1 package (17-1/4 ounces) frozen puff pastry, thawed
1/2 cup ricotta cheese
1/2 cup roasted sweet red peppers, drained and chopped
3 tablespoons grated Romano or Parmesan cheese, divided
1 tablespoon minced fresh parsley
1 teaspoon dried oregano, crushed
1/2 teaspoon pepper
1 teaspoon 2% milk

Steps:

  • Preheat oven to 400°. On a lightly floured surface, unfold puff pastry. Cut each sheet into nine squares. Mix ricotta cheese, red peppers, 2 tablespoons Romano cheese, parsley, oregano and pepper., Brush pastry edges with milk; place 2 rounded teaspoonfuls of cheese mixture in center of each square. Fold edges of pastry over filling, forming a rectangle; seal edges with a fork. Cut slits in pastry; brush with milk. Sprinkle with remaining Romano cheese., Place 2 in. apart on lightly greased baking sheets. Bake until golden brown, 15-20 minutes. Remove to wire racks. Serve warm. Refrigerate leftovers.

A juicy spinach ricotta filling encased with buttery, flaky puff pastry. Great finger food or to pop into lunch boxes, thought they are definitely best served warm! Refer to the notes for make ahead instructions and the recipe video below. Some people like to serve this with tomato sauce.

250 g / 8 oz frozen chopped spinach (, thawed (Note 1))
400 g / 13 oz firm ricotta ((Note 2))
¾ cup grated parmesan
1 ½ cups shredded cheese ((cheddar, tasty, Monterey Jack, Gruyere, Pepper Jack))
1 egg
1 large garlic clove (, minced)
Pinch of nutmeg ((fresh grated or powder))
¼ - ½ tsp salt
Black pepper
3 sheets puff pastry ((Note 3))
1 egg (, beaten)
Sesame seeds ((optional))

Steps:

  • Take pastry out of freezer.
  • Place spinach in a colander and use a wooden spoon or your hands to press out excess water. You could also do this using a tea towel or paper towels. Transfer spinach to a bowl (drink the liquid, it's good for you!).
  • Add remaining Filling ingredients. Mix to combine.
  • Place pastry on work surface and cut in half to create 2 rectangles - you should have 6 in total.
  • Divide filling between pastries, brush edge with egg then roll up, finishing with the seam side down.
  • Refrigerate for 15 minutes. Meanwhile, preheat oven to 180C/350F.
  • Spray 2 x baking trays with oil (any).
  • Cut rolls into 4, or whatever size you want. Brush tops with egg (makes it golden) then sprinkle with sesame seeds.
  • Bake for 25 minutes, then take out the top tray and move the bottom tray to the top and give it an additional 5 - 10 minutes to make it golden.
  • Best served warm - the pastry is crispier and the filling is juicier. See notes for make ahead instructions.

For filling:
1/2 cup whole milk
2 (3-by 1-inch) strips orange zest
1 large egg yolk
3 tablespoons sugar
1 tablespoon cornstarch
1/2 teaspoon pure vanilla extract
1/2 pound fresh ricotta
3/4 teaspoon orange-flower water
2 tablespoons finely chopped candied citron
For pastry:
2 1/4 cups all-purpose flour
6 tablespoons sugar
1/2 teaspoon salt
2 sticks cold unsalted butter, cut into pieces
1/2 teaspoon grated orange zest
2 large egg yolks
2 tablespoons cold water
1 large egg beaten with 1 tablespoon water
Equipment: a nonstick muffin pan with 12 (1/2-cup) cups
Garnish: confectioners sugar for dusting

Steps:

  • Make filling:
  • Bring milk and zest to a simmer in a small heavy saucepan, then remove from heat. Whisk together yolk, sugar, cornstarch, and a pinch of salt in a bowl. Whisk in milk, then transfer mixture to saucepan.
  • Bring to a boil over medium heat, whisking constantly, and boil 1 minute. Stir in vanilla, then transfer to a clean bowl and chill custard, its surface covered with parchment paper (to prevent a skin from forming), until cold, at least 1 hour. Discard zest.
  • Pulse ricotta in a food processor until smooth. Whisk into custard. Stir in orange-flower water and citron. Chill until ready to use.
  • Prepare pastry while custard chills:
  • Pulse flour, sugar, and salt in cleaned food processor until combined. Add butter and zest and pulse until mixture resembles coarse meal with some roughly pea-size butter lumps. Add yolks and water and pulse until just incorporated and dough begins to form large clumps.
  • Turn out dough onto a work surface and divide into 4 portions. With heel of your hand, smear each portion once or twice in a forward motion to help distribute fat. Gather dough together, using a pastry or bench scraper if you have one, and form into a ball.
  • Generously butter muffin cups and top of pan. Press 2 tablespoon dough over bottom and up side of each muffin cup in an even layer with well-floured fingers. Chill until firm, about 30 minutes.
  • Meanwhile, roll out remaining dough between 2 sheets of parchment paper into a 9-inch round (about 1/8 inch thick) and transfer to a baking sheet, discarding top sheet of paper. Cut 12 (1/2-inch-wide) strips, then cut in half crosswise to make 24 strips total. Chill until ready to use.
  • Assemble and Bake pastries:
  • Spoon a scant 2 tablespoons filling into each muffin cup and smooth, then crisscross 2 strips on top of filling, trimming to fit. Brush pastry cross with egg wash. Bake until filling is puffed and starting to crack and edges are golden, 25 to 30 minutes.
  • Cool in pan on a rack 10 minutes. Invert a rack on top of pan, then flip pan and remove. Turn pastries right side up and cool completely.

