CRISP BACON & AVOCADO TOASTS

Brighten up lunch times with this delicious alternative to the BLT

4 rashers smoked bacon , streaky
6 cherry tomatoes , halved
1 small ripe avocado , peeled and stoned
squeeze lime juice
pinch dried chilli flakes
2 chunky slices granary bread

Steps:

  • Heat grill to high. Put the bacon and cherry tomatoes, cut side up, on a grill rack and grill for 10 mins, turning the bacon halfway through, until crisp. Meanwhile, roughly mash the avocado with a fork and stir in the lime juice, chilli flakes, some salt, if you like, and pepper.
  • Toast the bread until golden and spoon on the mashed avocado. Top with the tomatoes and bacon, then serve.

2 tablespoons chopped fresh dill
1 firm-ripe California avocado (8 to 10 ounces)
1 teaspoon fresh lemon juice
4 slices whole-grain bread, toasted
1/2 cup radish sprouts

Steps:

  • Cook bacon in a 12-inch heavy skillet over moderate heat, turning occasionally, until crisp, then transfer with tongs to paper towels to drain.
  • Stir together mayonnaise, chives, dill, and salt and pepper to taste in a small bowl.
  • Halve, pit, and peel avocado, then slice lengthwise. Gently toss slices with lemon juice.
  • Make sandwiches with toast, herb mayonnaise, avocado, bacon, and sprouts, seasoning with salt and pepper.

8 slices bacon or 1 1/2 cups ham, pieces
4 large green onions with tops, chopped
3/4 cup colby or 3/4 cup monterey jack cheese
4 large romaine lettuce leaves
4 tablespoons guacamole, any brand
1/2 cup finely shredded cabbage (optional)
4 kaiser rolls or 4 split buns
1/2 cup mayonnaise or 1/2 cup Miracle Whip

Steps:

  • In frying pan saute bacon or ham pieces along with chopped green onions, drain.
  • Chop cooked bacon slices.
  • Spread each roll half or bun half with mayonnaise or Miracle Whip.
  • Place a lettuce leaf on each bun or roll.Then top with sauted bacon/ham/green onion mixture equally on 4 buns or rolls.
  • Add 1 tblsp guacamole dip, then cabbage if desired. Add shredded cheese on top.
  • Top with other half of bun.
  • Note: You can use more guacamole dip if desired. You can also use hot sauce when you saute meat if you desire.

My mom used to make these fantastic sandwiches when I was a kid and I've always loved them. I've made a few alterations to her basic recipe, and it's so good. This sandwich can be altered in many ways, including the additon of some salsa to spice it up. Please share your thoughts if you prepare this sandwich, I'd love to hear your thoughts and I'd like to hear about any variations you might make.

1 avocado
2 slices bread, . (your favorite, great on toasted bread, I bet this would be awesome on a bolillo roll ( torta bread)
mayonnaise (adjust the amount to what suits you)
tomatoes, sliced
1 tablespoon onion (chopped or sliced use what you like)
2 teaspoons cilantro, to taste (chopped)
lettuce (Use what you like and in the amount that you like.)
salt and pepper

Steps:

  • Peel, slice and mash avocado in a small mixing bowl.
  • Add salt and pepper to taste, and blend into mashed Avocado.
  • Spread mayonnaise on both bread slices.
  • Spread mashed Avocado on one slice of bread.
  • Top with onion to taste.
  • Add sliced tomato.
  • Top with chopped cilantro to taste.
  • Add lettuce (use what you like).
  • Top with second slice of bread and enjoy!
