ROAST SIRLOIN OF BEEF

Roast sirloin of beef image

Gary Rhodes' delicious, succulent roast beef dish is perfect for a Boxing Day lunch or an alternative Christmas Day roast. And it only calls for four ingredients!

Provided by Gary Rhodes

Categories     Dinner, Lunch, Main course

Time 2h40m

Number Of Ingredients 4

2 tbsp vegetable oil or beef fat
1-1.5kg/2lb 4-3lb 5oz sirloin of beef joint
1 glass red wine
400g can beef consommé

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Heat the oil or fat in a large fl ameproof roasting tin in the oven for 5-10 mins. Season the beef all over.
  • Place the joint fat-side down in the roasting tin and put it on the hob. Sizzle to release some of the fat, then turn the beef in the fat to seal and colour it all over, about 5 mins. The joint can now be roasted, fat-side up, allowing 10-15 mins per 450g for medium-rare, 15-20 mins per 450g for medium, 20-25 mins for medium-well and 25-30 mins for well done. Turn the joint halfway through its cooking time for an even roast. Once roasted, remove the beef from the pan and leave to one side, loosely covered with foil, to rest for 15-20 mins.
  • Meanwhile, pour off any excess fat from the roasting tin, then put the tin on a medium heat on top of the stove. Once it begins to sizzle, pour in the red wine, allowing it to boil rapidly until almost completely evaporated. Tip in the consommé and allow to simmer for 4-5 mins. This will give a light sauce, rather than a gravy (see tip, below). Simmer for a few more mins before straining through a sieve for the smoothest of fi nishes. Carve the beef into thick slices, offering the gravy separately.

TOP SIRLOIN ROAST

Top Sirloin Roast image

This is a wonderful garlic-infused roast that has replaced my traditional pot roast recipe. Be sure to use a good-quality top sirloin roast for the most tenderness and flavor. I love using the traditional potatoes and carrots but also add the red pepper and mushrooms for more nutritional value. Use an amber beer or a medium slightly-darker beer, such as Yuengling® Black and Tan.

Categories     Main Dish Recipes     Roast Recipes

Time 1h45m

Yield 8

Number Of Ingredients 16

1 (3 pound) beef top-sirloin roast
3 cloves garlic, slivered, or to taste
3 cloves garlic, minced
1 teaspoon ground paprika, or to taste
1 teaspoon salt, or to taste
1 teaspoon freshly ground black pepper, or to taste
6 Yukon Gold potatoes, quartered
5 carrots, cut into 2-inch pieces
2 large sweet onions, quartered
3 cubes beef bouillon
½ cup hot water
1 cup beef broth
½ cup beer
2 bay leaves, broken, or more to taste
2 large red bell peppers, cut into 2-inch pieces
½ cup mushrooms

Steps:

  • Make small slits in the roast using a sharp knife; tuck slivered garlic into each slit. Rub minced garlic, paprika, salt, and ground black pepper over the entire roast. Set aside until roast comes to room temperature, 15 to 30 minutes.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange potatoes, carrots, and onions in an even layer in a 9x12-inch roasting pan. Dissolve beef bouillon cubes in hot water in a small bowl and pour over vegetables. Pour in beef broth and beer.
  • Place roast on top of the vegetables, making sure it is not submerged in the broth mixture. Place bay leaf pieces around the roast.
  • Bake roast in the preheated oven until internal temperature reaches 150 degrees F (66 degrees C) for medium, 45 to 60 minutes. Transfer roast to a platter; cover with aluminum foil, and allow to rest until internal temperature reaches 155 degrees (68 degrees C), about 10 minutes.
  • Increase oven temperature to 425 degrees F (220 degrees C). Add red pepper and mushrooms to the roasting pan and return it to the oven. Bake until vegetables are tender and lightly browned, 15 to 20 minutes.
  • Thinly slice the roast crosswise. Serve with vegetables; spoon pan juices over meat and vegetables.

