4 (4 ounce) cans chopped mild green chilies
1 (4 ounce) can chopped hot green chilies
1 ½ cups water
12 (8 inch) flour tortillas

Steps:

  • Season beef roast with salt and black pepper; place in slow cooker. Spoon the mild and hot chiles over the roast. Pour in the water.
  • Cover slow cooker; set to High. Cook until roast shreds with a fork; 4 to 6 hours. Shred meat; serve on tortillas.

3 large heads garlic
3 large dried ancho chilies, rinsed, stemmed, seeded, torn into pieces
1/2 cup corn oil
1 1/2 teaspoons ground cumin
1/2 teaspoon honey
Turkey
1 17-to 18-pound turkey, neck and giblets reserved
2 tablespoons corn oil
1 1/2 pounds turkey neck or wings, cut into 1-inch pieces
1 large onion, chopped
3 celery stalks, chopped
1 large tomato, chopped
1 teaspoon whole allspice berries
5 cups canned low-salt chicken broth
Gravy
2 cups (about) canned low-salt chicken broth
6 tablespoons all purpose flour
Cayenne pepper

Steps:

  • For paste:
  • Preheat oven to 350°F. Separate heads of garlic into individual cloves (do not peel). Pierce each clove once with toothpick. Scatter garlic on baking sheet; roast until tender and beginning to brown, about 25 minutes. Cool 5 minutes. Peel garlic, cutting hard tip off each clove. Pack enough garlic into 1/2-cup measuring cup to fill (about 40 cloves); reserve any remaining garlic. Blend 1/2 cup garlic in processor to form course puree.
  • Meanwhile, place chilies in small saucepan. Add enough water just to cover. Simmer over medium-low heat until chilies are soft and most of water evaporates, about 15 minutes. Add chili mixture, oil, cumin, and honey to garlic in processor. Puree until smooth. Season with salt and pepper. (Can be made 1 week ahead. Cover paste and garlic; chill.)
  • For turkey:
  • Pat turkey dry. Season with salt and pepper. Slide hand under skin of turkey breast to loosen skin. Spread 1/2 cup garlic-paste over breast under skin. If stuffing turkey, spoon stuffing into main cavity. Rub 2 tablespoons paste all over outside of turkey. Reserve remaining paste for gravy. Tie legs together loosely to hold shape of turkey. Place on rack set in roasting pan. (Can be done 1 day ahead if turkey is not stuffed. Chill turkey and paste separately.)
  • Position rack in lowest third of oven and preheat to 325°F. Heat 2 tablespoons oil in heavy large skillet over high heat. Add neck and giblets, turkey neck pieces and onion; sauté brown, about 15 minutes. Place contents of skillet around turkey in pan. Add celery, tomato, allspice and any reserved garlic to pan; pour in 2 cups broth. Roast turkey 1 hour 30 minutes. Tent turkey and entire pan loosely with heavy-duty foil. Continue to roast turkey until meat thermometer inserted into thickest part of thigh registers 180°F. or until juices run clear when thickest part of thigh is pierced with skewer, basting often with pan juices and 3 cups broth, about 1 hour 40 minutes longer for unstuffed turkey (about 2 hours 25 minutes longer for stuffed turkey). Place turkey on platter. Tent with foil; let stand at least 30 minutes. Reserve mixture in pan for gravy.
  • For gravy:
  • Using tongs, remove turkey parts from pan; discard. Pour mixture in pan into sieve set over large bowl. Press on solids in sieve to release liquid. Spoon fat from pan juices; add enough broth to juices to measure 6 cups.
  • Stir 1/2 cup reserved garlic-chili paste in heavy saucepan over medium-high heat until liquefied. Add flour and stir 1 minute (mixture will be very thick). Gradually add 6 cups broth mixture, whisking until smooth. Simmer until reduced to 4 1/2 cups, about 20 minutes. Season with cayenne, salt and pepper.
  • Serve turkey with gravy.

