Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, garlic and rosemary; toss until the potatoes are well coated. Dump the potatoes on a baking sheet and spread out into 1 layer; roast in the oven for at least 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure even browning.
  • Remove the potatoes from the oven, season to taste, and serve.

1.5 kilograms baby red potatoes (washed and cut in half, skins on (about 3 pounds))
2 tablespoons butter (melted, or vegan butter)
2 tablespoons olive oil
4 cloves garlic (finely minced)
2 tablespoons freshly chopped dill
1 tablespoon freshly chopped rosemary
salt and pepper

Steps:

  • Preheat your oven to 375 degrees Fahrenheit.
  • Add the halved baby potatoes to a large casserole dish (I like using a white ceramic dish that's pretty for serving and can go straight from the oven to the table).
  • Melt the butter in a dish in the microwave and pour it over the potatoes in the casserole dish, along with the olive oil.
  • Mince the garlic and add it as well, along with the chopped dill and rosemary, and the salt and pepper.
  • Toss everything together well with your hands or a spoon, to be sure the potatoes are completely coated and the herbs are distributed throughout.
  • Roast at 375 degrees, uncovered, for about 30 minutes or until the skins of the potatoes are crispy and the potatoes are soft inside when pierced with a fork.
  • Serve immediately with your favourite holiday or family meal.

1½ cups/ 342 gms Potatoes (cut into half)
2 tbsp Olive oil
2 sprigs (use only leaves) Rosemary (chopped)
½ tbsp / 2 cloves Garlic (finely chopped)
as required Salt
1 tsp Chilli flakes (adjust to suit your spice levels.)

Steps:

  • Before you get started, scroll up a little and watch a quick recipe video.
  • Check the notes and tips of the recipe for extra info and help.
  • Wash, peel and cut potatoes into half. Soak in water for at least 15-20 minutes to remove starch.
  • In a pot, add boiling hot water from a kettle. Add salt, soaked potatoes and simmer for 10 minutes or until they are almost cooked.
  • Drain potatoes in a colander, shake lightly to remove excess water. Leave them for a couple of minutes to dry out.
  • Preheat oven at 200 C. Meantime in a deep bottomed bowl, combine oil, rosemary, salt, chilli flakes and mix well. Put boiled potatoes and gently stir/toss to coat.
  • Spread potatoes in a piping hot baking tray in a single layer with enough space between them. Do not overcrowd them.
  • Place the tray in preheated oven and roast for 20-minutes.
  • In a second bowl combine oil and garlic. Take the tray out, drizzle garlic-infused oil all over. Flip potatoes for even browning. keep the tray back in the oven and roast for further 20 minutes or until potatoes turns golden colour and crispy.

  • Pre-heat the oven to gas mark 7, 425°F (220°C).
  • Begin by measuring the oil into the roasting tin, then pop it into the oven to heat through. Wash the potatoes but don't scrape the skins off, then cut them into cubes of roughly ½ inch (1 cm). Place them in a clean tea cloth and dry them as thoroughly as you can, then transfer them to a large plate. Remove the tin from the oven, place it over direct heat the oil needs to be very hot then carefully slide the potatoes straight into the hot oil. Turn them around to get a good coating of oil, sprinkling in the garlic and rosemary as you go. Return the tin to the oven and roast for 30-40 minutes or until the potatoes are golden brown and crisp. Season with salt and pepper before serving.
