2 Roma tomatoes, chopped
⅓ cup chopped red onion
¼ cup chopped cilantro
3 tablespoons lime juice
½ teaspoon cumin
4 ears corn, husk and silk removed
2 jalapeno peppers, halved and seeded
2 tablespoons olive oil
salt and pepper to taste

Steps:

  • Combine tomatoes, onion, cilantro, lime juice, and cumin in a large bowl.
  • Preheat an outdoor grill to medium heat and lightly oil the grate.
  • Coat corn and jalapeno peppers with olive oil.
  • Place corn and jalapenos on the preheated grill and cook, turning every 3 minutes, until corn is charred, about 15 minutes total. Transfer to a cutting board and let cool 5 minutes.
  • Dice jalapenos and cut corn kernels from the cob. Add jalapenos and corn kernels to the bowl of tomato-onion mixture; stir until well combined. Season with salt and pepper.

I invented this recipe out of a need for a way to use the surplus cucumbers from a friend's garden this summer. I had never heard of someone roasting cucumbers, and a quick internet search turned up nothing, so I thought it would make an interesting culinary experiment. As it turned out, though, I discovered a new family favorite! This fast and easy recipe makes a great side dish for any occasion. Great with chicken or steak! I've even eaten it by itself for a light lunch. What more could you ask for?

olive oil cooking spray
2 tablespoons butter, cut into small chunks
1 large cucumber - peeled, seeded, and cut lengthwise into spears
1 small sweet onion (such as Vidalia®), cut in half and sliced
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh cilantro
1 teaspoon chopped fresh mint

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with aluminum foil. Spray the foil with olive oil cooking spray.
  • Spread pieces of butter into the baking sheet and lay cucumber spears over the butter. Top with slices of sweet onion and scatter basil, parsley, cilantro, and mint over the top. Spray the vegetables again with olive oil cooking spray.
  • Roast cucumber mixture in the preheated oven until cucumber spears begin to soften, about 10 minutes. Turn the cucumbers and onion slices over and return to oven; roast until cucumbers are tender, 15 to 20 more minutes.

It's quick easy and they said it only contains 150 calories.I prefer it with coriander. I usually prepare the salsa in advance so the spices work through, but you can eat it straight away. Also good on top of potatoes with sour cream, chicken breast and salmon. Try it with maple salmon #468".

1 tablespoon sweet chili sauce, for chicken

Dressing
1/4 cup fresh lime juice
1/4 cup chopped fresh cilantro
1 tablespoon chopped canned chipotle chilies in adobo sauce
2 large garlic cloves, pressed
1 cup olive oil
Salsa
2 ears fresh corn, husked
4 plum tomatoes, seeded, chopped
1 cup chopped peeled jicama
1/2 cup chopped red onion
1/4 cup chopped fresh cilantro
Steak
1 1/2 tablespoons fresh lime juice
1 tablespoon ground cumin
1 tablespoon chili powder
3 large garlic cloves, pressed
2 pounds beef tenderloin steaks (1 inch thick)
Assembly
1 avocado, halved, peeled, pitted, diced
10 cups mixed baby greens
2 small mangoes, peeled, pitted, thinly sliced
*Available at Latin American markets, specialty foods stores and in the Latin section of some supermarkets.

Steps:

  • For dressing:
  • Whisk first 4 ingredients in medium bowl in blend. Gradually whisk in oil. Season with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate.
  • For Salsa:
  • Blanch corn in large pot of boiling salted water 2 minutes. Drain. Cool. Cut corn from cob. Transfer corn kernels to large bowl. Add tomatoes, jicama, onion and cilantro and mix. (Can be prepared 6 hours ahead. Cover and chill.)
  • For steak:
  • Combine first 4 ingredients in small bowl. Spread spice paste over both sides of steaks. Cover and refrigerate at least 2 hours or up to 6 hours.
  • For Assembly:
  • Prepare barbecue (medium-high heat). Grill steaks to desired doneness, about 5 minutes per side for medium-rare. Transfer steaks to cutting board and let stand 5 minutes.
  • Meanwhile, add avocado and 2 tablespoons dressing to salsa and mix. Season to taste with salt and pepper. Place greens in large bowl and toss with enough dressing to coat. Divide greens equally among 6 plates. Fan some mango slices on 1 side of each salad. Top each salad with 1/2 cup salsa.
  • Thinly steaks crosswise. Arrange atop greens. Serve, passing remaining dressing separately.