1/4 cup chopped fresh flat-leaf parsley
Kosher salt and freshly ground black pepper
1 fresh turkey (16 pounds), rinsed well and patted dry
6 whole heads garlic, halved
8 tablespoons (1 stick) unsalted butter, softened
3 tablespoons finely chopped fresh rosemary
Kosher salt and freshly ground black pepper
4 whole lemons, halved
6 shallots, peeled and halved
2 large carrots, coarsely chopped
2 large stalks celery, coarsely chopped
6 cups homemade chicken stock
1/4 cup reserved fat from the roasting liquid (from turkey, see recipe)
1 1/2 pounds cremini mushrooms, thinly sliced
3 tablespoons all-purpose flour
1/2 cup dry red wine
1/2 cup dry white wine
Reserved roasting liquid
3 cups homemade chicken stock
4 whole sprigs fresh rosemary
1/4 cup chopped fresh flat-leaf parsley
Kosher salt and freshly ground black pepper

Steps:

  • For the turkey: Preheat the oven to 425 degrees F. Remove the turkey from the refrigerator 30 minutes before roasting.
  • Rub the cut side of 2 halves of garlic over the entire turkey, and then put in the cavity. Brush the entire turkey with 4 tablespoons of the butter and sprinkle with the rosemary, salt and pepper (including in the cavity). Put 2 lemon halves into the cavity.
  • Put the shallots, carrots, celery and remaining garlic and lemon halves in the bottom of a roasting pan. Place a roasting rack in the pan and place the turkey on the rack. Add 2 cups of the stock to the bottom of the pan and place in the oven. Put the remaining 4 tablespoons butter and 4 cups stock in a medium saucepan and bring to a simmer over low heat. Keep covered and warm.
  • Roast the turkey for 30 minutes. Reduce the heat to 375 degrees F and continue roasting, basting with the warm stock every 20 minutes, until an instant-read thermometer inserted into the breast registers 155 degrees F and into the thigh registers 160 degrees F, about 2 1/2 hours. Remove the turkey to a cutting board, loosely tent with foil and let rest at least 20 minutes before carving.
  • Strain the juices into a bowl through a strainer. Let the fat rise to the top of the stock and remove 1/4 cup of the fat. Reserve the fat to make the gravy. Reserve the strained juices for the gravy.
  • For the gravy: Heat the reserved fat in the roasting pan (used to roast the turkey) over high heat over 2 burners. Add the mushrooms and cook until golden brown and the liquid has evaporated, about 8 minutes. Stir in the flour and cook until pale golden brown. Whisk in the red and white wine and cook until evaporated. Add the reserved roasting liquid and chicken stock and bring to a boil. Add the rosemary sprigs and cook until the gravy thickens, stirring constantly, about 5 minutes. Stir in the parsley and season with salt and pepper.
  • Carve the turkey and serve with the cremini mushroom gravy.

2 medium onions
1 head garlic
Several sprigs of fresh herbs, such as thyme, parsley, rosemary, or sage
2 bay leaves
2 to 4 medium carrots
2 to 4 celery stalks
8 tablespoons unsalted butter
8 cups chicken broth (about 4 small cans or 2 quart boxes)
1/2 cup all-purpose flour
Dash Worcestershire sauce
Apple Cranberry Dressing, recipe follows
6 tablespoons unsalted butter, plus more for the pan
1 pound sliced country white sandwich bread
1 large cooking apple, such as Gravenstein, or Golden Delicious
1 medium onion
2 ribs celery with leaves
1/2 cup dried apricots
Handful fresh flat-leaf parsley leaves
1/4 cup dried cranberries
2 to 3 sprigs fresh thyme
1/2 teaspoon kosher salt
Pinch fennel seeds, optional
3 cups chicken broth (about 1 1/2 small cans)
1 large egg
2 tablespoons turkey or chicken pan drippings or melted butter

Steps:

