This is a yummy side dish for when you want to try something "different". The hot sauce is our addition but the original recipe excludes it. Either way this is well worth trying and takes very little time to put together

Steps:
- Peel ripe plantains and ensure the pulp is firm and smells sweet.
- Heat butter or margarine (add spices as desired). Saute in at medium heat until browned about 10 minutes.
- Sprinkle with brown sugar, if desired.
- Serve immediately as a side dish or dessert.

RIPE PLANTAINS
Steps:
- Cut plantains in half and peel. Slice them crosswise on the diagonal into 1/4inch ovals. In a 10inch iron skillet heat oil over moderate heat until hazy. Fry the plantains for about 4 minutes a side, turning them once. They should look golden brown. Drain on paper towels and season well with salt and pepper.
CARAMELIZED RIPE PLANTAINS
Steps:
- Peel the plantains and slice them into 1/2-inch rounds. Heat the butter to foaming in a heavy skillet over medium heat. Add the plantain slices to the butter and cook for 5 to 8 minutes, or until they are lightly browned and slightly caramelized. Sprinkle the plantain slices with the sugar, allow the sugar to caramelize slightly, then remove the plantains from the skillet. Serve warm.
- These plantain slices are also particularly good when served over vanilla ice cream, topped with the caramelized butter from the pan.

Steps:
- Prepare the butter glaze
- Place the butter and sugar in a small saucepan over medium heat and cook until the butter is melted and the sugar is dissolved in it. Add the vinegar and stir well. Remove from the heat and set aside.
- Prepare, grill, and serve the plantains
- Heat your grill to high (550°F) and close the lid. Wait at least 15 minutes before lowering the heat to medium-high (450°F) and continuing. Oil the grill grates with a vegetable oil-soaked paper towel held with a long pair of tongs.
- Slice the unpeeled plantains in half lengthwise and place them cut side down on the grill. Close the lid and cook for 15 minutes. Turn the plantains over and baste the cut sides of the plantains with the butter glaze. Close the lid and continue cooking for another 15 minutes. Brush a bit more glaze on the plantains before removing them from the grill.
- Serve the plantains in their skins while hot from the grill.

Steps:
- Select very yellow ripe plantains, some black spots should be visible. Cut Ends off plantains and peel remaining shin off. It should peel almost like a banana. Slice diagonally in a slanted cut pattern about 1 inch or a little thicker. Sprinkle generous amounts of ginger, garlic and red pepper if you like some spice. Lightly sprinkle with salt. Arrange on baking sheet and bake in preheated oven at 450 degrees. Turn plantains occasionally until both sides have a nice golden top about 15 minutes. Remove from oven and serve.
- you can also use fresh ginger 1 tablespoon, 4 cloves garlic and 1 small habenero pepper and a dash salt prepared in food processor with tablespoon olive oil. Let plantains marinate in mixture for hour than arrange on cookie sheet and bake or fry in oil until golden brown.
