4 (6-ounces) pieces Pacific cod or hake fillet (about 1 inch thick)
2 1/2 tablespoons vegetable oil, divided
1/4 lb sliced shiitake mushroom caps
2 (1/2-ounce) single-serve packages dehydrated red miso soup
1 scallion, thinly sliced

Steps:

  • Preheat oven to 450°F with rack in middle.
  • Pat fish dry in a small shallow baking pan and drizzle with 1/2 tablespoon oil, then sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Toss mushrooms with remaining 2 tablespoons oil and 1/4 teaspoon each of salt and pepper, then spread in another small shallow baking pan.
  • Roast fish and mushrooms, stirring mushrooms once or twice, until fish is just cooked through and mushrooms are crisp, about 10 minutes.
  • Meanwhile, prepare soup according to package instructions.
  • Divide soup, mushrooms, and fish among 4 bowls and top with scallion.

2 tablespoons white miso paste
Half 2.11-ounce packet instant dashi
2 sheets kombu
1 1/2 pounds black cod fillets, boned
1 pound baby bok choy
8 ounces crimini mushrooms
8 ounces shiitake mushrooms
8 ounces beech mushrooms
8 ounces honshimeji mushrooms
Oil, for drizzling
Salt and freshly ground black pepper
2 bunches fresh cilantro
1 cup extra-virgin olive oil
1 cup sugar
1 cup vinegar
Salt
1 red onion, thinly sliced
Salmon roe, for garnish
Togarashi powder, for garnish
Scallions, thinly sliced, for garnish

Steps:

  • For the black cod: Combine the miso paste, dashi and kombu with 1 gallon of water in a stockpot and bring to a simmer. Cook, 5 minutes, then remove the kombu. Transfer some of the broth to a shallow pan and add the cod. Cook, keeping the heat at a very low simmer, covered, until cooked through, about 7 minutes.
  • For the vegetables: Preheat the oven to 375 degrees F. Fill a large bowl with ice water and set aside. Bring a large pot of heavily salted water to a boil, then add the bok choy and cook, 30 seconds. Transfer the bok choy to the ice bath. Set aside.
  • Slice the crimini and shiitake mushrooms. Remove the stems from the beech and honshimeji mushrooms. Drizzle some oil over the mushrooms and sprinkle them with salt and pepper. Roast until charred on the edges, about 20 minutes.
  • For the cilantro oil: Meanwhile, blend the cilantro with the oil in a blender on high for 3 minutes. Set aside.
  • For the pickled onions: Bring the sugar, vinegar, 1 cup water and 1 cup salt to a boil in a small saucepan. Place the onions in a medium bowl and pour the liquid over. Let steep 10 minutes.
  • For serving: Arrange 2 to 3 bok choy leaves on each of 4 plates. Top each with a piece of cod and add some broth. Add some mushrooms and drizzle with cilantro oil. Garnish with salmon roe, togarashi, scallions and pickled onions.

Shiitake Miso Broth with Noodles and Chicken image

Browned chicken thighs served in a flavorful shiitake miso broth over glass noodles.

1 cup dried shiitake mushrooms
3 cups boiling water
8 skin-on, bone-in chicken thighs (2 1/2 to 3 pounds)
Kosher salt and freshly ground black pepper
2 tablespoons canola oil
4 cloves garlic, minced
One 1-inch piece ginger, peeled and grated
1/2 yellow onion, cut into 1/2-inch dice
3 tablespoons white miso paste
2 cups low-sodium chicken broth
10 ounces glass noodles
2 heads baby bok choy, thinly sliced

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the mushrooms in a bowl and pour the boiling water over them. Let soak until tender, 20 to 25 minutes. Lift the mushrooms from the water, leaving any grit at the bottom of the bowl. Pat the mushrooms dry with a kitchen towel, discard the stems and thinly slice the caps. Strain the mushroom soaking liquid through a fine sieve and reserve it in a small bowl.
  • Sprinkle the chicken thighs liberally with salt and pepper. Heat the oil in a large high-sided skillet over medium-high heat until it shimmers. Sear the chicken thighs on both sides until golden brown, 5 to 6 minutes total. (You may need to do this in 2 batches to avoid crowding the skillet.) Transfer the browned chicken thighs to a rimmed baking sheet and bake in the oven until the internal temperature of the chicken reaches 160 degrees F, 12 to 15 minutes.
  • In the same pan that you seared the chicken thighs, saute the garlic, ginger, onions and sliced mushrooms over medium heat until the onions are soft, 6 to 8 minutes. Stir in the miso paste and cook for 2 minutes. Add the chicken broth and reserved mushroom liquid. Bring to a boil, then reduce the heat to a simmer and cook for 10 minutes.
  • Meanwhile, soak the noodles in a bowl of hot water until soft, 3 to 5 minutes. Drain.
  • To serve, put 1/2 cup glass noodles in each serving bowl. Top with the bok choy, chicken and miso broth.