  • Adjust an oven rack to the lowest position and remove the other racks. Preheat oven to 325 degrees F.
  • Remove the neck and giblets from the turkey. Discard the liver, set the others aside. Dry the turkey inside and out with paper towels. Season the breast cavity with salt and pepper. Slice the onions and halve the garlic head crosswise. Stuff all the garlic and half the onions inside the turkey along with some of the herbs and 1 bay leaf. Halve the carrots and celery lengthwise; put them in the center of roasting pan and set the turkey, breast side up, on top of the vegetables.
  • Melt the butter in a medium saucepan, and brush about half of it all over the bird, season the skin with salt and pepper. Tent turkey with aluminum foil and roast for 2 hours. Set aside about 3 tablespoons of the butter for basting the bird.
  • Cook the rest of the onion, neck and giblets in the remaining butter in the saucepan, over medium-low heat, stirring occasionally until browned, about 15 minutes. Add the broth, remaining herbs, and bay leaf; cover and simmer over medium-low heat while the turkey roasts, about 2 hours. Discard the giblets if desired, or reserve for giblets gravy. After 2 hours, remove the foil from the turkey and use a pastry brush or bulb baster to baste turkey with the reserved butter and some of the pan drippings. Increase oven temperature to 425 degrees F and continue to roast until an instant-read thermometer stuck in the thigh registers between 170 and 180 degrees F, about 1 hour more. Transfer turkey to a cutting board and let rest 15 to 20 minutes before carving.
  • For the Gravy: Pour all the turkey pan drippings into a liquid measuring cup and discard the vegetables. Ladle off 1/2 cup of the fat from the top of the drippings, and transfer to a saucepan. (Put measuring cup with remaining drippings and fat in the freezer for a few minutes to separate.) Heat fat over medium heat, scatter the flour evenly on top and cook, stirring constantly, with a wooden spoon until the flour browns slightly and smells toasty, about 4 minutes. Switch to a whisk; then gradually and carefully ladle the hot broth into the flour mixture while whisking constantly. Bring the gravy to a boil; adjust the heat so it simmers gently. Skim and discard any excess fat from the remaining drippings, and add the pan juices to the gravy. Continue to simmer, whisking occasionally, until the gravy is thickened, about 10 minutes. Season with the Worcestershire, salt, and pepper. Remove and discard onion, garlic, herbs, and bay leaf from the turkey cavity. Pour any juices that have accumulated into the gravy, Carve the turkey.
  • Preheat oven to 325 degrees F. Butter a shallow 3-quart casserole.
  • Cut or tear bread into bite-size pieces. Lay bread pieces in a single layer on 1 or 2 baking sheets. Bake until slightly dry and crisp, about 15 to 20 minutes. Cool.
  • Peel, core, and coarsely chop the apple. Coarsely chop the onion, celery, and apricots. Chop the parsley.
  • Melt the 6 tablespoons butter in a large skillet over medium-high heat. Add the apple, onion, celery, apricots, cranberries, thyme, salt, and fennel seeds; cook until soft, about 5 minutes. Add the broth and parsley and bring to a boil. Remove from the heat.
  • Beat the egg in a large bowl. Add the toasted bread and the onion and fruit mixture; toss until evenly moistened. Loosely pack the dressing into the prepared pan. Bake, uncovered, until the top is crusty, about 40 minutes. Drizzle the pan drippings or melted butter over the top. Cook until the top is crisp and golden, about 20 minutes more.

4 ounces dried ancho chilies,* stemmed, seeded, torn into small pieces
1 pound plum tomatoes, halved
5 large heads of garlic
2 tablespoons plus 2 1/3 cups (about) canned low-salt chicken broth
1 tablespoon olive oil
1/4 cup (1/2 stick) unsalted butter, room temperature
2 tablespoons chili powder
2 tablespoons honey
1 14-pound turkey, wing tips cut off; neck, heart, gizzard and wing tips reserved for stock
1/2 cup fresh orange juice
5 1/2 cupsGiblet Stock
1/2 ounce unsweetened chocolate

Steps:

