2 teaspoons cornstarch
1/2 cup fat-free milk
4 boneless skinless chicken breast halves (4 ounces each)
1 tablespoon olive oil
1 tablespoon butter
1/2 pound sliced fresh mushrooms
1/2 medium onion, thinly sliced
1/4 cup sherry or chicken broth
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Mix cornstarch and milk until smooth. Pound chicken with a meat mallet to 1/4-in. thickness., In a large nonstick skillet, heat oil over medium heat; cook chicken until no longer pink, 5-6 minutes per side. Remove from pan., In same pan, heat butter over medium-high heat; saute mushrooms and onion until tender. Stir in sherry, salt and pepper; bring to a boil. Stir cornstarch mixture and add to pan. Return to a boil; cook and stir until thickened, 1-2 minutes. Return chicken to pan; heat through.

4 skinless chicken breasts
1 tbsp plain flour, seasoned
150ml chicken stock (use ½ a cube)
250g pack chestnut mushroom, halved
few thyme sprigs, leaves only
150ml red wine
1 tbsp mild olive oil or vegetable oil

Steps:

  • Toss the chicken in the flour, then tap off the excess. Mix 1 tsp of the excess flour with a little stock and set aside. Heat the oil in a frying pan, then add the chicken, mushrooms and thyme. Cook over a medium-high heat for about 5 mins, turning the chicken breasts over once until golden.
  • Lift the chicken out, then set aside. Pour in the wine and the remaining stock and boil for 5 mins or until reduced by half. Add the flour and stock mix, stirring until the sauce thickens a little. Put the chicken back into the pan, along with any juices from the plate, then simmer for 5 mins or until cooked through and the sauce is glossy. Serve with mash.

The boneless, skinless chicken breast is as simple to prepare as a burger, nearly as ubiquitous and generally seen as both classier and "healthier." But in the kitchen, it has two major shortcomings. First, its intrinsic flavor is minimal, more akin to pasta than to even an egg. (An egg is exciting by comparison.) Second, preparing a burger isn't that simple: unless you're looking for well done, you have to get the timing just right. In preparing chicken breasts, the cooking time should be just long enough for all but the last traces of pink to vanish - and no longer. The breast can be done in as little as six minutes, for a thinnish one subjected to high heat, or it might take as long as 10 minutes or even a bit more - but never 20, unless you are cooking the thing on a radiator. Overcooking is easy, and the results are predictably undesirable. Here's a simply wonderful way to prepare the humble breast with just a little wine (practically any kind will do) and mushrooms.

  • Season chicken breasts with salt and pepper. Put a large skillet over medium-high heat for 2 or 3 minutes.

  • Add the remaining tablespoon of butter and cook until the sauce is thickened; return the chicken breasts to the skillet, turn them in the sauce. Season to taste with salt and pepper and serve.
  • Garnish with chopped parsley.

1 tbsp olive oil
8-oz mushrooms, sliced
Kosher salt, to taste
2 cloves garlic, crushed
1 lb boneless, skinless chicken breasts
1/2 cup chicken stock
1/2 cup good red wine
dash of cracked black pepper
1 tsp cornstarch

Steps:

  • Heat the olive oil in a large skillet over medium heat for five minutes. Add the mushrooms and season lightly with the kosher salt. Cook for 2-3 minutes, until the color just starts to change. Add the minced garlic and cook for another couple of minutes.
  • Season the chicken on both sides with the Kosher salt and cracked black pepper. Push the mushrooms and garlic to one side of the skillet and add the chicken, and cook, for about 3 minutes per side.
  • Add the chicken stock and wine. Cover and cook for another 15 minutes.
  • Transfer the chicken to a serving plate and keep warm. Stir 1 tsp of cornstarch into the pan and cook the liquid until thickened. Spoon the sauce and the mushrooms over the chicken.
  • Serve with pasta or a side salad for a delicious and easy meal.

  • Melt butter in a large heavy Dutch oven or skillet over medium heat.

  • Preheat oven to 475 degrees F.

Kosher salt and freshly ground black pepper
1/2 red onion, quartered
1/2 lemon, cut into 4 pieces
1/2 head garlic, about 6 cloves, smashed
1 bunch fresh thyme
1 1/2 tablespoons extra-virgin olive oil, plus more for drizzling
1/2 pound sliced bacon, cut in 1/2
3 pounds whole cremini mushrooms, wiped clean with a damp towel

Steps:

  • Heat the oven to 400 degrees F.
  • Pat the chicken dry with paper towels. Season the cavity with salt and pepper.
  • In a large bowl combine the onion, lemon, garlic, half the thyme, and 1 1/2 tablespoons olive oil; season with salt and pepper and mix it well. Stuff the bird with the mixture. Using 2 (3-foot) pieces of kitchen twine, tie up the chicken: Tuck the wing tips between the wings and the body. Put the midpoint of the twine under the chicken, bring the ends up and around the wings, and pull them tight against the body. Bring the ends of the twine up underneath the legs, wrap the string around them, pull the legs together, and tie them tightly. Place the chicken, breast side up in a roasting pan, and layer the strips of bacon up breast until covered.   • Make the butter: When the butter has softened, combine it with the 2 cloves minced garlic, sage, parsley, salt and pepper. Work at it vigorously with a sturdy spoon and it will soon be blended into a nice consistency with the ingredients well distributed. You can microwave the butter for 5 or 10 seconds if it hasn’t softened enough to work with.
  • Prep the chicken: Have a large roasting pan ready. Rinse the chicken and pat dry, and place on a cutting board to do the prep. Use your fingers to lift up the skin on the breast a bit. Take about 2 tbsp of butter and insert under the skin, rubbing into the breast meat.
  • Rub the remaining butter all over the skin, making sure the chicken is thoroughly coated. Insert the smashed garlic, lemon and any remaining butter into the chicken cavity.
