3 (2 1/2 to 3 pound) farm-raised pheasants*, innards removed, wing tips and necks trimmed (See Cook's Note)
Salt
Freshly ground black pepper
1 onion, peeled and coarsely chopped
1 carrot, peeled and coarsely chopped
1 orange, halved
3 sprigs fresh thyme
6 slices thick-cut bacon, cut in half
1/4 cup Madeira
1 cup rich chicken stock
2 tablespoons cold, unsalted butter
Wild Mushroom Bread Pudding, recipe follows
2 teaspoons vegetable oil
1 cup sliced yellow onions
10 ounces assorted wild mushrooms, such as oyster, shitake, chanterelles, wood ear, or porcini
1 teaspoon minced garlic
3 teaspoons Essence, recipe follows
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1/4 cup lager beer
5 large eggs
3 cups heavy cream
1/4 cup molasses
1 1/2 teaspoons Worcestershire sauce
1 teaspoons minced fresh thyme
3/4 cup grated Gouda cheese
3/4 cup grated white cheddar cheese
3/4 pound stale white bread, cut into 1-inch cubes
1 teaspoon unsalted butter
1 tablespoon plain bread crumbs
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 500 degrees F and position the oven rack in the bottom third of the oven.
  • Season the cavities and the outside of each pheasant liberally with salt and pepper. Divide the chopped onion and carrot equally among the cavities of the pheasants. Squeeze the juice from both halves of the orange and set aside. Cut 1 of the squeezed halves into 3 pieces, and tuck inside of the cavities along with the veggies. Insert 1sprig of thyme into the cavity of each pheasant.
  • Arrange the pheasants in a large roasting pan, breast sides up. Lay 2 strips of bacon over the top of each pheasant, cutting the bacon into pieces if necessary to cover as much of the pheasant as possible. Roast for 15 minutes, then remove the bacon strips and continue roasting for approximately 30 to 40 minutes, or until the juices run clear. (It is important to not overcook the pheasants, as they are very lean birds.) Remove the pheasants from the oven and transfer to a serving platter, loosely tented, while you make the sauce.
  • Using a spoon, carefully remove as much extra fat from the pan as possible. Place the roasting pan over high heat and, when hot, deglaze with the reserved orange juice and Madeira, using a wooden spoon to scrape any brown bits from the bottom of the pan. When the orange juice and Madeira have reduced by half, add the chicken stock and continue to cook until sauce has reduced enough to coat the back of a spoon, about 3 to 4 minutes. Swirl in the butter and remove from the heat. Season, to taste, with salt and pepper.
  • Remove the back bone from each pheasant, then cut along the breast bone to divide the birds into two halves. Serve 1/2 pheasant per person, napped with some of the sauce and with some of the Wild Mushroom Bread Pudding.
  • Heat the oil in a large, deep skillet over high heat. Add the onions and cook until golden brown and tender, 5 minutes. Add the mushrooms, 1/2 teaspoon of the garlic, 1 1/2 teaspoons of the Essence, 1 teaspoon of the salt, and 3/4 teaspoon of the pepper, and cook, stirring, until the mushrooms are tender and have given off their liquid, about 5 minutes. Add the beer and cook, stirring, to deglaze the pan and until the mixture is almost dry, 1 to 2 minutes. Remove from the heat and let cool.
  • In a large bowl, combine the eggs, cream, molasses, Worcestershire sauce, thyme, remaining 1 1/2 teaspoons of Essence, remaining 1/2 teaspoon of salt, and remaining 1/4 teaspoon of pepper, and whisk well to combine. Add the mushroom mixture and cheeses and stir well. Add the bread cubes and let sit until the bread has absorbed the liquid, 2 hours, stirring occasionally.
  • Preheat the oven to 350 degrees F.
  • Butter a 9 by 13-inch baking dish with the butter. Add the bread crumbs, shaking to cover the bottom evenly. Pour the bread pudding mixture into the prepared pan and cover with aluminum foil. Bake for 1 hour and uncover. Continue baking until risen and firm in the center, and golden brown, 20 to 30 minutes. Remove from the oven and cool slightly before serving.

ROAST PHEASANT AND BREAD SAUCE

Try to order your pheasants from a butcher that has hung them for a minimum of 6-7 days. Look for a rich, soft and fruity wine to serve - say a Pinot Noir from the Côte de Nuits, or one of the very good wines from Oregon.

