3 1/4 kg pork belly (bones removed and scored)
1 cup table salt
1 tablespoon fennel seed (ground)
1 teaspoon five-spice powder
1 teaspoon cinnamon
grapeseed oil (for rubbing)
sea salt
6 granny smith apples (peeled cored and sliced)
100 g caster sugar
75 g rice wine vinegar
1/2 lemon (juice of)

Steps:

  • Mix the salt and spices together and rub it all over the pork and let is cure for 3 to 4 hours and then wash the pork belly well and dry with paper towels and place in the fridge uncovered for at least 6 to 8 hours or overnight.
  • Preheat the oven to 250°C.
  • rub the skin of the pork with some oil and salt and then place the pork on a roasting tray skin side up and cook for 15 minutes.
  • Lower the temperature of the oven to 150C and cook for 45 to 50 minutes to get great crackling pork belly can be finished under the grill/broiler.
  • Remove the pork belly and rest for 15 minutes and then slice pork belly thinly and serve with apple sauce.
  • APPLE SAUCE - Place the sugar and vinegar in a medium size saucepan and bring to the boil and then add the apples and cook until tender and then puree and add the lemon juice and set aside to cool.

Don't stint on the cooking time - it really is the key to meltingly soft, full-flavoured meat

2.5kg/5lb 8oz pork shoulder joint, scored and tied (we used a tied carvery joint from Waitrose, bone in one end and rolled and tied at other end)
2 tsp thyme leaves
1 tsp fennel seed
1 tbsp olive oil
buttered soft bread rolls , to serve
1 tbsp olive oil
2 onions , finely chopped
1-2 red chillies , deseeded and finely chopped
4 eating apples , peeled, cored and cut into small chunks
4 tbsp cider vinegar
4 tbsp caster sugar
1 thyme sprig, leaves picked

Steps:

  • Heat oven to 240C/220C fan/gas 9. Sit the pork in a large roasting tin. If the skin isn't already scored for you, score it with a small, sharp knife. Mix together the thyme, fennel seeds, oil and 1 tsp salt with a good grinding of black pepper. Rub this over the top and ends of the pork. Roast for 30 mins, then cover the whole tin with a large sheet of foil, reduce the oven temperature to 140C/120C fan/gas 1 and return the pork to the oven for a further 5 hrs.
  • While the pork is cooking, make the chutney. Heat the oil in a large saucepan. Soften the onion and chilli together for 10-15 mins. Once soft, stir in the apple chunks, vinegar and sugar with 50ml water. Cover and cook over a low heat for 15-20 mins, stirring occasionally, until the apple is very soft. Blitz half the apple mixture with a hand blender, or scoop half into a food processor and whizz until smooth, before stirring back into the pan with the leaves from the thyme sprig.
  • Take the pork from the oven - the meat should be very tender - and increase the temperature to 240C/220C fan/gas 9. When the oven has reached temperature, discard the foil and put the pork back in for 30 mins to crisp up the skin a little. For really crisp crackling, remove the skin from the meat, wrap the meat in foil to keep warm, and return only the skin to the oven for 30 mins. Use a couple of forks to shred the pork from the joint. Sandwich in soft buttered rolls with apple chilli chutney, warm or at room temperature. Serve with pieces of crisp crackling on the side.

1.5kg/3lb 5oz-4lb 8oz pork belly , scored and boned (ask to keep the bones to make stock for the gravy)
25g/ 1oz butter
25g/ 1oz flour
1l/ 1.75 pints chicken stock or 500ml/18 fl oz if you don't have pork bones

Steps:

  • If you have the pork bones, roast them until browned, then transfer to a pan and cover with 1 litre chicken stock. Gently simmer for 1 hr, skimming off any scum that comes to the surface (you will need about 500ml for the gravy). If you don't have pork bones, don't worry about this stage.
  • Heat oven to 180C/160C fan/gas 4. Put the pork on a wire rack in a roasting tray, skin side up, and cook for 1½ hrs. increase oven to 220C/200C fan/gas 7 and cook for a further 15-20 mins to crisp the skin. Remove the pork from the tin and allow to rest for 45 mins.
  • To make the gravy, remove all the fat from the bottom of the roasting tin. Add the butter and heat to melt. Tip in the flour and cook for 1-2 mins, scraping the bottom of the pan. Gradually stir in 500ml stock and cook for 5 mins until thick.

