SPICY CHORIZO POCKETS

2 teaspoons vegetable oil, plus more for brushing
2 links fresh chorizo (about 6 ounces), casings removed
1/2 teaspoon ground cumin
1/4 cup fresh corn kernels, or frozen corn, thawed
2 tablespoons chopped pickled jalapenos
3/4 cup grated monterey jack cheese (about 2 ounces)
2 scallions, chopped
All-purpose flour, for dusting
1 11-ounce tube refrigerated French bread dough
1 large egg

Steps:

  • Heat the vegetable oil in a medium skillet over medium-high heat. Add the chorizo and cumin and cook, breaking up the meat with a wooden spoon, until browned, about 3 minutes. Add the corn and jalapenos and cook, stirring, until the corn is tender, about 2 minutes; let cool completely. Stir in the cheese and scallions. Squeeze the mixture together with your hands to make it compact.
  • Preheat the oven to 425 degrees F and brush a baking sheet lightly with vegetable oil. On a floured surface, roll out the dough and fill the dinner pockets. Step-by-step directions.
  • Place the pockets seam-side down on the prepared baking sheet. Beat the egg and 1 tablespoon water in a small bowl; brush the pockets with the egg wash. Bake until golden brown, about 15 minutes.

1 large Granny Smith apple, finely chopped (about 1 1/2 cups)
1/4 cup chopped fresh chives
2 tablespoons sugar
1 package (17.3 ounces) Pepperidge Farm® Puff Pastry Sheets, thawed
3 ounces smoked Gouda cheese, cut into

Steps:

  • Heat the oven to 400 degrees F. Stir the apple, chives and sugar in a medium bowl.
  • Unfold 1 pastry sheet on a lightly floured surface. Roll the pastry sheet into a 16x12-inch rectangle. Cut into 12 (4-inch) squares. Cut each pastry square in half diagonally to make 24 triangles. Repeat with the remaining pastry sheet.
  • Place about 1/2 teaspoon apple mixture on the bottom third of the longest side of each pastry triangle. Top each with 1 cheese piece. Brush the 2 bottom corners with water. Fold the bottom corners over the filling and press to seal. Press the bottom edge of the pastry to seal, leaving the top of the pastry open. Place the pastries onto 2 baking sheets.
  • Bake for 15 minutes or until the pastries are golden brown. Remove the pastries from the baking sheets and let cool on wire racks for 10 minutes. Sprinkle with additional chopped chives, if desired.

Vegetable oil, for frying
8 ounces store-bought pizza dough
All-purpose flour, for rolling
1/2 cup fresh ricotta
3 tablespoons confectioners' sugar, plus more for sprinkling
1/4 teaspoon pure vanilla extract
2 tablespoons torn fresh basil leaves
6 blackberries

Steps:

  • Fill a Dutch oven about halfway with veggie oil and heat to 375 degrees F. Line a sheet pan with paper towels and set aside.
  • Roll the pizza dough to about 1/4-inch thick on a floured work surface. Cut out as many 4-inch rounds as you can. Reroll the dough, if needed, to get 6 rounds total.
  • Combine the ricotta, confectioners' sugar and vanilla in a small bowl. Stir in the basil.
  • Dollop a scant tablespoon of filling in the center of each dough round and place a blackberry on top. Dab a little water around the edge of each dough round. Fold over to make half-moons and pinch well with your fingers to seal.
  • Add the pockets to the hot oil in batches and fry until golden and puffed, about 3 minutes. Remove to the lined sheet pan. Sprinkle on confectioners' sugar.

1 tablespoon butter
1/2 cup sugar
2 tablespoons sugar
2 teaspoons ground cinnamon
1 1/4 cups cake flour
3 teaspoons baking powder
1/4 teaspoon salt
1 cup ricotta cheese
1 cup 2% low-fat milk
3 eggs, separated
1 teaspoon grated lemon peel
1 teaspoon lemon juice
maple syrup

Steps:

  • In a large saucepan, cook apples in butter over medium heat for 6-8 minutes or until tender. Sprinkle with 1/2 cup sugar and cinnamon; set aside.
  • In a large bowl, combine the flour, baking powder and salt. In another bowl, combine the cheese, milk, egg yolks, lemon peel, juice and remaining sugar. Stir into dry ingredients just until combined. In a small bowl, beat egg whites until stiff peaks form; fold into batter.
  • Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until the second side is golden brown. Serve with apples and maple syrup.

500 g cooking apples, peeled & cored
1 tablespoon mixed spice
1 tablespoon demerara sugar
680 g puff pastry
250 g ricotta cheese
1 orange, zest of
1/2 orange, juice of
milk, for glazing
handful sliced almonds

Steps:

  • Preheat the oven to 220c/fan200c/gas 7 & lightly grease a baking sheet.
  • Slice the apple into thin slices & toss with the mixed spice & demerara sugar. Set to one side.
  • Roll out the pastry on a lightly floured surface to a 30cm bt 28cm rectangle. Spread half of the apple mixture onto half of the pastry leaving a 1.5cm rim round the three edges.
  • Place the ricotta into a bowl & beat with a wooden spoon to soften.Add orange rind & juice to the ricotta & mix well together. Spoon the ricotta over the apple, then spread the remaining apple over the ricotta.
  • Brush the edges of the pastry with water then fold over the other half of the pastry to enclose the other mix. Press the edges together & pinch to decorate.
  • Make diagonal slashes over the top at 2cm intervals, do not cut all the way through the pastry.Brush the pastry with milk the sprinkkle over the demerara sugar & flaked almonds.
  • Carefully lift onto the pre greased baking sheet & place in oven. Bake for 15 minutes then reduce the temperature to 180c/ gas4 for a further 15 minutes till golden.
  • Remove from oven & allow to cool for 10 minutes on the baking sheet, then move to a cooling rack.

250g pack fresh lasagne sheets
1 tbsp olive oil
250g tub ricotta
50g bag rocket
2 x 350g jars Loyd Grossman tomato and chargrilled vegetable sauce
50g mature vegetarian cheddar , grated

Steps:

  • Put the lasagne sheets in a large bowl and pour over boiling water to cover. Leave to soak for 5 minutes. Meanwhile, preheat the oven to fan 180C/conventional 200C/gas 6 and lightly oil a shallow baking tray.
  • Drain the lasagne sheets in a colander. Take one sheet and put a large spoonful of ricotta in the centre. Scatter over a few rocket leaves, season well, then fold the sheet in half. Press the edges together to form a pocket. Continue to fill all the pasta sheets, then lay them on the baking tray so they overlap slightly.
  • Tip the sauce over the pasta pockets, spreading to make sure they are completely covered. Sprinkle over the cheese and bake for 10-12 minutes until hot and bubbly. Serve with a crisp green salad.

Steps:

  • Preheat oven to 375 degrees.
  • Defrost puff pastry sheet.
  • Cover the sheet with plastic wrap to prevent it from drying out.