1½ cups low-sodium vegetable broth
5 2-inch- long slices ginger
1 2-inch piece kombu
2-3 tbsp white miso (Tip: Remember that miso varies by brand. The darker the miso, the stronger the flavor and the saltier it is. If using a darker miso, use less of it.)
2 green onions, thinly sliced on a diagonal, dark green parts separated
½ cup enoki mushrooms, optional
1½ tsp mirin
½ tsp rice vinegar
4 4- to 6-oz 1-inch-thick cod fillets
2 tbsp avocado oil, divided
¾ tsp sea salt, divided
¼ tsp ground black pepper
4 oz shiitake mushrooms, stemmed and thinly sliced (about 2½ cups)
2 tsp mirin

Steps:

  • 1. Arrange racks in top and bottom thirds of oven; preheat to 450ºF. Place a large baking sheet in oven while it preheats. Line a 9 x 13-inch baking dish with parchment paper. 2. Make broth: In a medium saucepan on medium, heat broth, 1 cup water, ginger and kombu. Place miso in a medium heat-proof bowl. When mixture just begins to boil, reduce heat to medium-low. When mixture comes down to a simmer, transfer about ½ cup to bowl with miso and whisk to dissolve. Transfer miso mixture back into saucepan with broth; stir in white and light green parts of onions, enoki mushrooms (if using), mirin and vinegar. Reduce heat to low, cover and keep warm. 3. Prepare fish: Pat fish dry. Rub fish with 1 tbsp oil and sprinkle all over with ½ tsp salt and pepper. Place in prepared baking dish. In a medium bowl, toss shiitake mushrooms with remaining 1 tbsp oil and ¼ tsp salt. Carefully remove hot baking sheet from oven and spread shiitakes evenly on it. Place baking sheet and baking dish in the oven and roast fish and mushrooms for about 10 to 12 minutes, stirring mushrooms once, until fish is cooked through and mushrooms are golden. 4. Remove kombu and ginger from broth. Divide broth among 4 wide, shallow bowls. Place a piece of fish in each one; drizzle each with ½ tsp mirin. Scatter shiitakes and reserved dark green onion slices on top of fish.

1 tablespoon minced peeled fresh ginger
2 6-ounce skinless striped bass fillets
1/4 cup panko (Japanese breadcrumbs)
Chopped fresh cilantro

Steps:

  • Whisk 2 cups water and 2 tablespoons red miso in medium saucepan. Add shiitake mushrooms and simmer over medium heat until mushrooms are soft, about 5 minutes. Stir in dark and pale green onion tops. Cover to keep warm and set aside.
  • Meanwhile, mix 2 tablespoons red miso, minced white part of green onion, 2 tablespoons vegetable oil, and minced fresh ginger in small bowl. Sprinkle striped bass fillets with salt and pepper. Spread ginger mixture over 1 side of bass fillets, pressing to adhere. Sprinkle panko over coated side of fillets; press to adhere.
  • Heat 2 tablespoons vegetable oil in medium nonstick skillet over medium-high heat. Add fillets to skillet, coated side down, and sauté until brown and crisp, about 3 minutes. Turn fillets over and sauté until cooked through, about 3 minutes. Divide shiitake mushroom broth and shiitake mushrooms between 2 shallow bowls. Place 1 fish fillet in center of each bowl. Sprinkle chopped fresh cilantro over and serve.

450 g floury potatoes
1 garlic head
4 plum tomatoes
4 rosemary sprigs
3 tablespoons olive oil
600 g thick boneless cod fish fillets, skin on
4 tablespoons white wine
salt & freshly ground black pepper
basil leaves (to garnish)

Steps:

  • Preheat the oven to 220 degrees centigrade. Cook the potatoes in a large pan of boiling water for 10 minutes until almost tender and starting to crumble slightly around the edges.
  • Drain the potatoes well and transfer to a large roasting tin. Break the garlic bulb and nestle the cloves between the potatoes. Roughly chop the tomatoes and scatter over the top with the rosemary. Season generously, then drizzle over 2 Tbs of olive oil. Roast for 15 minutes.
  • Add the cod fillets to the pan, allowing them to rest on top of the potatoes and tomatoes. Drizzle the remaining oil over the top, season the fish and cook for 5 minutes. Splash in the wine and cook for a further 5 minutes until the fish is cooked.
  • Tear over the basil leaves and serve straight from the pan. Remember to remind your guests that they'll need to peel the cloves of garlic before they eat them.
