Delicious and tender roasted brussels sprouts made with bacon, garlic, olive oil, salt, pepper, and grated Parmesan cheese.

1 pound of brussels sprouts, halved
3-4 strips thick-cut bacon, chopped (no need to precook)
2-3 tablespoons olive oil
2-3 cloves garlic, minced
1/4 cup grated Parmesan cheese
Salt and pepper to taste

Steps:

  • Preheat oven to 400° F.
  • Rinse and dry brussels sprouts. Trim the stems and remove any yellow leaves, cut lengthwise into halves or quarters depending on the size.
  • Place brussels sprouts in mixing bowl. Toss with olive oil, garlic, salt, pepper, and bacon until coated and well mixed.
  • Place brussels sprouts on a greased baking sheet and bake for 20-25 minutes or until golden and tender.
  • Just before serving, sprinkle brussels with Parmesan cheese and toss.

3/4 cup (180ml) Parmesan Cheese (, grated)

Steps:

  • Preheat oven to Bake or Roast at 400°F.
  • Wash and rinse the Brussels sprouts. Peel the loose, outer leaves. Trim the end, then cut Brussels sprouts in half.
  • In an oven-safe dish, cast iron pan, or sheet pan, toss together the Brussels sprouts, olive oil, garlic, and balsamic vinegar. Spread the Brussels sprouts into an even layer. Season with salt and pepper, to taste
  • Bake for 20 minutes, then gently toss and mix the Brussels sprouts.Contine to bake Brussels sprouts for another 20 minutes, or until the Brussels sprouts are tender.
  • Sprinkle parmesan cheese evenly over top of Brussels sprouts and bake for another 3 minutes or until cheese is melted.Serve warm.

Nonstick cooking spray, for the skillet

Steps:

  • Put a 10-inch cast-iron skillet in the oven and preheat the oven to 425 degrees F.
  • Toss the Brussels sprouts with the olive oil in a medium bowl. Season lightly with salt and pepper. Add the Parmesan and toss together.

  • Adjust oven rack to upper-middle position and heat oven to 500 degrees. Toss Brussels sprouts, 3 tbsp oil, water, ¾ tsp salt, and ¼ tsp pepper in a large bowl until sprouts are coated.