HOW TO COOK A SIRLOIN BEEF ROAST

How to Cook a Sirloin Beef Roast image

How to Cook a Sirloin Beef Roast. This cooking method is easy and ensures tender roast beef every single time!

Provided by Kim Beaulieu

Categories     Main

Time 3h10m

Number Of Ingredients 5

6 lbs top sirloin roast
2 tbsp coarse salt
1 tbsp white pepper
1 tbsp garlic powder
1 tbsp Herbes de Provence

Steps:

  • Pull the roast out of the fridge about 30 minutes before cooking!
  • Preheat oven to 450 degrees F.
  • Make sure roast is tied, most butchers will do it for you. If not, use butchers twine to tie it.
  • Season the meat with spices, make sure you season it all over.
  • Place the roast fat side up on a rack, this is crucial. You want dry heat for this type of meat, braising in liquid is not an option for this one. Use a rack inside your baking pan, most come with one.
  • Place the roast in the preheated oven. Cook for 15 to 20 minutes (depends on size of roast) at 450 degrees F. Then, without opening the oven door, turn the heat down to 325 degrees F.
  • Cook until meat thermometer inserted reaches about 140 degrees. Generally this should take about 2½ to 3 hours, but it varies on oven and roast size.
  • Pull the roast out of the oven. Remove the rack and place roast on a cutting board. Allow to rest for about 15 minutes. This is crucial, do not be tempted to cut into it right away. Letting meat rest is a thing of beauty. The juices redistribute and the result is succulent meat.
  • You can make gravy while it's resting if you like.
  • Slice the roast. Place on platter.
  • Serve with a big old "I no longer hate sirloin" smile!

ROAST SIRLOIN OF BEEF & PORT GRAVY

Roast sirloin of beef & Port gravy image

Serve up a stunning sirloin of beef this Sunday, for a roast dinner you won't forget

Provided by Matt Tebbutt

Categories     Dinner, Main course

Time 4h

Number Of Ingredients 10

3 garlic cloves , finely chopped
2 tbsp thyme leaves
2 tbsp olive oil
1.5-2kg/3lb 5oz-4lb 8oz piece rolled sirloin of beef
1 garlic clove
1 bay leaf
few thyme sprigs
75ml port
350ml red wine
200ml beef stock (if you'd rather make your gravy alcohol-free, simply double the quantity of stock)

Steps:

  • For the beef, mix the garlic, thyme and olive oil with some black pepper. Rub over the beef and leave for at least 1 hr, the longer the better. Heat oven to 200C/180C fan/gas 6, season the beef with salt and place in a roasting tin. Roast in the oven for 30 mins, then turn the heat down to 180C/160C fan/gas 4 and cook for 10-15 mins per 450g depending on how you like your meat - 10 mins per 450g will give you rare meat and 15 mins will give you meat that is cooked through.
  • When the beef is cooked, take it out of the roasting tin and allow it to rest somewhere warm, loosely wrapped in foil, for 30 mins. Pour off and reserve any resting juices.
  • To make the gravy, place the roasting tin on a high heat with the garlic, bay and thyme. Splash in the Port, scrape with a wooden spoon to loosen any debris from the tin and bubble until almost completely reduced. Pour in the red wine and reduce by three-quarters before adding the stock. Bring to the boil and season to taste. Pour reserved resting juices back into the tin. Finally, pour the gravy through a sieve into a warm jug. Carve the meat and serve with the gravy.

