1 cup panko (Japanese breadcrumbs)
3 1/2 oz. finely grated Parmesan (about 1 cup)
2 1/2 oz. coarsely grated sharp cheddar cheese (about 1 cup)
2 Tbsp. plus 1 cup (2 sticks) unsalted butter, melted
4 large heads of cauliflower, cored, outer leaves removed
4 garlic cloves, finely grated
3 Tbsp. thyme leaves (from about 1 bunch)
20 large shallots, peeled, halved, quartered if very large, divided
8 tsp. kosher salt, divided
2 tsp. freshly ground pepper, divided
1/2 cup chopped parsley
Lemon wedges (for serving)

Steps:

  • Arrange racks in upper and lower thirds of oven; preheat to 450°F. Toss panko, Parmesan, cheddar, and 2 Tbsp. butter in a medium bowl until combined. Sprinkle evenly onto a parchment-lined rimmed baking sheet. Bake on lower rack until cheese is melted and bubbling and panko is deep golden brown, 6-8 minutes. Let cool. Crumble into small pieces; set aside until ready to use.
  • Meanwhile, cut cauliflower into 1/2"-thick steaks (it's okay if the outside ends break apart).
  • Whisk garlic, thyme, and remaining 1 cup butter in a medium measuring cup.
  • Toss half of cauliflower, half of shallots, 1/2 cup butter mixture, 4 tsp. salt, and 1 tsp. pepper on a rimmed baking sheet until coated. Repeat with remaining cauliflower, shallots, 1/2 cup butter mixture, 4 tsp. salt, and 1 tsp. pepper on another rimmed baking sheet. Roast, tossing veggies and rotating sheets from top to bottom halfway through, until tender and browned, 45-55 minutes.
  • Let cool slightly. Transfer to a platter. Top with reserved crumble and parsley. Serve with lemon wedges for squeezing over.
  • Do Ahead: Uncrumbled panko mixture can be baked 1 day ahead. Wrap baking sheet with plastic and store at room temperature.

1 clove garlic, halved
1/4 cup olive oil
4 tablespoons Dijon mustard

Steps:

  • Position an oven rack in the bottom of the oven and preheat to 450 degrees F. Line a baking sheet with foil.
  • Remove the leaves from the cauliflower, then trim the stem flush with the bottom of the head so the cauliflower sits flat on the prepared baking sheet. Rub the outside of each head with the cut garlic.
  • Whisk together the oil, 3 tablespoons mustard, 1/2 teaspoon salt and a few grinds of black pepper in a small bowl.
  • Put the cauliflower on the prepared baking sheet and brush the entire outside and inside with the mustard-oil mixture. Roast the cauliflower until nicely charred and tender (a long skewer inserted in the center of the cauliflower should pass through easily), 50 minutes to 1 hour. Let rest for a few minutes.
  • Meanwhile, combine the parsley and Parmesan in a small bowl. Brush the outside of the roasted cauliflower heads all over with the remaining 1 tablespoon mustard and generously sprinkle with the Parmesan mixture.

1 large cauliflower, cut into large florets
2 tbsp olive oil
pinch of cayenne pepper
40g parmesan, finely grated
50g butter
40g plain flour
600ml whole milk
1 tsp mustard powder or English mustard
1 tsp yeast extract (optional)
150g extra mature cheddar, most grated, some cubed
grating of nutmeg
3 tbsp dried breadcrumbs (panko work well)
2 tbsp crispy onions

Steps:

  • Heat the oven to 210C/190C fan/gas 7. Tip the cauliflower into a shallow baking dish and toss with the oil, cayenne and a pinch of salt. Scatter with half the parmesan and roast for 20 mins until crisp and golden. Toss the florets, then sprinkle with more (but not all) of the parmesan and roast for 10 mins more until starting to char a little. Set aside.
  • While the cauliflower is roasting, make the sauce. Heat the butter in a saucepan over a medium heat until frothy. Scatter over and stir in the flour, cooking for 3 mins until you have a sandy paste, then add the milk, a splash at a time, keeping it at a simmer and whisking between each addition until smooth. Once all the milk has been added, continue to cook the sauce gently, stirring occasionally for 15 mins until thickened and silky, then stir through the mustard powder and yeast extract, if using. 2 lbs broccoli, cut or broken into bite-sized florets
2 lbs cauliflower, cut or broken into bite-sized florets
4 Tbsps avocado oil or olive oil
juice from 1 fresh lemon
1 tsp garlic powder
1 tsp onion powder
sea salt, to taste, about 1/2 teaspoon
freshly ground black pepper, to taste
1/2 cup freshly grated Parmesan cheese
2 Tbsps curly parsley, minced

Steps:

  • Preheat your oven to 425 degrees f. and line 2 large baking sheets with parchment paper.
  • Place your prepared broccoli and cauliflower florets into a large bowl.
  • Drizzle with the oil, lemon juice and sprinkle with the seasonings. Toss very well to get all pieces evenly coated.
  • Arrange the florets into a single layer onto your prepared baking sheets.
  • Roast for 18-20 minutes, flipping halfway, until tender-crisp and lightly browned.
  • As soon as your broccoli and cauliflower is done to your liking, remove from the oven and sprinkle with the grated parmesan cheese.
  • Sprinkle with chopped parsley and enjoy!