  • Bring 3 1/2 cups water to boil in medium saucepan over high heat. Remove from heat. Add ancho chilies and let stand 1 hour. Drain, reserving 2/3 cup liquid. Combine chilies and reserved liquid in processor; process to smooth thick paste. Using rubber spatula, press ancho paste through strainer; discard solids in strainer. Set aside.
  • Position rack in center of oven and preheat to 400°F. Arrange tomatoes in single layer in oiled 13x9-inch baking pan. Cut top 1/4 off heads of garlic; discard tops. Arrange garlic, cut side up, in single layer in small glass baking dish. Drizzle with 2 tablespoons chicken broth and oil; cover baking dish tightly with foil. Place tomatoes and garlic in oven. Roast tomatoes until softened and lightly browned, turning once, about 30 minutes. Bake garlic until tender when pierced with skewer, about 1 hour. Place tomatoes in processor and blend to smooth purée. Allow garlic to cool, then squeeze garlic cloves from skins into small bowl. Mash garlic with fork to smooth purée. (Ancho paste, tomato purée and garlic purée can be made 1 day ahead. Cover separately; chill.)
  • Position rack in bottom third of oven and preheat to 325°F. Mix 3 tablespoons garlic purée, butter, chili powder and 1 tablespoon honey in small bowl until well blended. Season to taste with salt and pepper. Rinse turkey inside and out; pat dry. Starting at neck end, carefully slide hand between skin and breast meat to loosen skin. Spread all but 2 tablespoons garlic-chili butter under turkey skin. Rub outside of turkey with remaining garlic-chili butter. Place turkey on rack set in large roasting pan. Roast 1 hour. Combine orange juice with 2/3 cup chicken broth. Pour mixture over turkey. Continue roasting until thermometer inserted into thickest part of thigh registers 180°F, basting with pan juices every 20 minutes and adding more broth as needed if pan juices evaporate, about 3 hours longer. Transfer turkey to platter. Tent with foil to keep warm.
  • Add 1 cup chicken broth to pan juices and bring to boil, scraping up browned bits. Strain pan juices into heavy large saucepan; discard solids in strainer. Spoon fat off top; discard fat. Add ancho paste, tomato purée, remaining garlic purée and 5 1/2 cups Giblet Stock. Bring to boil over medium-high heat. Reduce heat to medium and simmer uncovered until slightly thickened, stirring occasionally, about 10 minutes. Add chocolate; stir until smooth. Mix in remaining 1 tablespoon honey. Season to taste with salt and pepper. Serve gravy alongside turkey.

Actually this is a recipe for the most amazing flourless gravy and it takes roasting a bird to make it. Try it with chicken, cornish hens, turkey, or capon. I'll use a turkey in the ingredients list and instructions since that's what I made.

16 lbs turkey, giblets removed
2 carrots, roughly chopped
2 celery ribs, roughtly chopped
1 apple, sliced into wedges
1 orange, sliced into wedges
4 garlic cloves, smashed
1 medium onion, diced
1 medium carrot, diced
1 stalk celery, diced
3 garlic cloves, whole
3 sprigs sage
3 sprigs rosemary
3 sprigs thyme
6 sprigs parsley
3 bay leaves
1/4 lb butter, unsalted, sliced into pats
5 cups chicken stock

Steps:

  • Preheat oven to 300 degrees F.
  • Salt and pepper the turkey and the cavity.
  • Fill the cavity with carrots, celery, appple, orange and garlic; tie the legs with kitchen twine.
  • In a large roasting pan, spread the ingredients for "under the bird" in a stack about the same size as the turkey.
  • Place the turkey onto of the bed of vegetables and herbs.
  • Put butter on turkey.
  • Place the turkey in the oven and roast 45 minutes.
  • Pour half the chicken stock over the turkey; roast 45 more minutes.
  • Pour remaining stock over turkey and roast 45 more minutes. It will start getting golden brown.
  • Baste with pan juices, cover loosely with foil and roast an additional 45 minutes.
  • When the turkey has reached an internal temperature of 165 to 175 degrees, remove from oven, keep covered, and let rest at least 15 minutes before carving.
  • Strain the contents of the roasting pan into a bowl, keeping the solids in the strainer to use for the gravy. Remove the herbs and bay leaves.
  • Measure out 3 cups of pan juices and 1 cup of strained vegetables. Puree with a hand blender or in a standard blender. Add more vegetables until gravy is the desired thickness, or more juices if too thick.
  • Pour through a mesh striner again to make a smooth gravy.
  • Taste and season with salt and pepper.
  • Heat and serve with the sliced turkey.
  • I suggest that you make more than the 4 cups of gravy if you have enough juice and vegetables in your pan. It will be great on leftovers or to store in your freezer.

