Almond Pesto image

This easy Almond Pesto is a nice way to change it up from traditional pesto. It uses just 5 ingredients, is ready in 5 minutes and pairs perfectly with pasta, meatballs or vegetables!

1/2 cup raw almonds
2 garlic cloves
1 cup spinach
1 1/2 cup fresh basil
1/4 cup olive oil
1/4 tsp salt
water as needed

Steps:

  • Add almonds, garlic, spinach, basil, and salt to your food processor and pulse for 10 seconds.
  • With the motor still running, pour the olive oil in through the top. If mixture gets stuck add 1-2 tbsp of water.
  • Store pesto in a jar in the refrigerator for 5-7 days, or place it in a freezer-safe bag and freeze for up to 2 months.

1/3 cup olive oil (may need an extra tbsp or two to get it to your preferred consistency)

  • In a food processor, pulse the Basil, Pinenuts & Garlic.
  • Add Olive Oil in a stream til mixed.
  • Add Cheese, salt & pepper then pulse till mixed.

Save some money using garden-grown basil and almonds in place of pricey pine nuts. This recipe is easy, fast, and very tasty. Summer on a plate! Serve over warm pasta with a side salad and a nice loaf of bread. I also spread this on toast. If you have left over, put in a small jar and drizzle some olive oil over the top. Keep refrigerated.

Mediterranean-inspired flavors of basil and Parmesan cheese add savory zest to these easy seasoned almonds.

2 egg whites
¼ cup packed whole basil leaves
2 cups whole natural almonds
¼ cup freshly grated Parmesan cheese
1 teaspoon salt
½ teaspoon garlic powder

Steps:

  • Preheat the oven to 225 degrees F. Line a large baking sheet with parchment paper and set aside. Combine the egg whites and basil in a blender; process on low speed until mixture is pureed. Toss egg white mixture with the almonds. Drain in a colander. Stir together cheese, salt and garlic powder in a medium bowl. Add drained almonds and toss to coat.
  • Place almonds in a single layer on prepared baking sheet. Bake for 1 hour, stirring every 15 minutes. Cool completely and store in an airtight container.

I usually come away with a few recipes! :) From the February/March issue of the New Zealand magazine 'dish', and recommended as being excellent with grilled vegetables, salmon, fish and chicken and as mixing well with bitter leaves such as witlof and raddichio.

2 garlic cloves, minced
1/2 cup parmesan cheese, freshly grated
3 tablespoons lemon juice

fresh ground black pepper, to taste

Steps:

  • Place the almonds, garlic, Parmesan cheese and lemon juice in a food processor and pulse to roughly chop.
  • Combine the apple juice and olive oil and, with the motor running, drizzle it in to make a thick, chunky sauce; season with salt and pepper, to taste.
