RICH TOFU CREME CHEEZE



Rich Tofu Creme Cheeze image

For scrumptious vegan lox and cream cheese, top with strips of roasted red pepper. Adapted from The Ultimate Uncheese Cookbook by Jo Stepaniak.

Number Of Ingredients 6

1/3 cup smooth cashew butter
2 tablespoons fresh lemon juice
2 teaspoons corn syrup (a mild sweet syrup.) or 2 teaspoons honey (a mild sweet syrup.)
1 1/2 cups crumbled firm silken tofu (about 12 oz.)
1 teaspoon salt
1 pinch of grated nutmeg

Steps:

  • Place all ingredients in a food processor and process until very smooth.
  • Chill thoroughly before serving.
  • Keeps 5-7 days in the refrigerator.

Delicious vegan version of cream cheese. So good on celery sticks or crackers! And you can adjust the seasonings to your taste. I like to add a couple cloves of fresh garlic and some dried herbs. From The Uncheese Cookbook by Joanne Stepaniak.

1/4 cup raw cashews
3 tablespoons water
2 tablespoons fresh lemon juice
1 tablespoon brown rice syrup (I just add a dash of stevia)
1 cup firm tofu, patted dry and crumbled
3/4 teaspoon salt
1 pinch garlic powder

Steps:

  • Put all ingredients in a food processor and process till very smooth.
  • This may take a few minutes.
  • Taste and adjust seasonings if you like.
  • Chill thoroughly before serving.

  • Remove your tofu block from the package and place it into the tofu press. Leave pressing for 15 mins, then remove the block from the press.
  • Place the pressed tofu, nutritional yeast, white miso, coconut oil, lemon juice, raw apple cider vinegar, sea salt, onion powder, garlic powder, and fresh or dried dill in a high-powered blender or food processor. Blend or puree until the mixture becomes very smooth. Stop the machine to scrape down the sides with a rubber spatula, as necessary.
  • The mixture will likely get quite thick, so add unsweetened soy milk in small bits as needed. You may want to use a damper or wooden spoon to press down the mixture as it processes.