Take a simple dinner shortcut for aromatic pork with Chinese five spice. Its blend of spices such as cinnamon and Sichuan peppercorns make a flavour-packed dish.

1 tbsp Chinese five-spice powder
3 tbsp soy sauce
1 tbsp honey
100ml Shaohsing rice wine or dry sherry
2 tbsp malt vinegar
thumb-sized piece of ginger, peeled and finely grated
4 garlic cloves, finely grated
½ red chilli, roughly chopped (optional)
1-1.2kg piece of boneless pork belly, lightly scored all over
1 tsp sunflower oil
200ml chicken stock
2 tsp cornflour
sliced spring onions, chillies and roughly chopped coriander, to serve (optional)

Steps:

  • Mix together the five-spice powder, soy, honey, rice wine, vinegar, ginger, garlic and chilli. If you have time, pour the mixture into a shallow dish and sit the pork in the dish skin-side up, so only the meaty side is in the marinade and the skin stays dry. Salt the skin lightly and chill overnight if you have time, or for up to 24 hrs. (If you don't have time to marinate the pork, skip this and move straight to step two.)
  • Heat the oven to 150C/130C fan/ gas 2. Pour the marinade (the excess if you've chilled the pork overnight) into a roasting tin. Sit the pork on top, skin-side up - it should fit snugly in the tin. Roast for 2 hrs. Remove from the oven, then lift the pork onto a board. Pour the fat from the tin into a bowl, then pour the juices through a sieve into a small pan. Wipe down the tin. The pork can be prepared up to this stage two days ahead and kept chilled.
  • Turn the oven up to 230C/210C fan/gas 8. Put the pork back in the tin, skin-side up, and brush the skin with the oil. Roast for 30-35 mins, basting with the reserved fat once or twice, until the skin has blistered and crackled. If the skin hasn't crackled after 35 mins, slide the pork under a hot grill, but watch carefully to ensure it doesn't burn. Lift the pork onto a board and leave to rest for a few minutes.
  • While the pork is still in the oven, add the stock to the pan with the roasting juices and bring to the boil. Reduce the heat and simmer for a few minutes, adding more soy or vinegar to taste, if you like. Mix the cornflour with 1 tbsp water to create a smooth paste. Stir this into the sauce and simmer until thickened. Keep warm on the lowest heat. Carve the pork into thick slices and serve with veg and the gravy, or cut into squares and top with spring onions, chillies and coriander, with the gravy alongside for dunking.

I saw this on a BBC programme called Saturday Kitchen Live which is hosted by a great cook from Yorkshire, James Martin (does great food and easy on the eye :) ) Serve with creamy mashed potato. I didn't get a lot of pan juices and was unable to make a jus to go with this however the meat was wonderfully juicy and tender and the crackling was great. I also didn't have any fresh sage so used dried sage instead, didn't measure it just used common sense and it worked out great.

1 7/8 kg pork belly, skin scored with a sharp knife
handful table salt
12 sage leaves
1 lemon
fresh ground black pepper, to taste
500 g bramley apples, peeled, cored, chopped
30 g butter
2 tablespoons water
2 tablespoons cider
30 g soft dark brown sugar (to taste)
20 g butter (for the pan juices)
2 tablespoons cider (for the pan juices) (optional)

Steps:

  • Preheat the oven to 250C, or as hot as you can get the oven.
  • Score the skin diagonally both ways to create diamond shape grooves with a stanley knife, BE CAREFUL!
  • Rub the table salt into the grooves that you have cut into the pork skin.
  • Turn the meat over and place fresh sage leaves and three slices of lemon onto the meat, season with the pepper and roll up, tie the pork at intervals with string to ensure it doesn't unroll during cooking.
  • Place the pork on a wire rack that fits over an empty roasting tin, and roast for half an hour.
  • Reduce the oven temperature to 150C and roast for a further three hours.
  • For the cider and apple sauce; put them into a pan with the butter, sugar, water and cider; cover and heat for 4-5 minutes, or until the apples are soft enough to beat to a purée. Keep warm.
  • Remove the crackling (skin) and then cover the meat with foil and rest for about 15 minutes.
  • Drain the fat from the roasting tin keeping the meat juices in the tin.
  • Put the roasting tin with the meat juices in onto the hob and add a small cube of butter (20g) and a splash of cider (optional).
  • Slice the pork, remember to remove the string, and serve with the apple sauce and a small drizzle of pan juices.