2 pheasants (800-900g/1lb 12oz-2lb each), oven-ready, preferably hen pheasants
50ml/2fl oz rapeseed oil (or other non-scented oil)
20g/¾oz unsalted butter (optional)
sea salt and freshly ground black pepper
100ml/3½fl oz red wine
50ml/1¾fl oz ruby port
2 crushed juniper berries
1 sprig fresh thyme
10g/¼oz unsalted butter
50g/1¾oz white onion, finely chopped
1 bay leaf
1 sprig fresh thyme
2 cloves, crushed
2 pinches salt
10g/¼oz small bacon lardons
150ml/5fl oz full-fat milk
1 slice white bread, broken into pieces

Steps:

  • For the roasted pheasant, preheat the oven to 190C/375F/Gas 5.
  • On a medium heat, in a ovenproof frying pan, heat the rapeseed oil and butter (if using) until foaming.
  • Lay the pheasants in the pan, cook until golden-brown in colour (about 3-5 minutes) on the leg sides. Turn the pheasants onto their breast side to colour for a further 2-3 minutes. Season with salt and pepper; transfer to the oven and cook for 30 minutes, turning halfway through cooking time. To check the pheasant is correctly cooked, you can use a meat thermometer - the breast temperature for a cock pheasant should reach 63C/145F and for a hen 60C/140F. (The leg temperature should reach 80-82C/175-180F.) When cooked, set the pheasant aside in a warm place, covered, to rest.
  • Spoon out the fat from the pan and add the wine, port, juniper and thyme into the roasting pan. On a high heat quickly cook until the volume of liquid has reduced by one third. Scrape the caramelised juices off the bottom of the pan to make the jus. Taste and season if necessary. Strain and reserve in a warmed jug.
  • For the bread sauce, in a small saucepan on a low heat gently heat the butter and fry the onion with the herbs, crushed cloves and salt for two minutes, or until soft. Add the bacon lardons and continue to cook uncovered for one minute. Add the milk, bring to a simmer and stir in the pieces of bread until the sauce is smooth. Taste and adjust the seasoning.
  • To serve, carve the pheasant and serve it over a mound of bread sauce with the jus poured over.

This is a quick simple recipe for fresh pheasant that has a very autumn feel to it. It is very good with potatoes, carrots and seasonal squash (I like acorn squash) diced and roasted in the pan with it. You can cook it at a higher temperature for a shorter time; just be sure to baste often since it is a very dry meat.

2 sprigs rosemary, leaves stripped and chopped
1 tablespoon chopped fresh thyme
1 cup olive oil
1 whole pheasant, cleaned
salt and ground black pepper to taste

Steps:

  • Preheat an oven to 250 degrees F (120 degrees C).
  • Stir the chopped rosemary and thyme into the olive oil and set aside. Rub the pheasant inside and out with salt and pepper. Place into a close-fitting roasting pan. Pour the herb oil over top.
  • Bake the pheasant in the preheated oven for 1 hour, then cover with aluminum foil, and continue baking an additional hour, or until an instant-read thermometer inserted into the thickest part of the thigh, near the bone reads 180 degrees F (82 degrees C). Remove from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing. Baste the pheasant with the hot oil and juices from the pan every 30 minutes while cooking.

2 pheasants, tied (ask your butcher to do this)
1 tbsp plain flour, well seasoned
50ml vegetable oil
2 rashers smoked streaky bacon, thinly sliced
8 shallots, peeled and left whole
2 carrots, peeled and quartered lengthways
2 parsnips, peeled and quartered lengthways
1 garlic clove, peeled and crushed
1 thyme sprig
1 marjoram sprig
2 bay leaves
100ml marsala or sweet sherry
50ml red wine
200ml chicken stock
1 tsp caster sugar
bread sauce, to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Dust the pheasants with the flour, then heat the oil in a large flameproof dish. Brown the pheasants all over, then remove from the dish.
  • In the same dish, fry the bacon, vegetables, garlic and herbs with 1 tbsp of the dusting flour for 5 mins, until the vegetables start to colour. Put the pheasants and any resting juices back in the dish, pour on the Marsala, wine and stock, add the sugar, then cover and cook for 1 hr 30 mins - 1 hr 50 mins or until the leg meat easily comes away from the bone. Serve with bread sauce.

1 tablespoon unsalted butter
1 small white onion, finely diced
1 large stalk celery, finely diced
1/2 cup finely crushed plain salted crackers, such as wheat crackers
1 large egg
1 1/2 tablespoons chopped fresh sage
1/3 cup fresh corn kernels, roasted
6 tablespoons chicken stock
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
1 fresh pheasant (about 2 1/4 pounds)
2 to 3 strips country-style smoked bacon
6 cups fresh corn kernels (6 ears)
1/2 habanero chile, seeds removed
1 tablespoon freshly squeezed lime juice
2 teaspoons salt

Steps:

