  • Clean the ribs and trim off any excess fat if needed. Pat-dry with paper towels. Then cut tiny slits in the meat part of the ribs and place them in a large dish (you may need to use two dishes if you don’t have one that is large enough to hold all the rib pieces).
  • Combine the garlic, ginger, red & green chilies, Greek yogurt, black pepper, kosher salt, garam masala, ground cayenne (or Kashmiri red chili powder), lemon juice, tandoori color powder, and water in a blender jug. Blend until smooth. Reserve about 1 cup of the marinade and cover and refrigerate. (It’s for making the Tikka Masala Dip later.)
  • Pour the remainder marinade in the blender jug over the ribs, and turn them to coat fully with the marinade on all sides. Cover with cling wrap (or the dish cover) and refrigerate for 5-6 hours, or overnight for maximum flavor and best results.
  • Remove the ribs from the fridge at least 40 minutes before you plan to cook, and preheat the oven to 200°C/400°. Place a wire rack on top of a baking sheet, then break a large sheet of heavy duty aluminum foil and place it on top of the wire rack.

  • Preheat the oven to 325°. In a small skillet, toast the coriander and cumin seeds over moderately high heat, shaking the pan constantly, until fragrant, about 2 minutes. Transfer the seeds to a spice grinder and let cool. Add the peppercorns, ginger, cardamom, cinnamon, cloves, crushed red pepper and bay leaves and pulse the garam masala to a powder.
  • In a large enameled cast-iron casserole, heat the oil. Season the short ribs with salt and sear them over high heat until browned and crusty all over, about 15 minutes. Transfer the meat to a plate.
  • Add the onion, carrots and celery to the casserole and cook over moderate heat until lightly browned, about 7 minutes. Add the tomatoes, garlic and 3 tablespoons of the garam masala (there will be extra) and cook until fragrant and the tomatoes are beginning to break down, about 3 minutes. Add the wine and boil until reduced by half, scraping up any browned bits stuck to the casserole, about 5 minutes. Add the stock and bring to a simmer. Return the meat to the casserole and season with salt. Cover and braise in the oven for about 2 hours, until just tender but not falling apart.
  • Transfer the meat to a baking sheet. Strain the liquid into a saucepan. Skim off and discard the fat that rises to the surface. Boil over high heat until the sauce is reduced to 1 cup, about 15 minutes.

  • In a blender, combine the garlic, ginger and red wine and puree. Scrape the wine puree into a medium bowl and stir in all of the remaining ingredients except the short ribs. Pour the marinade into 2 resealable plastic bags and add the short ribs. Tightly seal the plastic bags and refrigerate the short ribs in the marinade for 3 days.
  • Light a grill. Remove the short ribs from the marinade, scraping off any excess. Grill the short ribs over moderately high heat until they are lightly charred and medium-rare, about 5 minutes per side. Serve the short ribs with the Celery Root and Apple Slaw on the side.