This Spinach Ricotta Crescent Wrap makes a great meatless dinner for two or three, or for serving as a vegetarian appetizer! Kind of like a calzone wrapped with crescent dough, a sure way to fill you up with leafy greens, veggies and flavor.

1 (8 oz.) package crescent rolls
1 tablespoon oil, (extra virgin olive oil or avocado oil are my go-to's)
1 bell pepper, chopped (I used red)
1 (6 oz.) package fresh baby spinach, (roughly 4 packed cups)
1/2 cup ricotta cheese
1/2 cup shredded mozzarella cheese, (or other shredded white cheese like Italian blend)
1 teaspoon dried Italian seasoning, (or your choice of basil, oregano, parsley, or dill)
sprinkle of salt and pepper

Steps:

  • Preheat oven to 350°F.
  • On a baking sheet (sprayed with oil or lined with parchment paper), roll out crescent dough flat and press edges together to make a sheet.
  • In a medium-sized cast iron skillet or saute pan, heat oil over medium heat. Add chopped bell pepper and saute for 3-4 minutes until slightly tender.
  • Add spinach a cup or so at a time, cooking down in stages (should only take a couple minutes). Remove from heat and let cool slightly.
  • Mix in ricotta and mozzarella cheeses, seasoning and salt and pepper. Let cool for a couple minutes, as to not melt dough in next step.
  • Pour spinach mixture over crescent dough in an even layer, leaving room around the edges of the dough. Braid the crescent dough around the spinach mixture (see write-up in article for picture demonstration).
  • Bake at 350°F. for 25-30 minutes, or until dough is golden brown.

Was looking for a sausage roll recipe that used spinach, ricotta and puff pastry. Couldn't find one here on ZAAR but after a google search I came across this one on someones blog site, and posting here to pass onto a friend.

Number Of Ingredients 10

1 tablespoon oil
1 red onion (diced)
500 g frozen spinach (thawed and squeezed of liquid)
50 g pine nuts
salt (to taste)
pepper (to taste)
500 g ricotta cheese (fresh)
1 egg (lightly beaten)
1 egg (lightly beaten and mixed with a little milk)
3 sheets puff pastry

Steps:

  • Preheat oven to 200C (390F) fan forced or 220C (435/430F) convectional, please note that there can be slight variations between ovens.
  • Heat oil in a fry pan, add onion and fry gently for 2 minutes, add spinach and pinenuts and season with salt and pepper to taste and cook for 5 minutes.
  • Let cool.
  • Add ricotta and mix thoroughly and then add the lightly beaten egg and mix well together.
  • Place pastry sheets on a flat surface and cut in half.
  • Spoon or pipe spinach mixture along the length of each half of the pastry and brush water down the length of the other side and roll up like a sausage roll, repeat with other sheets of pastry and mix.
  • Cut to preferred size (I like to cut into 4 to make mini rolls about 6cm long).
  • Put a couple of slits in each roll (to allow steam to escape).
  • Place on baking tray/sheet seam side down.
  • Put in oven and bake for 15 minutes or until golden brown.

MUSHROOM SPINACH RICOTTA CRESCENT RING

2 teaspoons oil (I used vegetable oil)
2 garlic cloves (large)
1 small red onion (finely chopped)
10 oz 284 grams chopped spinach, frozen (thaw according to instructions on the package before using)
8 oz white mushrooms (finely chopped)
1/2 teaspoon black pepper (or to taste)
3/4 teaspoon italian seasoning
1/2 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1/4 cup chopped cilantro
1/2 cup ricotta cheese
1/4 cup shredded parmesan & romano cheese
2 x 8oz cans of Pillsbury Crescent Rolls
salt (to taste)

Steps:

  • Preheat oven to 375 F degrees.
  • Heat 2 teaspoons oil in a pan on medium heat. Once the oil is hot, add chopped garlic and onion. Saute for 2 minutes.
  • Add chopped mushrooms and mix. Then add some salt, black pepper, 1/4 teaspoon smoked paprika and 1/4 teaspoon cayenne pepper and mix.
  • Cook for 3-4 minutes till the moisture from mushrooms dries out and they turn brownish.
  • Add chopped spinach [I used frozen thawed cut spinach] and mix.
  • Cook for 2-3 minutes till everything is mixed and mixture dries out.
  • Transfer mixture to a bowl and then add ricotta cheese, shredded parmesan-romano cheese, Italian seasoning, remaining 1/4 teaspoon cayenne pepper & 1/4 teaspoon smoked paprika. Adjust seasoning at this point.
  • Also add the chopped cilantro and mix everything till well combined.
  • Open Pillsbury Crescent Rolls, separate into 16 triangles. Arrange triangles overlapping on the edges to form a circle on a baking sheet lined with parchment paper.
  • Spoon mushroom-spinach-ricotta mixture on half of each triangle closest to center of ring.
  • Bring each triangle up over the filling and tuck under the bottom layer of dough to seal it.
  • Bake the crescent ring at 375 F degrees for 20-25 minutes until the dough turns golden brown.
  • Let the crescent ring cool for 10 minutes before cutting into slices!

4 Puff Pastry
2 1/2 cup Frozen Spinach
1/2 Onion
1 clove Garlic
1 tablespoon Olive Oil
1 cup Ricotta Cheese
1 cup Feta Cheese
to taste Salt
to taste Ground Black Pepper
1 Egg
1/2 tablespoon Water
to taste Sesame Seeds

Steps:

  • Finely dice the Onion (1/2) and mince the Garlic (1 clove).
  • Heat Olive Oil (1 tablespoon) in a pan over medium heat and sauté the diced onion until it turns soft and translucent. Then add the minced garlic and sauté for another minute or so.
  • Add the Frozen Spinach (2 1/2 cup) in the pan, mix it with the onion and garlic. Cover the pan and let the spinach thaw and heat through for 4-5 minutes.
  • Take the lid off and sauté the spinach till there's no more liquid in the pan. Turn off the heat and set the spinach aside to cool.
  • While the spinach mixture is cooling, season the Ground Black Pepper (to taste) generously with Salt (to taste) and Ricotta Cheese (1 cup) in a large bowl.
  • Add the cooked spinach mixture to the ricotta and mix it all well. Then, mix in the crumbled Feta Cheese (1 cup) to the spinach and ricotta.
  • Make an egg wash by whisking Egg (1) and Water (1/2 tablespoon) together and set it aside for later.
  • Preheat your oven to 425 degrees F (220 degrees C). To assemble the spinach rolls, cut the Puff Pastry (4) into three strips and gently rolled them to widen them slightly.
  • Spoon the spinach mixture in the middle of the pastry dough leaving about 1/2- 3/4 of an inch on all sides.
  • Place another sheet on top of the spinach mixture and using your fingers press down and seal the edges around the spinach, removing big air bubbles. Then use a fork to crimp the edges to seal it further.
  • Brush the top of the pastry with egg wash.
  • Lightly sprinkle the top with Sesame Seeds (to taste).
  • Slash the rolls with a sharp knife to allow steam to escape while baking and cut the rolls however long you'd like them.
  • Bake the spinach puff pastry rolls at 425 degrees F (220 degrees C) for 18 to 22 minutes until they are golden and puffy!
  • Serve and enjoy!

Steps:

  • 1. Combine all ingredients except for the vegetable oil.
  • 2. Heat oil in a pot or deep fryer over medium heat.
  • 3. Drop dough by teaspoonfuls into hot oil. Flip after 1 to 2 minutes. When edges are brown flip over to brown other side for another minute.
  • 4. Remove with a slotted spoon and place on a plate covered with paper towels to drain.
  • 5. Sprinkle on powdered sugar if desired.

FOR THE PUFFS
2 (8 oz) pkg pillsbury crescent rolls
15 oz ricotta cheese
1 c shredded mozzarella
1/4 c grated parmesan cheese
2 Tbsp basil, dried
1/2 tsp pepper
1/4 tsp salt
1 egg
1/2 c salami, sliced and diced
1/4 c diced sun-dried tomatoes
FOR THE DIPPING SAUCE
1/2 c ketchup
1 pkg kfc honey sauce
2 pkg chinese hot sauce (chinese takeout packets)
3 pkg tacobell fire-roasted sauce

Steps:

  • 1. Heat oven to 375. Spray 24 mini muffin cups with non-stick cooking spray.
  • 2. In small bowl, combine all sauce ingredients and whisk together with a fork. Set aside and allow to warm to room temperature.
  • 3. On floured work surface, unroll 1 dough sheet; cut into 24 (2-inch) squares. Place 1 dough square in bottom and up sides of each of 24 muffin cups, letting points of dough extend over edge of cup.
  • 4. In medium bowl, mix remaining ingredients. Spoon about 1 tbsp cheese mixture into each cup
  • 5. Bake 10-15 minutes or until golden brown. Cool in pans 3 minutes; remove from pan to cooling rack. Repeat with remaining dough and filling, cooling pans between batches. Serve warm with dipping sauce.