  • To prepare the stuffing: Melt the butter in a saute pan over low heat. Add the onion and celery and cook for 20 minutes, or until the onion is cooked through but not brown. Set aside. Put the crackers in a large bowl, add the egg, the cooked onion and celery, the sage, roasted corn, chicken stock, salt, and pepper and mix well. To stuff and roast the pheasant: Preheat the oven to 375 degrees. Season the pheasant cavity with some of the salt and pepper, then put the stuffing inside. Truss with skewers or tie with butcher's twine. Season the bird with the remaining salt and pepper. Lay the bacon over the breast. Place the pheasant on a metal roasting rack set inside a roasting pan and place on the middle rack of the oven. Roast for 25 minutes, basting the legs once or twice with the pan juices. After 25 minutes raise the temperature to 450 degrees and finish the bird for 10 minutes more, or until golden brown with an internal temperature of about 140 degrees near the thigh. To prepare the sauce: While the pheasant is roasting, puree the corn kernels in a food processor. You should have about 2 cups of pure. Place in a small saucepan with the habanero. Bring the juice to 200 degrees. Do not boil or the sauce will break. Add the lime juice and salt. To serve: Let the bird rest for 5 minutes before carving. Take the bacon off the breast and carve the bird, dividing the breast and thighs. Serve with the corn sauce and sauteed leeks.

ROAST PHEASANT STUFFED WITH CHESTNUT BREAD DRESSING

4 cups finely cubed fresh white bread
2/3 cup finely diced celery
1 tablespoon finely chopped celery leaves
1/2 cup finely diced onion
1/2 teaspoon dried thyme
2 teaspoons dried crushed sage
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 1/2 cups peeled, cooked chestnuts, quartered
1/2 to 1 cup chicken broth, homemade or low-sodium canned

Steps:

  • Preheat oven to 375 degrees. Combine all ingredients except butter and pheasants with 1/2 cup of broth in a large bowl. Add 6 tablespoons of the butter. Stir until mixture is well combined.
  • Clean the insides of the birds well with a damp cloth. Fill each bird with as much of the dressing as it will comfortably hold. Pin or stitch the cavity closed. Place the remaining dressing in a casserole. Set aside.
  • Brush the remaining butter over the skin of each pheasant. Place pheasants in a large, deep roasting pan, breast side down. Cover. Roast for 30 minutes. Meanwhile, stir enough chicken broth into the remaining dressing to moisten it to your taste.
  • Reduce heat to 350 degrees. Uncover. Place dressing in oven with pheasants. Roast pheasants until juices run clear when pricked with a fork in the thickest part, about 30 additional minutes. Remove pheasants and dressing from oven.
  • Remove the birds from the pan. Let stand for 10 minutes. Cut each bird in half lengthwise. Serve, passing additional dressing separately.

1 pheasant (skin and split in half, lengthwise)
paprika (I always use Hungarian paprika if possible for best flavor)
2 -3 tablespoons butter
1 cup water
1 teaspoon instant chicken bouillon
1/2 cup orange marmalade
1/4 cup orange juice
1/4 teaspoon pumpkin pie spice (optional)

Steps:

  • Wash pheasant and pat dry.
  • Sprinkle on both sides with paprika.
  • Heat 2 tablespoons of butter in a skillet and cook pheasant on both sides till browned.
  • Add more butter if needed.
  • Mix water and bouillon and pour over pheasant.
  • Lower heat and cover and simmer for thirty minutes until tender.
  • Add water if needed and turn meat several times.
  • Combine remaining ingredients.
  • Let liquid on pheasant cook away and then baste orange sauce over the meat.
  • Simmer uncovered and baste frequently for 10-15 minutes.
  • Serves 2. Great served with rice.

I never knew him,but cousins have discovered his old recipes cooked for the Gentlemen Dinners for him and other professional members of community. I have made this for four servings.

4 pheasants, drawn
1/2 cup vinegar
4 slices lean bacon
4 small yellow onions, peeled & quartered
1 cup red wine or 1 cup rhubarb wine
1/2 cup butter
salt & pepper
1 dash sugar

Steps:

  • In a crockery bowl, add vinegar.
  • Add one pheasant at a time, and coat inside and outside with vinegar. Set on a plate to drain.
  • Rub pheasants with butter inside and out.
  • Place yellow onion quarters in each pheasant.
  • Place 4 slices of bacon in the bottom of a cast iron dutch oven.
  • Stoke the oven on medium to high heat.
  • Regular oven about 380*.
  • Salt and Pepper pheasants.
  • Place them on top of the bacon in dutch oven.
  • Roast uncovered for 30 minutes.
  • Taste the wine. If it is not sweet enough, add the dash of sugar and stir.
  • Baste the wine on the birds after they
  • have cooked for 20 minutes. Move them apart so that each side gets browned. Baste again.
  • in ten minutes.Use all the wine.
  • Check in 40 minutes with a fork, if juices run clear, pheasants are done. Throw away the bacon, or crush for another day and put in the larder. Wipe out dutch oven and hang.
  • Serve pheasants with roasted potatoes and poached apples.
