1 French bread baguette (1 pound)
3 tablespoons olive oil
1 garlic clove, minced
1 cup blue cheese salad dressing
1 medium pear, diced
1/4 cup thinly sliced green onions
2 cups cubed cooked roast beef
1 cup diced seeded tomatoes
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup fresh basil leaves, thinly sliced

Steps:

  • Cut baguette into 40 slices. Combine oil and garlic; brush over one side of each slice of bread. Place on an ungreased baking sheet. Bake at 350° for 6-9 minutes or until lightly toasted., Combine the salad dressing, pear and onions. Combine the roast beef, tomatoes, salt and pepper. Spread dressing mixture over toasted bread; top with beef mixture and basil.

BEEF CROSTINI WITH RED PEPPER MAYONNAISE

36 slices (1/2-inch thick) baguette bread
4 tablespoons extra-virgin olive oil
2/3 cup roasted red peppers, preserved in water, drained well and patted dry
1/3 cup mayonnaise
Salt and freshly ground black pepper
1 (1 1/2-pound) piece beef tenderloin, trimmed
3 tablespoons drained capers, chopped
Coarse sea salt, to serve

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bread slices on 2 heavy large baking sheets. Drizzle 3 tablespoons oil over the bread slices. Bake until the crostini are pale golden and crisp, about 15 minutes.
  • Blend the bell peppers and mayonnaise in a food processor until smooth and creamy. Season the bell pepper mayonnaise, to taste, with salt and pepper. Cover and refrigerate.
  • Tie the beef with kitchen string to help maintain its shape. Season the beef with salt and pepper. Heat the remaining 1 tablespoon oil in a heavy small skillet over medium heat. Add the beef to the skillet and cook until brown and cooked to desired doneness, about 8 minutes for rare. Freeze the beef until it is just frozen (this will make it easier to slice), about 3 hours. Using a large sharp carving knife, cut the beef into thin slices.
  • Spread the bell pepper mayonnaise over the crostini and top with the sliced beef. Arrange the crostini on a platter. Scatter over the capers, sprinkle with the coarse sea salt, and serve.
  • Do-Ahead Tip: The bell pepper mayonnaise and sliced beef can be made 1 day ahead. Cover separately and refrigerate.
  • Alternative: If desired, the beef tenderloin can be substituted with 1 pound freshly sliced roast beef. Since the roast beef is already cooked and can be used as is, it makes a great time-saving alternative.

Pear & gorgonzola crostini, perfect vegetarian buffet finger-food

2 small firm pears , unpeeled
2 tbsp clear honey
150ml port
150ml red wine
1 French bâton or baguette (30cm/12in long)
2 tbsp extra-virgin olive oil
200g gorgonzola , at room temperature
mustard and cress, to garnish

Steps:

  • Halve and core the pears, then cut each one into 12 small wedges. Place in a heavy-based saucepan with the honey, port and wine. Cook for 5-10 minutes or until the pears are just tender when pierced with the tip of a sharp knife (they shouldn't be soft).
  • Carefully tip the pears into a sieve set over a small saucepan and allow them to drain thoroughly.
  • Reduce the liquid in the saucepan by two-thirds - it should have a syrupy consistency like runny honey. This will take 10-12 minutes. Pour the syrup into a small bowl and allow to cool while you prepare the bruschettas.
  • Preheat the grill to hot. Cut the bread into 24 slices and brush both sides of each slice with olive oil. Grill until the bruschettas are golden on both sides. This only takes a minute, so keep watch.
  • Spread each bruschetta with a little gorgonzola and top with a poached pear wedge. Arrange the bruschettas on a serving plate and drizzle with the port syrup using a teaspoon. Sprinkle over a little mustard and cress.
  • Prepare ahead: you can poach the pears the day before and serve them cold - they're just as nice. Take them out of the syrup and reduce, then store the pears and syrup in separate plastic containers in the fridge. If the syrup is too thick the next day, add a little warm water, and if it is too thin, you can reduce it by simmering for a minute or two.

2 garlic cloves, pressed
16 ounces French bread
3/4 lb roast beef, thinly sliced
1 (12 ounce) jar roasted red peppers
2 cups grated cheese

Steps:

  • In a glass measuring cup combine oil and the pressed garlic and microwave on high for thirty seconds.
  • Slice bread into 1/2" thick slices.
  • Lightly brush top side of each slice of bread with the oil mixture and arrange on two baking sheets.
  • Bake in a preheated oven 450 degrees for 6-8 minutes or until lightly golden brown.
  • Rinse roasted peppers and drain well and chop.
  • Remove from oven and layer equal amounts of beef, pepper and cheese over each toasted slice.
  • Bake for 2-4 minutes more or until cheese is melted.
  • Serve.
