Steps:
- In a small mixing bowl, combine soy sauce, rice vinegar, ginger, garlic, Chinese five spice, black pepper, red pepper flakes, sugar, and sesame oil. Whisk together well. Add in half of the green onions. Put half of the marinade in a small sauce pot and whisk in the corn starch.
- Place the trimmed pork tenderloin in a ziplock baggie and pour in the remaining marinade. Massage the marinade into the pork and refrigerate for one hour or overnight.
- When ready to cook, preheat oven to 375 degrees. Remove pork from the refrigerator and let it get to room temperature. Heat a heavy cast iron skillet or oven-proof pan on high until slightly smoking. Add the pork tenderloin to the pan and sear both sides, about 2 minutes.
- Transfer the pan to the oven and cook for 20-25 minutes, until an internal temperature reads at least 145 degrees. Let the pork rest for 5-10 minutes before slicing.
- Meanwhile, bring the reserved marinade to a roiling boil. Lower the heat to low and thicken sauce for 2 minutes. Pour the sauce over the pork. Sprinkle the pork with the remaining green onions.
- Serve with a side of your favorite rice.

5-SPICE PORK AND FRIED RICE
The inspiration for this dish came from when I was attending college back at home in Ireland and I would always order a 5-spice chicken with noodles at a lunch spot in between classes. Ever since then I've just loved the sweet, spicy and earthy flavor of 5-spice; it also pairs beautifully with pork.

Steps:
- Preheat the oven to 450 degrees F. Line a rimmed baking sheet with parchment paper.
- Combine the hoisin sauce, soy sauce, brown sugar, vinegar and 5-spice powder in a small saucepan. Cook over medium heat, stirring, until the sugar dissolves, 2 to 3 minutes. Set aside and let cool.
- Put the tenderloin on the prepared baking sheet. Brush all over with the sauce and roast in the oven until the internal temperature on an instant-read thermometer reaches 140 degrees F, 15 to 20 minutes. Slice 1/2-inch thick.
- While the pork is roasting, heat 1 tablespoon of the sesame oil in a large nonstick skillet. Cook the eggs, stirring with a silicone spatula, until softly scrambled, 1 to 2 minutes. Remove and set aside.
- Add the remaining 1 tablespoon sesame oil to the same skillet. Add the shallots and garlic and cook, stirring, until translucent, 1 to 2 minutes. Add the rice and cook, stirring often, 2 to 3 minutes. Add the oyster sauce and cook, stirring often, about 2 minutes. Add the corn and peas and stir together. Add the soy sauce and the cooked eggs and cook, stirring often, until the corn and peas are warmed through, about 2 minutes. Remove from the heat, stir in the chopped cilantro and set aside.
- Spoon some fried rice in the center of each plate, top with 2 to 3 slices of pork, some of the nuts and cilantro leaves and serve.

MINUTE RICE FIVE SPICE CASSEROLE
Back around 1950, my grandmother found the recipe off the back of the Minute Rice box. Since then, it has become a family favorite, that we all request at some point in time. It is rather easy, and we usually serve it with cole slaw as the side dish. Plus, it makes wonderful leftovers!

Steps:
- Brown meat in oil, add onions and cook until tender.
- Stir in seasonings, soup, tomatoes, and Minute rice.
- Simmer 5 minutes.
- Stir occasionally.
- Spoon into 1 1/2 quart baking dish. (But I only use a cast iron skillet, since it is both oven and stove top friendly. Plus, my Grandmother always made it in a cast iron skillet, and I did learn from her. She was the best cook for comfort foods.).
- Criss cross with cheese and broil until cheese melts.
- Garnish with olives if desired.
- Instead of olives, we sometimes use jalepenos.
- Also, this recipe works well when you cook it in a cast iron skillet- you only dirty one dish that way!
5 SPICE BEEF & RICE
This recipe came from my husband's grandmother, and we modified it a little bit to make it gluten and dairy free. As a kid this was my husband's favorite meal, and he used to walk around singing a little song about it "5 Spice Beef and Rice, Cha Cha Cha!" The five spices are pepper, bay leaf, garlic, thyme and oregano. It's very easy to make, and a good dinner staple.