5 thyme sprigs, leaves removed and chopped
2 garlic cloves, crushed
2 tsp dried chilli flakes
1 tsp smoked paprika
zest and juice ½ lemon
1 tbsp olive oil
4-4.5kg boned, scored and rolled pork shoulder

Steps:

  • Heat oven to 230C/210C fan/gas 8. Mix all the ingredients (except the pork) in a small bowl, then rub all over the meat, getting in between the cuts in the skin.
  • Lift the pork onto a wire rack in a roasting tin and place in the oven to sizzle for 30 mins. Reduce oven to 150C/130C fan/gas 2 and roast for a further 3 hrs. If the crackling needs a final blast to get it crisp, turn oven back up to 230C/210C fan/gas 8 for about 30 mins more.
  • Remove the tin from the oven, cover loosely with a tent of foil and rest for at least 20 mins or up to 40 mins before carving.

1 boneless rolled pork loin roast (4 to 5 pounds), trimmed
1 garlic clove, cut into lengthwise strips
2 tablespoons all-purpose flour
1 teaspoon prepared mustard
1 teaspoon salt
1/2 teaspoon sugar
1/8 teaspoon pepper
1 cup applesauce
1/3 cup packed brown sugar
2 teaspoons vinegar

Steps:

  • Cut slits in top of roast; insert garlic strips. Combine the flour, mustard, salt, sugar and pepper; rub over roast. Place fat side up on a rack in a roasting pan. , Bake, uncovered, at 325° for 2 to 2-1/2 hours or until a thermometer reads 160°. Combine the applesauce, brown sugar, vinegar and cloves; generously brush over roast during the last 30 minutes of baking. Let stand for 10 minutes before slicing.

  • Place sugar in a medium saucepan over low heat. Shake pan to spread sugar. Leave for a few minutes until the edges start melting and turning golden, then swirl the pan to spread the caramel/sugar to encourage even melting (do not stir, sugar may crystallise).
  • Once the sugar is all melted, add apple and vinegar. Mix, and cook for 8 - 10 minutes, stirring occasionally, until the apple is completely soft.

  • For the roast pork belly, put the pork belly in a roasting tray, skin-side up. Thoroughly pat it dry with kitchen paper, then rub sea salt all over the skin.
  • Roast the pork belly for 30 minutes, then reduce the oven temperature to 160C/140C fan/Gas 3 and continue to cook for a further 1½ hours. When cooked, set the pork aside to rest in a warm place.
  • Meanwhile, for the rib gravy, heat the oil in large saucepan over a medium heat. Add the pork ribs and fry for 3-4 minutes on each side, turning them regularly until they have caramelised all over.
  • Add the onions and carrots to the pan, then pour over the stock. Bring to the boil, scraping any burned bits up from the bottom of the pan using a wooden spoon.
  • Return the browned pork ribs to the pan, then add the peppercorns, bay leaves and thyme. Reduce the heat until the mixture is simmering, then continue to simmer gently for 1½ hours.
  • Meanwhile, for the apple bread sauce, heat the milk in a large saucepan. Stud the onion with 3 of the cloves and add to the hot milk. Stud one of the apples with the remaining 2 cloves and add to the pan along with the cinnamon stick.
  • Add the breadcrumbs and butter to the infused milk, stir well and heat gently. Just before serving, grate in the remaining apple and stir in the ground cinnamon.
  • When the cooking time for the pork ribs has elapsed, remove the ribs and slide the meat from the bone. Chop the meat and return it to the gravy mixture.
  • To serve, carve the pork belly and arrange the slices onto a serving platter. Serve the rib gravy in a large jug alongside and the apple bread sauce in a large serving bowl.