ROAST SIRLOIN OF BEEF WITH A MUSTARD CRUST

Roast Sirloin of Beef with a Mustard Crust image

Great flavour roast and easy to prepare

Provided by Bord Bia

Yield 6

Number Of Ingredients 10

1½kg sirloin or rump of beef
2 garlic cloves, crushed
½ tablesp. freshly ground black pepper
1 tablesp. Dijon-style mustard
2 tablesp. olive oil
2 carrots and 1 onion chopped
Salt
1 tablesp. plain flour
½ a glass of red or white wine (optional)
250ml stock

Steps:

  • Heat the oven to Gas Mark 7, 220°C (425°F). Place the garlic, pepper and mustard in a small bowl, add in the oil and mix to a paste. Rub the mixture all over the beef, then place in a roasting tin along with the carrots and onion. Season with a little salt. Roast for 25 minutes, then lower the heat to Gas Mark 4, 180°C (350°F). Roast for another hour for rare and 1½ hours for medium rare. However, it is best practice to use a meat thermometer to be accurate. Take the meat out of the oven, transfer to a carving board, cover with foil and allow to rest for 15-20 minutes before carving. To make the gravy, stir the flour into the juices in the roasting tin. Place over a medium heat, and continue stirring with a wooden spoon. Gradually add in the wine, if using, and stock and stir until smooth. Allow to simmer for a couple of minutes. Season and pour through a sieve into a gravy boat, discarding the vegetables that were cooked alongside the roast. Slice the beef and serve with paprika flavoured roast potatoes and steamed vegetables. To make the potatoes, simply toss peeled potatoes in a little olive oil, paprika and seasoning and roast in the oven with the beef for 40-45 minutes - for 1kg of potatoes use 2 tablespoons oil and 2 teaspoons paprika.

ROAST SIRLOIN BEEF WITH RUB

Roast Sirloin Beef with Rub image

This rub adds a wonderful flavor to the roast and the gravy is to die for. My kids aren't huge fans of roasts but they did like this one. I cooked a 5 lb roast and cut back on the garlic a bit, but left the amounts for the other ingredients the same. I cooked the roast at 500 degrees for 20 min and the remainder at 350 degrees for approx. 30 min. Serving size is dependant on how big of eaters you have...children vs adults

SIRLOIN ROAST BEEF WITH AN AZTEC FLAIR

Sirloin Roast Beef With an Aztec Flair image

For my 46th birthday my husband treated me to a one-evening cooking course. It must have been one of the most enjoyable evenings I've ever had. This recipe is from that course. This recipe is probably my most favorite of all the ones presented in the course. It's a bit spicy, so if you don't do spicy, you can cut back on the hot pepper. I'll probably double the amount at home..... Marinating time is not included in the prep time.

Provided by Mirj2338

Categories     Meat

Time 1h

Yield 16 serving(s)

Number Of Ingredients 12

1 kg sirloin, cleaned of the top layer of fat
coarse salt, to taste
fresh coarse ground black pepper, to taste
1 small chili pepper, finely minced (deseeded or not, you decide on the hotness level)
4 tablespoons honey
olive oil, to taste (just a bit)
2 tablespoons Dijon mustard (the kind with the seeds in it)
1/4 cup red wine
1 cup red wine
1/2 cup beef broth
2 tablespoons honey
50 g bittersweet chocolate

Steps:

  • Rub the salt and pepper all over the piece of meat. Give it a good massage, it's had a hard day.
  • Mix the rest of the ingredients into a marinade. Place the meat in the marinade and let it soak for 2 hours.
  • Preheat the oven to 250 degrees centigrade.
  • Place a heavy pan over high heat for at least 7 minutes, until it begins to smoke. Add the olive oil.
  • Sear the meat on each side.
  • Place the meat in the oven for 7-12 minutes depending on your preference of doneness.
  • Prepare the sauce:.
  • Using the same pan in which the meat was seared, add the leftover marinade, red wine, honey and broth. Scrape the bottom and then let the sauce boil until it has been reduced to 1/3 of its original volume. This should take about 12 minutes or so.
  • Turn off the heat and add the chocolate. Mix well.
  • Putting it all together:.
  • Take the meat out of the oven and let it rest for about 7 minutes to allow the juices to redistribute. Slice into serving pieces.
  • Drizzle with the sauce and serve.