4 large ears of corn (yellow sweet corn to yield 2 1/2 cups cut corn)
1/2 cup finely chopped red onion
1 1/2 cups finely chopped ripe tomatoes
1 1/2 jalapeno peppers, seeds removed and finely chopped
1/4 cup finely chopped fresh cilantro
1 tablespoon olive oil
1 tablespoon fresh lime juice
1/2-1 teaspoon ground cumin
1/8 teaspoon salt
ground pepper, to taste

Steps:

  • Inspect corn on the cob and remove a few outer leaves and as much silk as possible without completely removing husk. Wash and place on baking sheet, partially covered with aluminum foil, and bake on the middle rack in a preheated 375º F oven for 45 to 55 minutes.
  • Once corn is roasted, remove baking sheet and allow corn to cool. Peel ears, removing all silk. If desired, place ears over an open flame (grill or gas stove), turn often, until somewhat colored. Cool completely and cut kernels from ear. Corn should measure at least 2 ½ cups.
  • Combine corn with chopped onion, tomato, jalapeño pepper, and cilantro. Add olive oil and mix well. Add lime juice and cumin to taste; then stir in salt and ground pepper. Cover and chill, allowing flavor to blend for about 15 minutes, or more. This recipe may be made in advance but is best served the same day.

1 boneless beef chuck roast (3-1/2 to 4 pounds)
1/4 teaspoon garlic salt
1/4 teaspoon pepper
1 tablespoon canola oil
1 jar (24 ounces) salsa
1 cup water
1 small onion, chopped
1 jalapeno pepper, seeded and finely chopped
1 envelope taco seasoning
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • Sprinkle roast with garlic salt and pepper. In a large skillet, heat oil over medium heat; brown roast on all sides. Transfer meat to a 5-qt. slow cooker. In a small bowl, combine salsa, water, onion, jalapeno and taco seasoning; pour over roast. Cook, covered, on low until meat is tender, 6-7 hours., Remove roast from slow cooker; tent with foil. Let stand 15 minutes before slicing. Reserve 2 cups cooking juices from slow cooker; discard remaining juices. Skim fat from reserved juices., Transfer to a small saucepan; bring to a boil. In a small bowl, mix cornstarch and water until smooth; stir into salsa mixture. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Serve with roast.

Beef Teriyaki With Cucumber Salsa image

This is a nice light red meat recipe. It is very low fat, I would recommend using lean cuts of beef in smallish serving sizes. It is incredibly quick once you have marinaded the steak, and the cucumber salsa can be prepared up to a day before. This makes quite a bit of salsa, we eat it on the side as well. Marinade time is not included in the time to make. As you can see in the picture, Bethany has elected to make this more family friendly by using flank steak. This is a nice variation on my more steak style version which would be easier if you were serving only a few people.

2 scotch steak fillets
40 ml soy sauce
2 tablespoons sherry wine
2 cloves garlic, crushed
1 teaspoon grated fresh ginger (I have used jarred)
2 teaspoons sugar
1 large lebanese cucumber, seeded
1/2 red capsicum (bell pepper)
2 spring onions
2 teaspoons sugar
1 tablespoon rice wine vinegar
1/2 lemon, juice of
2 teaspoons roasted sesame seeds (for garnish)

Steps:

  • Combine ingredients for marinade.
  • Immerse steak in marinade, turning to coat.
  • Refrigerate at least half an hour.
  • Peel cucumber and dice into 1cm cubes.
  • Slice capscicum into strips and then across ways to be about the same size as the cucumber.
  • Slice spring onions on the diagonal (make sure you use some of the green bit) Combine in a salad bowl.
  • In a small saucepan, combine the sugar, vinegar and 2 tbs water.
  • Boil, stirring until the sugar has dissolved, and them simmer for 2 minutes, or until it has thickened slightly.
  • Squeeze in the lemon juice.
  • Allow to cool for a few minutes, and then poor directly over the salsa.
  • Cook the meat to your liking.
  • Retain the marinade.
  • I use the GF and have it rare.
  • Allow it to rest at least 10 minutes.
  • Slice the steak into thin strips, retaining the shape of the steak.
  • Boil the marinade for 3 minutes to remove any bacteria.
  • Keep warm until serving.
  • Serve the steak on a bed of plain rice.
  • Top with some reserved marinade, and the salsa and finally with the sesame seeds.
