Categories     Buffet, Lunch, Main course, Supper

Time 1h20m

Yield Cuts into 8-10 slices

Number Of Ingredients 9

2 slices fresh white bread, crusts removed
500g pack minced pork
1 onion, roughly chopped
1 garlic clove, roughly chopped
big handful of parsley
1 tbsp fresh chopped oregano or 1 tsp dried
4 tbsp freshly grated parmesan
1 egg, beaten
8 slices prosciutto

Steps:

  • Heat the oven to 190C/fan 170C/gas 5. Put bread in processor and blitz to make crumbs, then tip into a bowl with the pork.

  • Pour hot water from the kettle into the roasting tray to come halfway up the loaf tin and bake for 1 hr until loaf shrinks from the sides of tin.
  • Cool in the tin for 10 mins, then drain off any excess liquid and turn out onto a board. Cut into thick slices and serve warm or cold with salad.

MEATLOAF RECIPE

Meatloaf recipe image

Recipe video above. Meatloaf is so much more than a giant hunk of ground beef in a loaf shape. It should ooze with flavour, be moist and tender yet not crumble apart when sliced. And the caramelised glaze is the crowning glory!

Provided by Nagi

Categories     Main

Time 1h30m

Number Of Ingredients 14

1 cup panko breadcrumbs ((Note 1))
1 large onion (, grated (brown, yellow))
1 kg / 2 lb ground beef (mince) (, preferably not lean)
2 eggs
3 garlic cloves (, minced)
1 tsp Worcestershire Sauce
1/4 cup tomato ketchup
1/4 cup chopped parsley ((optional), or 2 tsp dried parsley or basil)
1 tsp dried thyme
2 beef bouillon cubes (, crumbled or 2 tsp beef powder (Note 2))
1 tsp black pepper
1/2 cup tomato ketchup
2 tbsp cider vinegar
1 tbsp brown sugar (, lightly packed)

Steps:

  • Preheat oven to 180C/350F. Oil or spray a loaf tin. (Note 3)
  • Glaze: Mix together in a small bowl. Set aside.
  • Meatloaf: Place breadcrumbs in a very large bowl. Grate over onion. Mix so the breadcrumbs are all wet. (Note 4)
  • Add remaining ingredients. Mix well using your hands. Form into a loaf shape, pinching together then smoothing over creases and cracks (helps prevent cracks during baking).
  • Transfer into loaf tin. Brush generously with glaze, using about 1/2.
  • Bake for 45 minutes. Remove from oven and brush with most of the remaining glaze. If there is excess fat pooling, scoop/pour it off.
  • Bake for a further 30 minutes. Remove from oven.
  • Stand for 10 minutes before turning out and cutting into thick slices. You will probably get a bit of crumbling just on the edges of the first couple of slices, this is normal and indicative of the tenderness of the meatloaf (zero crumble indicates firm packed harder meatloaf which isn't as enjoyable!).
  • Ideal served with a dollop of ketchup, creamy mashed potatoes and steamed vegetables.

Meatloaf image

There's nothing more comforting than a gorgeous meatloaf made with top-quality meat, lightened up with festive flavours. It's a delicious, easy way to feed a big group of people. And when it comes out in a big tray it looks amazing, too.

Provided by Jamie Oliver

Categories     Christmas     Pork     Minced beef     Beef     Bread     Winter warmers

Time 2h

Yield 12

Number Of Ingredients 16

4 medium bulbs of fennel
olive oil
2 onions
2 carrots
½ a bunch of fresh sage (15g)
½ a bunch of fresh rosemary (15g)
1 x 125 g ball of mozzarella cheese
200 g sourdough breadcrumbs
1 kg higher-welfare minced pork
1 kg minced beef
2 teaspoons wholegrain mustard
2 large free-range eggs
12 rashers of higher-welfare smoked streaky bacon
500 ml organic chicken stock
2 tablespoons quality blackcurrant jam
1 tablespoon sun-dried tomato purée

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Trim each fennel bulb and chop into eight wedges, then place in a large roasting tray, drizzle with oil, season with sea salt and black pepper and roast for 30 minutes.
  • Meanwhile, peel and dice the onions and carrots, place in a large pan with 1 tablespoon of oil on a medium-low heat and cook for 20 minutes, stirring occasionally.
  • Pick the herb leaves, finely chop half of them and add to the veg pan, saving the rest for later.
  • Leave the veg to cool completely, then tear in the mozzarella and add the breadcrumbs, minced meat, mustard, eggs, and a good pinch of sea salt and black pepper. Scrunch and mix well, then shape into a loaf.
  • Make a space in the middle of the fennel tray and sit the meatloaf in the centre. Criss-cross the smoky bacon over the meatloaf, drizzle with a little oil, then cover the tray with tin foil.
  • Roast for 30 minutes, then remove from the oven and discard the foil.
  • Mix the chicken stock, jam and tomato purée together in a jug until smooth, then pour into the tray. Toss the reserved herbs with a little oil and scatter into the tray, then return to the oven for a final 45 minutes, or until cooked through.
  • If the juices need thickening at this stage, simply put the tray on the hob to reduce for a few minutes, until they're the consistency of your liking, skimming away any fat from the surface, if needed.
  • Serve the meatloaf, sweet fennel and juices with mash and seasonal greens.

