RITA'S SWEET HOLIDAY BAKED HAM
This is my mom's holiday ham recipe. She would cook this easy recipe on my birthday. Made with maraschino cherries, sliced pineapples, brown sugar, honey and much more yummy ingredients. You'll love this ham dinner, and it's not just for the holidays, but great any time of year!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix together the maple syrup, orange juice, ginger ale, brown sugar and honey. Stir in the juice from the maraschino cherries, and half of the cherries. Score the outer edge of the ham with a sharp knife in a diamond pattern. Cuts should be about 1/4 inch deep. This will allow the ham to soak up the juice.
- Place the ham into an oven bag, and carefully pour the juice mixture over it, keeping all of the juice in the bag. It may look like there is too much juice, but the ham will soak it up while baking. Place the pineapples onto the top of the ham, and secure with toothpicks. Place cherries into the centers of the rings, and secure with toothpicks also. Tie the end of the bag closed with the ties provided, place in a large roasting pan, and cut a few small slits in the top of the oven bag.
- Bake the ham for 2 hours in the preheated oven. The internal temperature should be 160 degrees F (80 degrees C) when done. Be sure not to touch the bone when taking the temperature. Remove ham from bag to a serving plate, and let stand for 10 minutes before carving.

GLAZED HOLIDAY HAM
This is the ham that led directly to whatever childhood memory caused someone to combine ham and pineapple on a pizza. The sweet, slightly fiery and herbaceous crust on this salty haunch practically calls out for a garnish of caramelized pineapple, if not a spray of maraschino cherries. Others may reverse course and apply mustard. Either way, it is good to serve with a nutty wild rice or potatoes au grain, something with backbone.

- Heat oven to 325 degrees. Place the ham on a rack in a large roasting pan. Score the ham diagonally left to right, then right to left, to create a diamond pattern across the meat. Stud each diamond with a whole clove.
- Add a cup or two of water to the bottom of the pan, then bake the ham, uncovered, 25 minutes to the pound if it is ready-to-cook, about half that if it is ready-to-eat.
- Combine the mustard and the brown sugar in a bowl, then add the sherry to make a thick paste. Spread the mixture over the ham approximately 20 minutes before it is ready to remove from the oven, then bake until crust has formed.

- In a large saucepan, heat olive oil over medium heat. Add onions; saute until softened and lightly browned, 5-6 minutes. Add garlic; cook 1 minute more. Pulse onions, garlic and pineapple preserves in a food processor or blender until smooth. Return to pan. Add next 10 ingredients. Bring to a boil over medium heat; cook, stirring constantly, until sauce reaches desired consistency, 10-15 minutes. Remove from heat and cool slightly., Reserve 1/2 cup sauce; spread remaining sauce generously over both sides of ham steaks. Refrigerate, covered, 1-2 hours., Grill ham steaks, covered, on a greased grill rack over medium direct heat, turning and brushing frequently with reserved sauce, until heated through, 10-15 minutes.

HOLIDAY HAM WITH RIESLING AND MUSTARD

- Arrange a rack in lowest level of oven; preheat to 300°F. Leaving fat intact, remove outer rind from most of ham, leaving a band around the end of the shank bone. Score fat crosswise (do not cut into meat) on top of ham with parallel cuts spaced 1/2" apart. Place ham in a large roasting pan. Boil 1 cup Riesling and 7 cups water in a saucepan for 5 minutes. Pour into bottom of roasting pan. Bake ham, basting with pan juices occasionally, until an instant-read thermometer inserted into center of ham registers 110°F, 2 1/2-3 hours.
- Meanwhile, melt butter in a medium skillet over medium heat. Add shallots and thyme sprigs; cook, stirring often, until shallots are very soft, about 10 minutes. Remove pan from heat; stir in the remaining 1 cup Riesling. Return to stove. Increase heat to medium-high, bring to a simmer, and cook until reduced to 1/4 cup, about 8 minutes. Remove the thyme sprigs and transfer mixture to a food processor. Add thyme leaves, mustard, honey, pepper, and salt. Process until well blended.
- Remove pan from oven and increase heat to 350°F. Using a pastry brush, spread Riesling mixture over ham. Return pan to oven and bake ham, tenting with foil if browning too quickly, until internal temperature registers 135°F and crust is golden brown, 15-30 minutes.
- Transfer ham to a large platter. Let rest for 30 minutes before carving. Skim fat from pan juices, reheat, and pour juices into a medium pitcher; serve alongside.

- 1. Slice the skin from the ham. Score the fat on the ham in a diamond design and stud with cloves.
- 2. Inject 1/2 cup liqueur into ham, at 3-inch intervals.
- 3. Combine the brown sugar and the next 7 ingredients in a medium saucepan; stir well. Bring to a boil; reduce heat, and simmer for 2 minutes. Set the glaze aside.
- 4. Place the ham, fat side up, on a rack in a shallow roasting pan; pour the brown sugar mixture over the ham.
- 5. Insert a meat thermometer, making sure it does not touch fat or bone.
- 6. Cover and bake at 325 degrees for 2 1/2 hours, basting frequently with glaze.
- 7. Arrange the orange slices over the exposed portion of the ham; secure with wooden picks. Place a cherry half in the center of each orange slice.
- 8. Bake, uncovered, an additional 30 minutes or until thermometer registers 140 degrees.

- Mix the sugar, mustard & coke.
- Spray roasting pan with non stick spray.
- Line roasting pan with heavy duty aluminum foil.
- Spray foil with non stick spray.
- Wash Ham.
- Score ham with knife.
- Place ham flat side down.
- Baste the ham with glaze.
- Drizzle a little honey over top of ham
- Place pineapple slices on ham and secure with toothpicks.
- Wrap ham tightly with foil resembling a tent.
- Bake ham at 250.
- 1 hour per pound.
- Baste ham throughout cook time if possible.
- Save the gravy that is cooked off the ham and when ham is cut pour gravy over ham.

- Brush with glaze 15 minutes before done.
- Let ham stand 20 minutes before slicing.
