BEET RAVIOLI WITH POPPY SEED BUTTER



Beet Ravioli with Poppy Seed Butter image

Ravioli filled with creamy ricotta and freshly roasted beets are a unique take on the classic Italian dish.

2 large red or golden beets (about 14 ounces)
1/2 cup fresh whole-milk ricotta cheese
2 tablespoons dried bread crumbs
1 1/4 pounds Fresh Egg Pasta (I used wonton wrappers)
1/2 cup (1 stick) butter
1 tablespoon poppy seeds
Freshly grated Parmesan cheese

Steps:

  • Preheat oven to 400°F. Wrap beets individually in foil; place on baking sheet. Roast until tender when pierced with knife, about 1 hour. Open foil carefully (steam will escape). Cool. Peel beets; finely grate into medium bowl. Add ricotta cheese and season to taste with salt and pepper. Stir in breadcrumbs.
  • Roll Fresh Egg Pasta dough into sheets according to recipe. Place 1 dough sheet on work surface. Using 3-inch round biscuit cutter, cut sheet into 7 rounds. Transfer rounds to lightly floured baking sheet; cover with plastic wrap. Repeat with remaining dough for total of 56 rounds.
  • Sprinkle 2 smooth kitchen towels with flour. Place 8 pasta rounds on work surface, keeping remaining dough covered with plastic. Place small bowl of water next to work surface. Spoon 1 teaspoon beet filling onto half of each round. Dip fingertip into water and dampen edge of 1 round. Fold dough over filling, pushing out as much air as possible and pressing edges firmly to seal. Transfer to prepared towels. Repeat with remaining rounds. (Can be prepared 1 week ahead. Transfer to rimmed baking sheet and place in freezer until frozen solid, about 6 hours. Transfer ravioli to reseal able plastic bags.)
  • Melt butter in large skillet over medium heat and stir in poppy seeds; keep warm. Working in batches, cook ravioli in large pot of boiling salted water until cooked through, stirring often, about 2 minutes. Using slotted spoon, transfer to skillet with melted butter; toss to coat. Divide ravioli among 8 plates; sprinkle with Parmesan.

Our chopped challenge this week was canned chestnuts. We wanted to mimic the richness of butternut squash ravioli without the usual sweetness. We processed the chestnuts with ricotta to mimic the smooth consistency of the squash. Chopped Basket Ingredient: canned chestnuts

1 cup canned chestnuts (about 5 ounces), plus a few for garnish
2 ounces Parmesan, finely grated (about 2 cups)
1/2 cup ricotta
Kosher salt and freshly ground black pepper
2 large eggs
40 wonton wrappers
All-purpose flour, for dusting
1 stick unsalted butter
4 cloves garlic, lightly smashed
2 large fresh thyme sprigs
Balsamic vinegar, for drizzling, optional

Steps:

  • Place the chestnuts and 1/2 cup water in a small heatproof bowl. Microwave until the water is hot and the chestnuts have softened, about 3 minutes. Drain the chestnuts (reserving the liquid) and place in the bowl of a food processor. Blend with 1 tablespoon of the reserved liquid until finely ground. Add the 1 1/2 cups of the Parmesan, the ricotta and a large pinch of salt and pepper. Blend until completely smooth. Taste for seasoning and adjust with additional salt and pepper if needed. Add 1 egg and blend until well combined. Transfer to a mixing bowl and reserve.
  • Bring a large stockpot of salted water to a boil (it should taste like sea water).
  • While the water is coming to a boil, form the raviolis. Whisk the remaining egg in a small bowl with 1/2 teaspoon water. Place 5 wonton skins on a lightly floured work surface. Brush the wonton skins with the egg wash. Place a leveled tablespoon of the chestnut filling in the center of each wonton skin. Place 5 more wonton skins directly on top. Use your fingers to gently press the skins together. Use a 2 1/2-inch round cookie or biscuit cutter lightly dipped in flour to cut around the filling. Transfer the filled raviolis to a baking sheet lined with parchment paper and cover with a slightly damp paper towel. Make 15 additional raviolis with the remaining wonton skins and filling.
  • Once all of the raviolis are made, make the brown butter sauce. Place the butter, garlic and thyme in a large, straight-sided saute pan. Heat over medium heat until the butter starts to bubble and foam, about 5 minutes, stirring occasionally. Continue cooking until the foam subsides and brown specks start to appear, 1 to 2 minutes, stirring constantly. Turn off the heat and cover with a lid to keep warm while you cook the raviolis.
  • In batches, add the raviolis one at a time to the boiling water, stirring after every addition. Cook until the raviolis float to the top, about 2 minutes. Use a slotted spoon to remove from the water and add to the browned butter; it is okay if some pasta water gets in the sauce. Toss the raviolis in the sauce. Continue with the remaining raviolis.
  • To serve, remove the thyme sprigs and garlic from the sauce, reserving the thyme. Divide the raviolis and sauce among 4 plates. Sprinkle with the remaining cheese and crispy thyme leaves. If desired, lightly drizzle with balsamic vinegar. Use a peeler to thinly shave whole chestnuts over the entire dish.