1 pound tomatillos (peeled and quartered)
1 chipotle pepper in adobo sauce (note - do not use the entire can of chilis -- only 1 pepper)
1 teaspoon adobo sauce (from the can of chipotle peppers)
2 cups chicken broth (low sodium)
2 tablespoons olive oil
1 large onion (diced)
2 stalks celery (diced)
1/2 sweet bell pepper (seeded and diced)
1 jalapeño pepper (diced (for more heat- keep seeds and membranes, for less, discard seeds and membranes))
3 cloves garlic (minced)
3/4 teaspoon salt
2 tablespoons ground cumin
1/2 teaspoon ancho chili powder (or other chili powder)
pinch cayenne pepper (optional)
2 teaspoons dried oregano
3 pounds ground turkey (I use 1 1/2 pounds extra lean and 1 1/2 pounds regular ground turkey.)
1 bay leaf
1 cup fire roasted hatch chiles (skins, stems and seeds removed)
2 15-ounce cans cannellini beans (rinsed and drained)
1 tablespoon corn meal
1/2 cup cilantro (chopped, + more for garnish)
Monterey Jack (or Cheddar Cheese, shredded)
cilantro leaves
avocado (diced)
lime wedges
sour cream
green onion (diced)
jalapenos (sliced)
tortilla chips
hot sauce

Steps:

  • In a blender or food processor combine the tomatillos, chipotle pepper, adobo sauce and chicken broth. Pulse several times until pureed. Set aside.
  • In a large dutch oven heat olive oil over medium high heat. Add onions, celery, bell pepper, jalapeño, garlic and salt. Stir and cook for 3-4 minutes until vegetables are softened and fragrant. Stir in cumin, chili powder, cayenne (if using), and oregano. Cook, stirring for an additional minute.
  • Add ground turkey, breaking up lumps with the back of a wooden spoon. Brown the turkey while incorporating it into the vegetables. This should take 5-6 minutes or until the turkey is browned.
  • Pour spicy tomatillo sauce into the turkey mixture. Add the bay leaf, hatch chiles and cannelloni beans. Stir to combine. Bring mixture to a boil. Place lid on the pot so that it's mostly covered but steam can still escape. Reduce heat to low and simmer for 30 - 45 minutes minutes, stirring occasionally.
  • Stir in cornmeal and simmer 5 minutes. Stir in cilantro. Check for seasoning, adding salt, pepper or more spice if desired.
  • Ladle chili into bowls and serve with optional accompaniments.

2 large onions, chopped
2 cans chopped green chilies
2 jalapenos, minced
4 cloves garlic, mashed
1 tablespoon cumin seed, crushed
1 tablespoon ground cumin
2 teaspoons oregano
1/2 teaspoon thyme
1/2 cup chopped cilantro
2 (16 ounce) cans white beans, do not drain (navy, cannelini, etc)
3 tablespoons chili powder
2 tablespoons red wine vinegar
salt and pepper
2 beef double bouillon cubes (knorr)
1 1/2 quarts water
2 -3 tablespoons olive oil

Steps:

  • In a fairly large soup pot, heat olive oil.
  • Sautee garlic until golden, then add onion.
  • Sautee until it begins to become translucent, then add pork.
  • Salt and pepper to taste.
  • Cook over fairly high heat, until pork browns, then add cumin, lower heat to medium, and cook meat through.
  • Add all remaining ingredients.
  • Bring to a boil, and let boil 10 minutes or so, then cover, and reduce heat to low.
  • Cook at least 1 hour on low, and up to 3, depending on how thick you like your chili, stirring occasionally.
  • Serve with grated colby-jack cheese and a big dollop of sour cream, chopped green onions or cilantro, and tortilla chips!
  • Note:Any other kind of meat could easily be substituted--chicken, turkey, beef, whatever appeals to you!
