 3 to 4 minutes.
  • Remove and discard corn cobs and bay leaves.
  • Stir in bacon just before serving.

This creamy, chunky, stew has a classic, rich flavor and takes so little effort (plus, it just requires one pot, so clean-up is a breeze). This recipe came to us through a soup competition held by the town of Chevy Chase, MD and this entry, from 10-year-old Aryaman and his mom Aditi Lall, was a hit! Scramble recipe tester Jennifer Grosman said, "It got a thumbs up from all 4 of us, which is a rarity."

Number Of Ingredients 11

8 oz. bacon (turkey, pork, or meatless)
1 yellow onion (chopped about 2 cups)
1 red, orange, or yellow bell pepper (diced, or use 3 carrots, finely diced)
1/4 cup whole wheat flour (I like the white whole wheat from King Arthur Flour, use wheat/gluten-free, if needed)
1 1/2 lbs. Yukon Gold potatoes (peeled (if desired) and diced)
1 lb. frozen roasted corn kernels (or use regular frozen corn)
1/4 tsp. salt (or use Old Bay seasoning, or more to taste)
1/4 tsp. black pepper (or use cayenne pepper for a spicier option)
4 cups reduced-sodium chicken or vegetable broth (or use any variety)
1 cup half and half
1/2 cup chopped fresh cilantro, chives, or basil (optional)

Steps:

  • In a large stockpot or Dutch oven, cook the bacon over medium-low heat until it is browned and crisp, about 10 minutes.
  • When the bacon is cooked, let about 1 Tbsp. of grease remain in the pot, and transfer the bacon to a paper towel-lined plate, to drain away most of the bacon grease. Chop or crumble the bacon when it is cooled, and set it aside.
  • While the bacon cools, raise the heat under the stockpot to medium and sauté the onions and peppers until they are tender, 6 - 8 minutes.
  • Add the flour to coat the vegetables and cook them for 2 - 3 more minutes.
  • Add the potatoes, corn, salt, black pepper, and broth.
  • Cover the stew and bring it to a boil, reduce the heat and simmer it for about 20 minutes, stirring occasionally, until the potatoes are fork tender.
  • Stir in the half and half, heat it through, and add the bacon (alternatively, top the stew with the bacon at the table if you have family members who don't eat bacon or you want the bacon to stay crispy). Serve it immediately, sprinkled with the fresh herbs, if desired, or refrigerate it for up to 3 days.

1 tablespoon butter
1/4 pound bacon, diced
1 cup chopped onion
3/4 cup chopped green pepper
Kosher salt and black pepper
1 tablespoon minced garlic
2 tablespoons flour
4 cups chicken broth or stock
4 cups peeled, finely diced all-purpose potato
1 1/2 cups shredded carrot
2 cups fresh or frozen corn kernels
1 cup half-and-half
1/2 teaspoon dried thyme
Pinch of cayenne pepper
2 tablespoons chopped fresh Italian parsley

Steps:

  • Sling the butter into a soup kettle and melt over medium-high heat. Add the bacon and cook till crisp. Scoop out the bacon and drain on paper towels. Save for later--don't nibble too much.
  • Pour off all but 1/4 cup of fat from the pot. Toss in the onions and peppers, seasoning them with a pinch of salt and pepper. Cook till soft and then throw in the garlic, cooking it all for 1 minute more. Sprinkle on the flour and mix into the veggies. Dump in the broth and potatoes. Cover the pot and bring to a boil; then lower the heat and simmer for 10 to 12 minutes, or till the potatoes are tender. Add the shredded carrots and corn. Cover and simmer everything 5 to 6 minutes longer to blend the flavors.
  • Stir in the half-and-half. Season with the thyme, cayenne, some more salt, and lots of freshly ground black pepper to taste. Sprinkle with parsley and the bacon bits you've been saving. Give it one last stir, and ladle it up piping hot.

