1 (2 to 2 1/2-pound) sirloin tip or chuck beef roast
3 tablespoons olive oil
4 Roma tomatoes, cut in 1/2
2 teaspoons herbs de Provence
Kosher salt and freshly ground black pepper
1 1/2 cups fresh flat-leaf parsley
2 garlic cloves
1/2 teaspoons red pepper flakes
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
2 tablespoons red wine vinegar
1/2 cup extra-virgin olive oil

Steps:

  • To make the beef roast, preheat the oven to 375 degrees F.
  • Season the beef with salt and pepper. Season the tomatoes with salt, pepper, and herbs de Provence.
  • Place a medium, heavy roasting pan or Dutch oven over high heat. Heat the olive oil. Sear the beef over high heat on all sides. Turn off heat. Place the seasoned tomatoes around the seared beef and place the pan in the oven. Roast until a meat thermometer reads 130 degrees F. for medium rare, 135 for medium, about 30 to 40 minutes. Take the roast out of the oven, tent loosely with foil, and let rest for 10 to 15 minutes. The internal temperature of the meat should rise 5 degrees F more and the juices will redistribute into the roast.
  • To make the sauce, place the parsley and garlic in a food processor and pulse until the parsley is finely chopped. Add the red pepper flakes, salt, red wine vinegar and the roasted tomatoes from the beef pan and process until pureed. Add the olive oil in a steady stream with the machine running.
  • To serve, slice the roast and place on a serving platter. Drizzle a little sauce over the meat. Serve the remaining sauce in a small bowl alongside.

2 slices Italian bread (e.g. Ciabatta)
2 slices roast beef
3 -4 tomatoes, slices
6 basil leaves
1 slice cheddar cheese
1 tablespoon wasabi mayonnaise
olive oil flavored cooking spray
salt and pepper

Steps:

  • On one of the slices, spray a little olive oil and grind some black pepper on top. Place basil leaves, then roast beef slices, and cheese on that slice.
  • On the second slice, lightly spread some wasabi mayonnaise.
  • Put both slices separately in the toaster oven and bake until the cheese melts.
  • When the sandwich is done toasting, place tomato slices on the cheese and top it off with the second slice of bread.
  • Cut into halves and serve!

  • Cook meat in Dutch oven or large deep skillet sprayed with cooking spray on medium-high heat 3 to 5 min. on each side or until evenly browned on both sides.

1/2 cup Spicy Tomato Chutney or bottled tomato chutney
6 large thin slices rare roast beef (about 1/4 pound total)
16 fresh basil leaves
8 arugula leaves
Garnish: arugula and fresh basil leaves

Steps:

  • Quarter lavash and spread 1 side of each quarter evenly with 1 tablespoon chutney, leaving a 1/2-inch border all around. Steps:

  • Preheat the oven to 375°F.
  • Season the beef with salt and pepper. Season the tomatoes with salt, pepper, and herbes de Provence.
  • Heat the olive oil in a medium, heavy roasting pan or Dutch oven over high heat. Sear the beef on all sides until browned. Place the seasoned tomatoes around the seared beef and place the pan in the oven.   • To Serve
  • Slice the roast and arrange on a serving platter. Drizzle a little sauce over the meat. Serve the remaining sauce in a small bowl alongside.

The best cut of roast beef for sandwiches isn't necessarily the same as what you'd want hot from the oven. A hot roast demands plenty of marbling so that the rich fat can melt and baste the meat with its goodness. Roast beef sandwiches work better made from a leaner cut, preferably one with a mineral, earthy taste and a nice chew. A top loin roast is ideal. It's got plenty of brawny flavor, and all of the fat is on the surface, which you can easily trim off after the meat is cooked. Here, the beef is roasted low and slow to ensure rare, juicy meat. This said, if you want a more economical cut, use bottom, top or eye round here instead. Just adjust the roasting time if the cut is larger or smaller.
