Steps:

  • Preheat oven to 450 degrees. Trim 1 inch from stems of broccoli. Using a vegetable peeler, peel outer layer of stems; cut diagonally into 1/2-inch slices. Separate florets into bite-size pieces.
  • In a large bowl, toss florets and stems with olive oil, salt, and pepper.
  • Spread in a single layer on a rimmed baking sheet; roast, turning broccoli halfway through, until tender, about 15 minutes.

1 tablespoon fresh rosemary, chopped
1/4 teaspoon garlic powder
1 pinch red pepper flakes
1 tablespoon avocado oil (or any cooking oil)
salt, to taste
pepper, to taste
1 sheet puff pastry, thawed
3 ounces smoked gouda cheese, grated
1/3 cup mozzarella cheese, shredded

Steps:

  • Preheat oven to 400 degrees.
  • In a large bowl, combine the broccoli, rosemary, garlic powder, pepper flakes and avocado oil. Season with salt and pepper, to taste.
  • Unfold the puff pastry and set it down flat on top of a lightly greased baking sheet. Evenly spoon the broccoli mixture on top of the puff pastry, leaving 1/2 inch of the edges untouched. Sprinkle the Gouda and mozzarella cheese evenly over all.
  • Bake in a preheated oven for 18 to 23 minutes, or until the pastry is golden brown. Cut into squares with a pizza cutter.

1 sheet frozen puff pastry, from one 17-ounce package, thawed
2 small leeks (white and light green parts only), well rinsed, dried and thinly sliced (about 2 1/2 cups)
1/2 cup coarsely grated smoked Gouda cheese
1/4 cup freshly and finely grated Parmesan (use a microplane grater or the smallest holes on a box grater)
Kosher salt and freshly ground black pepper
2 tablespoons finely chopped chives

Steps:

  • 1. Preheat the oven to 400 degrees F. On a lightly floured surface, roll the puff pastry to a 13-inch-by-10-inch rectangle and transfer to a parchment-lined baking sheet. Prick the pastry all over with a fork and scatter with the leeks and both cheeses. Sprinkle with a pinch of kosher salt and 1/4 teaspoon pepper.
  • 2. Bake until the pastry is a deep golden brown and the leeks are tender, 25 to 30 minutes. Cool for 10 minutes. Garnish with the chopped chives, cut into 16 or 24 pieces and serve.

1 tablespoon olive oil
1 cup chopped onion
1 cup chopped yellow bell pepper
3 garlic cloves, minced
14 1/2 ounces diced tomatoes, see note
10 ounces Italian-style diced tomatoes
4 cups Baby Spinach
1 1/4 cups cheddar cheese or 1 1/4 cups vegan cheddar cheese, divided

Steps:

  • Note: Tomato should contain basil, garlic, and oregano. Look for the canned version.
  • Preheat oven to 375°.
  • Cook pasta according to package directions but OMIT salt and fat. Drain well.
  • Heat the oil in a large heavy pan over medium high heat. Add onion and pepper then sauté 5 minutes. Add garlic to pan then sauté 2 minutes or until onion is tender.
  • Stir in tomatoes and bring to a boil. Reduce heat, and simmer 5 minutes, stirring occasionally.
  • Add spinach to pan then cook, stirring frequently, for 30 seconds or until it wilts. Remove from heat.
  • Add cooked pasta and 3/4 cup cheese to tomato mixture, tossing well to combine.
  • Spoon pasta mixture into an 11 x 7 baking dish lightly coated with cooking spray.
  • Sprinkle evenly with remaining 1/2 cup cheese.
  • Bake at 375° for 15 minutes or until cheese melts and begins to brown.
  • A note: Vegan subs may not act like normal cheese instead watch the time.
  • For Vegan use the soy cheese.

Like the store bought stuff? Well, this homemade smoked gouda will knock your socks off! The secret to smoking your own cheese is to use low heat, and an ice bath so that the cheese doesn't melt. You can also use pepper jack cheese if you want it a bit more spicy. This cheese, with sautéed onions, makes an awesome quesadilla. It is useful for any recipe calling for gouda or cheddar too.

1 lb gouda cheese or 1 lb monterey jack pepper cheese
1 wood chips, apple, for smoking
ice cube, 2 trays

Steps:

  • Start 5 briquettes of charcoal on one side of a large barbecue and wait until they are white hot.
  • Meanwhile, soak one handful apple wood chips in water.
  • Fill an aluminum roasting pan with ice, and put on the other side of the grill.
  • Put a piece of tinfoil over the ice, and lay the cheese on top of that so the cheese is slightly below the level of ice, making a boat with the tinfoil so that water cannot come inside.
  • Drain the water from the wood chips.
  • Add half of the wood chips, and put the lid on. Smoke for ten minutes, and then flip the cheese over and smoke for another ten minutes, adding more wood chips if necessary. Remove, and refrigerate immediately.
  • Notes:.
  • Though I have found apple wood to be the best for cheese, you can use other wood, but it should be a light smoking wood such as pecan, or maybe maple. Mesquite, and Hickory are definitely not recommended as the smoke is too intense for cheese.

1 cup wild rice, uncooked
2 tablespoons extra virgin olive oil
1 lb Brussels sprout, trimmed of outer leaves and base, thinly shaved crosswise
1 cup smoked gouda cheese, shredded
1 cup craisins, chopped into smaller bits
1/2 cup almonds, slivered
salt and pepper, to taste

Steps:

  • Prepare rice according to package directions.
  • In large saute pan, heat olive oil on medium. Add brussels sprouts, season with salt and pepper to taste, and saute until tender and lightly browned, 8-10 minutes.
  • In a bowl, stir cooked rice, sprouts, and all other remaining ingredients. Mix until cheese is melted and everything is nicely mixed. If too thick, add a little water to thin it out. Season with more salt and pepper, if needed.
  • Serve warm/right away, 3/4 cup per person.

Steps:

  • Preheat an outdoor grill for medium heat.
  • In a small bowl, combine the cheese, bacon, parsley, garlic and 1/8 teaspoon black pepper.
  • Lay the chop flat on cutting board and with a sharp knife held parallel to the board, cut a pocket into the pork, going all the way to the bone, but leaving the sides intact. Stuff cheese mixture into pocket, and close with a wooden toothpick. Brush meat with oil, and season with salt and more black pepper.
  • Lightly oil the grill grate. Grill over medium heat for on each side or until pork is done, approximately 10-20 minutes per side. Cook time varies depending on the intensity of the heat and thickness of chops, just be careful not to overcook.