Steps:

  • Cook ravioli according to package instructions (or if using homemade, according to your recipe).
  • While ravioli cooks, heat a large skillet over medium and add the butter. Cook for about 3 minutes or until browned and fragrant (it will smell nutty), swirling the butter and stirring occasionally. Add pepper to taste, and the sage leaves. 6 tablespoons unsalted butter

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, cook the pancetta in a large nonstick skillet over medium-high heat, turning, until browned and crisp, 8 to 10 minutes. Remove to a paper towel-lined plate and wipe out the skillet.
  • Add the ravioli to the boiling water and cook as the label directs. Reserve 1/2 cup cooking water, then drain gently.
  • Combine the butter and lemon zest and juice in the reserved skillet over medium heat. Add the peas, ravioli and 1/4 cup of the reserved cooking water; toss to coat. Stir in the pecorino and toss. Season with salt and pepper. Add more cooking water, 1 tablespoon at a time, to loosen.

9 tablespoons butter
3 tablespoons minced shallots
1 cup roasted butternut squash puree
Salt
Freshly ground white pepper
3 tablespoons heavy cream
3 tablespoons grated Parmigiano-Reggiano cheese, plus 2 ounces
Pinch nutmeg
1 recipe pasta dough, rolled out into wide ribbons, about 1/4-inch thick
12 fresh sage leaves
1 tablespoon finely chopped fresh parsley leaves

Steps:

  • In a large saute pan, over medium heat, melt 1 tablespoon of the butter. Add the shallots and saute for 1 minute. Add the squash puree and cook until the mixture is slightly dry, about 2 to 3 minutes. Season with salt and pepper. Stir in the cream and continue to cook for 2 minutes. Remove from the heat and stir in 3 tablespoons cheese and nutmeg, to taste. Season with salt and pepper. Cool completely.
  • Cut the pasta ribbons into 3-inch squares. Place 2 teaspoons of the filling in the center of each pasta square. Bring 1 corner of the square to the other, forming a triangle and seal the pasta completely. Add the pasta to pot of boiling salted water. Cook until al dente, about 2 to 3 minutes or until the pasta floats and is pale in color.
  • Remove the pasta from the water and drain well. Season the pasta with salt and pepper.
  • In a large saute pan, melt the remaining 8 tablespoons of butter. Add the sage to the butter and continue to cook until the butter starts to brown. Remove from the heat.
  • Place some of the pasta in the center of each serving plate. Spoon the butter sauce over the pasta. Sprinkle the 2 ounces of cheese over each plate and garnish with parsley.

RICOTTA GNUDI WITH BROWNED BUTTER

10 ounces ricotta cheese, drained through cheesecloth overnight in the refrigerator
1/4 cup grated Parmigiano-Reggiano, plus extra for finishing
1/8 teaspoon ground nutmeg
10 turns freshly ground black pepper
1 large egg yolk
Kosher salt
1/2 to 3/4 cup all-purpose flour, plus more for dusting
1/2 cup neutral oil, such as canola
1 tablespoon capers, drained and dried
1 sprig fresh sage plus 4 leaves
5 tablespoons unsalted butter
1 lemon, cut into wedges

Steps:

  • Put the ricotta, Parmigiano-Reggiano, nutmeg, pepper, egg yolk, 1/2 teaspoon salt and 1/2 cup of the flour in a large bowl. Use a wooden spoon to mix until a shaggy dough forms. Do not overwork. Continue to mix until the dough comes together and forms a ball, adding an additional 1/4 cup flour if needed.
  • Lightly flour your hands and roll the mixture into quarter-sized balls; there should be 25 to 30 balls. Place the gnudi onto a lightly floured tray and refrigerate for at least 30 minutes and up to 1 hour.
  • Meanwhile, add the oil, capers and sage leaves to a small saute pan. Place over medium heat and fry until crispy, 6 to 8 minutes. If the sage leaves become too dark, remove them before the capers. Transfer to a plate lined with paper towels. Set aside.
  • Bring a large pot of salted water to a low boil.
  • Add the butter and sage sprig to a large saute pan over medium-high heat. Melt the butter and continue to cook, swirling the pan in a circular motion to prevent the butter from burning, until it starts to turn golden brown and begins to smell nutty. Squeeze the juice from a lemon wedge into the pan to stop the butter from turning too dark and burning.
  • Once the water is at a low boil, add the gnudi and cook until they float, 2 to 3 minutes. Using a slotted spoon, remove the gnudi directly into the browned butter. Stir to coat.
  • Plate the gnudi onto a serving plate and garnish with the fried sage and capers and additional Parmigiano-Reggiano. Serve with lemon wedges.

1 small butternut squash
Fresh Pasta
1/2 cup finely grated Parmesan
Small pinch freshly grated nutmeg
Kosher salt and freshly ground black pepper
2 to 3 tablespoons all-purpose flour
Semolina flour, for dusting
1 1/2 sticks (12 tablespoons) unsalted butter
2 sprigs fresh sage
1 clove garlic, unpeeled and crushed
Lemon zest, for serving
7 ounces "00" or all-purpose flour (about 1 1/2 cups) (see Cook's Note)
3 ounces semolina flour (about 1/2 cup) (see Cook's Note)
3 large eggs
Kosher salt

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with foil. Place the squash on the prepared baking sheet and roast until easily pierced with the tip of a knife, about 1 hour. Set aside until cool enough to handle.
  • Cut the roasted squash in half and remove the seeds with a spoon. Scoop 2 cups of the roasted squash flesh into a food processor (reserve any extra for another use). Add the grated Parmesan and nutmeg, season with salt and pepper and process until smooth. Check the consistency of the puree; if it is slightly wet and loose, add 2 tablespoons of the flour and process again. Check the consistency and add the third tablespoon, if needed. Transfer the filling to a bowl.
  • Set up a pasta roller attachment on a stand mixer (or secure a hand roller on the side of your work surface). Lightly flour your work surface and roll out the dough until it is thin enough to pass through the pasta roller. Set your roller to the widest setting. Turn on the pasta roller and pass the dough through once. Fold the rolled-out piece of dough over itself, then pass through the roller again. If the edges of the dough begin to fray or the dough is sticky or damp, lightly dust both sides with flour. Repeat four or five more times, until the dough is smooth.
  • Adjust the roller to the second widest setting, dust both sides of the dough with flour, and pass it through twice without folding. Repeat rolling, adjusting to a thinner setting each time, until the dough is thin enough that it is slightly translucent. Once the dough gets too long to work with, cut it in half and work with one piece at a time. (Dust the resting dough piece with semolina and hold under a kitchen towel while you finish rolling the other piece.)
  • Dust a baking sheet and work surface with semolina flour. Lay out one sheet of freshly rolled pasta on the prepared surface. Square off the ends and trim the pasta into 4 equal-sized sheets. Spoon tablespoon-sized mounds of filling in two rows down the length of one pasta sheet, leaving about 1 inch of space between each mound. Lightly dampen the pasta around the filling (with a mister or brush) and carefully drape a second sheet of pasta over the filling to cover completely. Press firmly around each mound to squeeze out the air and seal the pasta sheets together. Trim the edges and cut the sheet into individual ravioli with a pizza cutter or rolling pasta cutter. Place the finished ravioli on the prepared baking sheet. Repeat the filling and cutting process with the remaining two pasta sheets.
  • Finish rolling out the remaining pasta dough and repeat the filling and cutting process. Formed ravioli may be held in the refrigerator, in a single layer and dusted with semolina, for 24 hours or frozen for up to 3 months.
  • Put the butter in a large saute pan over medium heat. Allow the butter to cook, stirring occasionally, until it is amber in color, 7 to 10 minutes. As soon as the butter changes color, remove it from the heat and add the sage and garlic. Set aside for the flavors to develop.
  • Meanwhile, bring a large pot of generously salted water to a rapid boil. Gently drop the ravioli into the boiling water and stir immediately. Leave the ravioli to cook, stirring occasionally, until tender, about 3 minutes.
  • Once cooked, lift the ravioli from the water with a spider or slotted spoon and add to the butter sauce with 1/4 cup pasta water. Bring to a simmer over medium heat. Hold at a simmer for 1 minute, tossing the ravioli with the sauce to coat well.
  • Remove the garlic clove from the sauce. Divide the ravioli between bowls, pouring some of the sauce into each. Top with lemon zest and Parmesan curls.
  • Mound the flour in the center of a clean countertop or cutting board. Make a well in the center of the flour 3 to 4 inches wide.
  • Crack the eggs into the well and add a pinch of salt. Using a fork, break the yolks and begin to beat the eggs as you would if making scrambled eggs.
  • Continue stirring the eggs with a fork in large circles, slowly incorporating the flour. When the eggs form a thick mass and become difficult to stir, about 3 minutes, fold the loose flour from the edges into the pile with a bench scraper and knead until a smooth dough forms. Discard any excess flour.
  • Shape the dough into a flat disk, wrap tightly with plastic wrap and set aside to rest for 20 minutes before rolling. If waiting more than 1 hour, refrigerate or freeze the dough. The dough will keep refrigerated for up to 24 hours.