THE MIGHTY MEATLOAF

The Mighty Meatloaf image

???? This is an ultimate meatloaf, comfort food at its best. This is an easy recipe by Jamie Oliver, but it incredibly delicious and flavorsome. ????‍???? First thing to do is to heat the pan and add some olive oil. Into the pan, tear up some sage and rosemary. Then, add 2 chopped onions and 2 chopped carrot

Provided by Super User

Time 1h25m

Number Of Ingredients 18

Ingredients:
Minced pork shoulder 1 kilo
Minced beef brisket 1 kilo
2 onions
2 carrots
4 fennel bulbs with tops
2 eggs
Smoked bacon 500 g
Bread crumbs 200 g
Mozzarella 1 ball
Chicken stock 500 ml
Sundried tomato paste 1 tablespoon
Black current jam 2 tablespoons
Fresh sage 20 g
Fresh rosemary 20 g
Olive oil
Salt
Black pepper

Steps:

  • First thing to do is to heat the pan and add some olive oil. Into the pan, tear up some sage and rosemary. Then, add 2 chopped onions and 2 chopped carrots. Add salt and black pepper. Slowly fry on a medium low heat for 20-25 minutes. Let it caramelize.
  • Next is a surprising star ingredient, which is fennel. Use 4 medium-sized fennel bulbs cut into wedges. Lay the bulbs in the bottom of the roasting pan. Then, add a few chopped fennel tops for extra flavor. Season them with salt and black pepper, then, drizzle some olive oil. Give it all a good toss. Roast your fennel for 30 minutes in the oven at 180 degrees C.
  • Next, take a mix of 1 kilo of minced pork shoulder and 1 kilo of minced beef brisket. Into the mince, add cooled down fried onions and carrots and 200 g of bread crumbs. Then, add 2 eggs and 2 teaspoons of grain mustard. To take the meatloaf to the next level, tear in a ball of mozzarella. Mix that a really good mix. Once mixed, form it into a loaf shape and lay it in your dish of half roasted fennel. Then, crisscross the rashes of smoked bacon. To keep it juicy, wet some greaseproof paper and cover your meatloaf.
  • Place your meatloaf into the oven at 180 degrees C and roast it initially for 30 minutes.
  • In 30 minutes, remove your meatloaf out of the oven and prepare a delicious sauce. Take 500 ml of chicken stock and 1 tablespoon of sundried tomato paste. Then, add 2 tablespoons of black current jam. Give it a good stir.
  • Pour the sauce over your meatloaf. Place some fresh sage and rosemary on top.
  • Place the meatloaf back into the oven for 45 minutes at 180 degrees C.
  • In 45 minutes the dish is ready.

ROAST MEAT LOAF OR "HEDGEHOG"

Roast Meat Loaf or

Provided by Food Network

Categories     main-dish

Time 2h15m

Yield 10 to 12 servings

Number Of Ingredients 18

8 ounces mushrooms, sliced
Butter
Salt
Freshly ground black pepper
Grated nutmeg
8 ounces chicken livers
1 pound each ground beef, ground pork, ground veal
1 pound sausage meat
1 large onion, grated
3 fat cloves garlic, crushed to a paste
10 juniper berries, crushed
1 teaspoon ground allspice
Fresh thyme sprigs
1 to 2 eggs
8 ounces unsmoked bacon
Bay leaves
Branches of fresh rosemary
Tomato sauce, for serving

Steps:

  • Preheat the oven to 450 degrees F.
  • Saute the mushrooms in butter until the juices run, then season with salt and pepper and nutmeg. Reserve.
  • Remove the sinews from the livers and slice. In a large bowl combine all the ground meats, sausage, livers, onion, garlic, and juniper berries. Add the allspice and thyme leaves. Season with salt and pepper. Beat the eggs and add to the mixture together with the mushrooms. Mix with your hands thoroughly.
  • Oil a roasting pan and place all the mixture in it, molding it into an oval shape. Adorn with the bacon slices, criss-crossed, tucking the ends under the meat. Strew some bay leaves and branches of rosemary on the top and sides. Cook in the preheated oven for 15 minutes, then lower the heat to 350 degrees and cook for 1 1/2 hours.
  • When cooked, there will be lots of lovely juices in the bottom of the pan. Save them to flavor soup, stocks, or eggs. Remove the loaf and place on a serving dish. Serve hot or cold with a tomato sauce.
  • For children, you might like to turn it into a hedgehog by pressing almonds into the meat to create prickles and placing 3 olives to form eyes and a nose. This should be done before the meat goes into the oven.