5 ears fresh corn, husked and silk removed
7 ounces scallions (about 20)
3 slices bacon, cut into 1/2 inch pieces
1 tablespoon unsalted butter
1 jalapeno, cored, seeded and finely diced
1 teaspoon kosher salt (or to taste)
black pepper, freshly ground (to taste)
3 1/2 cups low sodium chicken broth
1 large yukon gold potato, peeled and cut into 1/2 inch pieces (8-9 oz)
1 1/2 teaspoons fresh thyme, chopped
2 tablespoons heavy cream

Steps:

  • Cut corn off the cobs, save two cobs.
  • When slicing scallions, be sure to keep the dark green part separated from the white and light green, you will use all the onion.
  • Cook bacon in a 3-4 quart saucepan over medium heat until browned and crisp, about 5 minutes.
  • With a slotted spoon, transfer the bacon to a paper towel lined plate.
  • Pour off and discard all but about 1 TBS of the bacon fat.
  • Return the pan to medium heat and add the butter.
  • When butter is melted, add the white and light green scallions and the jalapeño, salt, and a few grinds of the black pepper.
  • Cook stirring until the scallions are very soft, about 3 minutes.
  • Add the broth, corn, corn cobs, potatoes, and thyme and bring to a boil over medium-high heat.
  • Reduce the heat to medium-low and simmer until the potatoes are completely tender, about 15 minutes.
  • Discard the corn cobs.
  • Transfer 1 cup of the broth and vegetables to a blender and puree. Return the puree to the pot and stir in the cream and all but 1/3 cup of the scallions and blend the flavors.
  • Season to taste with salt and pepper and served sprinkled with bacon and reserved scallions.

Roasted fresh corn and potato chowder is hard to beat on a chilly day! For a twist, add just a few ounces of smoked salmon and have an incredible British Columbia-inspired smoked salmon corn chowder. Had this in a little cafe on a dock in Vancouver, BC while waiting for a sea plane to take me to the outer west coast of Vancouver Island for a late season salmon fishing trip. I spent several years playing around with it to recreate it. Don't know if I matched theirs exactly, but I have come up with this basic roasted corn chowder recipe that turns into a great smoked salmon chowder, too.

3 tablespoons butter, divided
3 cups fresh white corn kernels
1 teaspoon dried tarragon
1 pound bacon
1 large onion, chopped
3 cups chicken stock, or as needed
6 potatoes, diced
¼ cup chopped fresh flat-leaf parsley
4 cloves garlic, chopped
1 teaspoon dried celery flakes
½ teaspoon paprika
½ cup half-and-half
salt and ground black pepper to taste
¼ cup shredded Cheddar cheese, or as needed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Melt 1 tablespoon butter in an oven-proof skillet over medium heat; stir in corn and tarragon and cook, stirring occasionally, until corn begins to brown, about 5 minutes.
  • Place skillet with corn in the preheated oven; roast, stirring every 5 minutes, until lightly browned but not dry, about 20 minutes.
  • Place bacon in a Dutch oven over medium-high heat; cook, turning occasionally, until evenly browned, about 10 minutes. Remove bacon slices; drain on paper towels. Pour off all but 1 tablespoon bacon fat.
  • Heat reserved bacon fat in Dutch oven over medium heat; stir in onion. Cook and stir until onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue to cook and stir until the onion is very tender and dark brown, about 15 minutes.
  • Pour chicken stock over caramelized onions; stir, scraping the bottom of the pot to dissolve any browned bits, and bring to a boil. Stir corn, potatoes, parsley, garlic, celery, and paprika into onion mixture. Crumble bacon, reserving about 1/4 cup for garnish, and stir bacon into soup. Reduce heat to low; simmer until potatoes are tender, about 30 minutes.
  • Stir remaining 2 tablespoons butter and half-and-half into soup; season with salt and pepper. Sprinkle reserved bacon and Cheddar cheese over soup to serve.

1 teaspoon marjoram
3 cups milk, depends on how thick you want it to be

Steps:

  • Cook bacon in skillet till crisp-add onions until limp-drain on paper towels.
  • Put potatoes and celery in large stock pot and add enough water to just cover.
  • Boil until not quite tender.
  • Do not drain.
  • Add bacon, onions and rest of ingredients and simmer for 1/2 hour--eat & enjoy.

2 ½ pounds potatoes, peeled and cubed
1 pound sliced bacon
2 (10.75 ounce) cans condensed cream of potato soup
2 (10.75 ounce) cans condensed cream of mushroom soup
1 (10 ounce) can canned whole kernel corn
2 cups whole milk, or as needed
¼ teaspoon curry powder, optional
1 pinch salt and black pepper to taste

Steps:

  • Place potatoes in a large pot with enough water to cover. Bring to a boil, and cook until tender, about 10 minutes; drain.
  • Meanwhile, place bacon in a large deep skillet. Cook over medium-high heat until evenly browned. Drain, crumble, and set aside until potatoes are done.
  • Add the bacon, potato soup, mushroom soup, corn, milk, and curry powder to the potato pot, and simmer over medium heat at least 15 minutes, stirring often. Season to taste with salt and pepper, and serve.
