BASIC CAULIFLOWER FRITTERS



Basic Cauliflower Fritters image

Simple and very tasty, this kid-friendly Basic Cauliflower Fritters recipe is a must-have for everyone. You will not be able to stop at one!

5 cups chopped cauliflower florets
2 eggs
1/2 cup all purpose flour
1/2 tsp baking powder
salt and pepper to taste
vegetable oil for frying

Steps:

  • Place the cauliflower into the food processor and process until finely minced.
  • Transfer the cauliflower into a large mixing bowl and add the rest of the ingredients, excluding the vegetable oil. Mix everything well. (You should have a nice, paste-like mixture. If the mixture looks a little too soft and moist - add some more flour.)
  • Using an ice-cream scoop as a measure, form small, 1/3 inch-thick patties. You can make them smaller or larger depending on your personal preference.
  • Fry the patties on medium heat, in a small amount of vegetable oil for about 2 minutes per side.
  • Serve the fritters with sour cream or your favorite sauce.

Cauliflower Corn Fritters image

This is a "mashup" so to speak, of a few recipes. My husband hates cauliflower, but I love it. I made these to go with salmon one evening. He ate them without knowing they had cauliflower in them, even had seconds and said he'd have them again if I made them. Once he found out they were "tainted" he even grudgingly agreed he'd try them again.

1 small head cauliflower
1 medium potato, chopped and peeled
1 garlic clove, minced
1/2 shallot, chopped
1/4 cup leek, chopped (or sub green onion)
2 eggs, large
3 tablespoons masa harina flour
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup cheddar cheese, shredded
1/4 cup goat cheese, shredded
2 tablespoons canola oil

Steps:

  • Clean and separate cauliflower into florets and steam in microwave until cooked. Set aside to cool.
  • Make sure the potato is chopped small (almost like you'd do hash browns, in fact you can sub out about 1/2-2/3 cup hash browns for the potato) and cook down. I like to cook it down with the leeks/onion, garlic, and shallots.
  • Add to cauliflower and toss. Let cool a bit.
  • Lightly beat eggs and add to cooled cauliflower and potatoes. Add the rest of the ingredients EXCEPT OIL and mix together by hand, breaking down any larger pieces of potatoes or cauliflower.
  • Form into patties.
  • Heat the oil in a pan set on med high heat and then add the fritters to the oil. Turn after about 4 minutes, drain on paper towels. So good!

6 cups cauliflower florets
½ cup all-purpose flour
3 extra large eggs
1 teaspoon baking powder
1 (.7 ounce) package dry Italian-style salad dressing mix
½ cup olive oil for frying, or as needed

Steps:

  • Process cauliflower in a food processor finely minced; transfer to a large bowl.
  • Stir flour, eggs, baking powder, and Italian dressing mix into cauliflower.
  • Heat enough olive oil to cover the bottom of a frying pan over medium heat.
  • Drop heaping tablespoons of cauliflower mixture into the hot oil; fry until golden brown, about 3 minutes per side.

Kosher salt and freshly ground black pepper
1 large head cauliflower, cut into florets
1/2 cup whole-wheat or all-purpose flour
2 large eggs, lightly beaten
3 cloves garlic, minced
3 tablespoons minced scallions, plus more for garnish
Olive oil, for frying
Plain yogurt or sour cream, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the cauliflower and cook until just fork tender, 3 to 5 minutes. Drain thoroughly and transfer the cauliflower to a cutting board. Chop into very small pieces (about the size of peas or smaller) with a sharp knife.
  • Measure 4 cups of the chopped cauliflower and place in a large bowl. (Reserve the rest for another use, such as cauliflower tots or mashed cauliflower.) Add the flour, eggs, garlic, 3 tablespoons scallions, 1/2 teaspoon salt and 1/4 teaspoon pepper; stir until well combined.
  • Line a plate with paper towels. Heat a large nonstick skillet over medium-low heat and lightly coat it with olive oil. Working in batches, scoop 2- to 3-tablespoon mounds of the cauliflower mixture into the pan, spacing them at least 1 inch apart. Flatten each mound slightly with a spatula and cook for 2 to 3 minutes. Flip the fritters once and cook until golden brown and cooked through, 1 to 2 minutes. Transfer the fritters to the prepared plate. Serve warm, topped with yogurt or sour cream. Garnish with scallions.

1 (2 lb) fresh cauliflower (broken into about 1-1/2-inch pieces)
3 large eggs, lightly beaten
1 tablespoon fresh minced garlic (or to taste)
2 -3 tablespoons minced onions, minced (optional)
1 teaspoon lousianna hot sauce (or Tabasco to taste)
1 tablespoon flour (might need a tablespoon more to hold together)
1 teaspoon baking powder
1/2 teaspoon paprika (or to taste)
1 -2 teaspoon seasoning salt (or to taste)
1/2 teaspoon black pepper (or to taste)
1 -2 tablespoon fresh parsley, finely chopped
oil (for frying)

Steps:

  • Cook the cauliflower for about 6-8 minutes or until soft enough to mash; drain very well.
  • Place the cauliflower in a large bowl and mash with a fork.
  • Add in the eggs and all the remaining ingredients; mix to combine (adjust all seasonings and hot sauce to taste, if you find that the mixture is too wet then add in a little more flour).
  • Heat a small amount of oil in a large skillet over medium-high heat.
  • Working in batches drop about a heaping tablespoonful of batter into hot oil; brown one side then turn and brown the other side (about 3 minutes per side).
  • Remove to a paper towel.
  • Repeat with remaining batter, adding in a little more oil if needed.
  • Serve with sour cream.

½ small head cauliflower, broken into florets
3 slices cooked bacon, chopped
3 green onions, chopped
salt and ground black pepper to taste
1 cup all-purpose flour
1 cup milk
1 egg, beaten
1 tablespoon grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the cauliflower and cook until tender, 5 to 10 minutes; drain and break cauliflower into small pieces. Combine cauliflower, bacon, and green onions together in a bowl. Season with salt and pepper.
  • Sift flour into a bowl. Whisk milk, egg, Parmesan cheese, and a pinch of salt into the flour until smooth. Add milk mixture to cauliflower mixture and stir until batter is evenly combined.
  • Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until golden brown on one side, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes more. Repeat with remaining batter.