FARRO SPAGHETTI, BEETS, BROWN BUTTER, POPPY SEEDS

1/4 cup olive oil
1/4 cup water
1 pound good-quality farro or whole wheat spaghetti
6 tablespoons unsalted butter
1 heaping tablespoon poppy seeds
1 teaspoon kosher salt
1/4 cup pasta water
1/4 pound goat's milk cheese

Steps:

  • 1. Preheat the oven to 400°F. Place the beets in a glass or ceramic baking dish. Cover with the olive oil and water. Bake until a tester easily passes through the beets, about 1 1/4 hours. Let cool.
  • 2. Bring a large pot of salted water to a boil.
  • 3. Peel the beets and cut into chunks. Add to the bowl of a food processor fitted with a metal blade and process to a rough puree. Add the spaghetti to the boiling water and cook according to the package directions.
  • 4. Add the butter to a 10-inch skillet. Turn on the heat to high. Brown the butter, about 2 minutes. Add the poppy seeds and toast for 2 minutes. Add the pureed beets, salt, and the 1/4 cup pasta water to the skillet. Stir to fully incorporate.
  • 5. Use a wire-mesh skimmer or tongs to remove the spaghetti from the pot and place them directly into the skillet with the sauce. Stir to combine.
  • 6. Divide the spaghetti into equal portions and place on warm plates. Use two round or oval soup spoons to form little balls of the goat's milk cheese. Place a ball on top of each serving.
  • 7. Serve immediately.

48 (3-inch) round gyoza skins
6 quarts water
Topping:
1 1/2 tablespoons butter
2 cups (2-inch) slices asparagus
1/4 teaspoon salt
2 teaspoons poppy seeds
1/3 cup (about 1 1/2 ounces) crumbled ricotta salata cheese

Steps:

  • To prepare ravioli, combine Homemade Ricotta Cheese, pecorino Romano, parsley, 1/8 teaspoon salt, and egg whites; mix with a fork until blended. Working with 1 gyoza skin at a time (cover remaining skins to prevent drying), spoon about 2 teaspoons ricotta mixture into center of skin. Moisten edges of skin with water; place 1 skin over filling, stretching slightly to meet edges of bottom skin. Press edges together with a fork to seal; place on a lightly floured baking sheet (cover with a damp towel to prevent drying). Repeat procedure with remaining skins and ricotta mixture to form 24 ravioli. Bring 6 quarts water to a boil over medium-high heat.
