ROASTED ACORN SQUASH RISOTTO

Roasted Acorn Squash Risotto image

I wanted to find a recipe that reminded me of a dish I ate a local restaurant once; before I became vegan. Luckily, this version is.

Provided by hipbonez

Categories     One Dish Meal

Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 12

1 acorn squash, halved and seeded
2 tablespoons extra virgin olive oil
1/2 sweet onion, diced
3 garlic cloves, minced
1/2 teaspoon curry powder, to taste
nutmeg, to taste
1 1/2 cups arborio rice, uncooked (italian style)
1/2 cup dry sherry (optional)
3 cups vegetable broth
1/2 cup water, heated
1/2 cup pecans, chopped (for garnish)
parsley (for garnish)

Steps:

  • Preheat your oven to 400 degrees.
  • Place the acorn squash, cut side down on a well oiled baking sheet.
  • Bake for about 30 minutes, or until 'fork' tender.
  • Remove from the oven, and let cool for a few minutes.
  • Scoop out the roasted squash from the skins and set aside.
  • In a heavy saucepan, heat the olive oil on medium heat, and sauté the onion and garlic for 3 minutes.
  • Add the curry, spices, and uncooked Arborio rice and stir well, until the rice is coated.
  • Stir and cook for about 5 minutes.
  • Combine the water and vegetable broth.
  • Add the sherry, and 1 cup of the broth, and bring to a boil.
  • Reduce heat and simmer uncovered, stirring frequently for 7-8 minutes.
  • When most of the liquid is absorbed, add the remaining cups of broth 1 cup at a time, stirring and simmering until each cup of liquid is absorbed before adding the next one. (The whole process should take about 20-25 minutes.).
  • When the final cup of liquid is mostly absorbed, add in the roasted squash and mix well.
  • Continue stirring with a wooden spoon until the rice is creamy, yet still retains some bite.
  • Add freshly ground pepper, cover and set aside for a few moments before serving.
  • Garnish with pecans and parsley.

PERFECT ROASTED ACORN SQUASH

Perfect Roasted Acorn Squash image

Learn how to roast acorn squash with this simple recipe! When prepared properly, acorn squash can be so delicious. Recipe yields 4 side servings.

Provided by Cookie and Kate

Categories     Side dish

Time 40m

Number Of Ingredients 3

2 medium acorn squash
1 tablespoon extra-virgin olive oil, divided
1/4 teaspoon fine salt

Steps:

  • Preheat the oven to 400 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy clean-up.
  • To prepare the squash, use a sharp chef's knife to slice through it from the tip to the stem. I find it easiest to pierce the squash in the center along a depression line, then cut through the tip, and finish by slicing through the top portion just next to the stem. Use a large spoon to scoop out the seeds and stringy bits inside, and discard those pieces.
  • Place the squash halves cut side up on the parchment-lined pan. Drizzle the olive oil over the squash, and sprinkle with the salt. Rub the oil into the cut sides of the squash, then turn them over so the cut sides are against the pan.
  • Bake until the squash flesh is very easily pierced through by a fork, about 30 to 45 minutes depending on the size of your squash. Add any desired toppings, and serve warm.

  • Roasted Acorn and Delicata Squash Salad. This salad pairs plenty of cooked elements (acorn squash and wheat berries) with raw elements (pearl onions and arugula) for contrast.
  • Beef and Squash Chili. Purists may want to look away. This chili doesn't follow any standard dogma. But chopped acorn squash adds richness and acts like a sponge for all of that deep, meaty flavor.
  • Stuffed Acorn Squash with Kale and Wild Rice. Between the kale, the rice, and the baked acorn squash, this dish is chock-full of fiber, antioxidants, and minerals.
  • Maple-Roasted Acorn Squash. This easy acorn squash roasted with maple syrup and melted butter in the hollow of the squash is an Ina Garten favorite. We're guessing you'll love it, too.
  • Warm Winter Vegetable Salad With Halloumi. One bowl and one baking sheet is all you need to achieve the perfect combination of sweet, creamy squash, crispy pita chips, and chewy, charred cheese.
  • Squash Gratin. This dish will be great with just acorn squash, but a mix of several types of winter squash gives you flavor and texture variation that can't be beat.
