RICE PUDDING WITH LEFTOVER RICE

Rice Pudding With Leftover Rice image

If you have a lot of leftover cooked rice, baked rice pudding is an ideal and easy way to use it up. Serve as a sweet breakfast or for dessert.

Provided by Jolinda Hackett

Categories     Breakfast     Brunch     Dessert

Time 50m

Yield 4

Number Of Ingredients 7

2 cups milk
1 cup leftover cooked rice
2 eggs
1/4 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon or to taste
1/3 cup raisins

Steps:

  • Gather the ingredients and preheat the oven to 300 F.
  • In a medium saucepan, heat the milk and rice over medium-low heat, stirring together frequently so the milk doesn't burn. Bring the mixture to a slow simmer.
  • In a separate medium bowl, combine the eggs, sugar, and vanilla.
  • Whisk about 1/2 cup of the hot milk mixture into the egg mixture to temper the eggs. Add all of the egg mixture to the saucepan of hot milk and rice, stirring constantly to avoid scrambling the eggs. Allow to cook until thick enough to coat the back of a spoon, about 175 to 180 F.
  • Add the cinnamon and raisins, stirring just to combine.
  • Finally, pour the rice pudding mixture into an 8 x 8-inch casserole or baking dish and bake in the preheated oven for 25 to 35 minutes. For a creamy texture, remove the rice pudding when it's lightly set with a slight jiggle. For a firm baked custard, cook until a knife inserted in the middle comes out clean.
  • Allow the rice pudding to cool slightly before serving.

Steps:

  • Combine cooked rice, milk, sugar and salt in a medium saucepan. Bring to a boil, then lower the heat to a simmer and stir in the vanilla and raisins. Cook until just about all of the milk is absorbed (30-45 minutes, depending on how absorbent your rice is). Stir in cinnamon and/or nutmeg, if using. Divide rice pudding into individual serving dishes serve warm or chilled. *Note: Sometimes I add an extra 1/2 cup of milk, if the rice seems unusually firm or dry, to make it creamier. Feel free to add a bit extra if the pudding is not as creamy as you like it. You can use nonfat, lowfat, whole or soy milk in this recipe.

RICE PUDDING WITH COOKED RICE

Rice Pudding with Cooked Rice image

How to make rice pudding with cooked rice! This recipe yields a creamy, sweet rice pudding that is perfect for when you have leftover rice in the fridge.

Provided by Karlynn Johnston

Categories     Dessert

Number Of Ingredients 10

3 cups cooked rice
3 cups milk
1/2 teaspoon salt
1 1/2 cups raisins
2/3 cup white sugar
2 large eggs (beaten)
1 tablespoon butter
1 teaspoon vanilla extract
cinnamon
nutmeg

Steps:

  • Combine the cooked rice, milk, and salt in a saucepan over medium-high heat.
  • Cook the mixture, stirring to prevent burning until it starts to thicken, around 15-20 minutes. The milk will reduce a bit, leaving a creamier sauce at this point.
  • Add in the raisins and sugar, and cook until the raisins are plumped up. Continue stirring the entire time, ensuring that the milk doesn't burn and the rice doesn't stick to the bottom.
  • Take the beaten eggs and whisk 1/4 cup of the hot mixture into them (tempering the eggs). Rapidly whisk the tempered eggs into the pudding. Cook for a few minutes more while it thickens, stirring constantly.
  • Remove the saucepan from the heat; stir the butter and vanilla extract into the pudding. Season with the nutmeg and cinnamon to taste.
  • Serve warm or cold.

BAKED RICE PUDDING

Baked Rice Pudding image

A warm and delicious Baked Rice Pudding recipe made with cooked rice, cinnamon, and raisins. This simple old-fashioned recipe is easy to make and uses ingredients you may already have on hand!

Provided by Lauren Allen

Categories     Dessert

Time 1h

Number Of Ingredients 8

4 large eggs
3/4 cup granulated sugar
3 cups milk
1 cup heavy whipping cream
2 teaspoons vanilla extract
1 1/2 teaspoons ground cinnamon
3 cups cooked rice (, cooled (leftover rice works great!))
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F.
  • Beat the eggs and sugar together. Slowly pour in the milk and cream and mix well.
  • Add the vanilla and cinnamon and mix well. Add the rice and raisins and stir to combine.
  • Pour mixture into a greased casserole dish. Any oven-safe dish will work--you can use one pan to bake at least 9x9'' or bigger, or smaller individualized serving dishes.
  • Place the filled casserole dish inside a larger, oven-proof dish. Add about 2 inches of water to the larger pan (or enough to fill about halfway up the side of the rice pudding dish). This method will help the pudding to have a custard texture.
  • If using a 9x9'' or slightly larger pan, bake for 40-50 minutes or until the top has set (It's okay if it jiggles just slightly). Serve warm.
  • Leftovers store well in the refrigerator for up to 5 days.

5 TIPS FOR TURNING LEFTOVER RICE INTO RICE PUDDING | KITCHN

From thekitchn.com
Estimated Reading Time 3 mins
  • Use plain cooked rice. The beauty of turning leftover rice into rice pudding is just how flexible it can be. You can use any kind of rice, be it long-grain or short-grain, white or brown.
  • Use equal parts cooked rice and milk. Making rice pudding from leftover rice really doesn’t require a recipe, as long as you follow the basic one-to-one ratio.
  • Taste and sweeten as you go. The milk will give the rice some sweetness, so sweeten additionally with a gentle hand. Stir in a spoonful or two of sugar, honey, or maple syrup at the beginning and taste halfway through.
  • Don’t forget a pinch of salt. Not only does salt help to balance flavors, but it also brings out the sweetness, which is why it’s called for in cakes, cookies, and more.
  • Have fun with flavors. The sky is the limit when it comes to flavoring your rice pudding. Warm ground spices like cinnamon and nutmeg are classic and lovely, but so are ground cloves, ginger, and cardamon, as well as spice blends like pumpkin pie spice or Chinese five spice.

  • In a medium pot over medium heat add the cooked rice, 2 cups of the milk, and the salt. Cook, stirring frequently until thick and creamy. This will take about 15 to 20 minutes.
  • Once your rice pudding is thick and creamy, stir in the remaining 1/2 cup milk. Let it warm up, then scoop about ½ cup of the rice pudding mixture into a medium bowl and add the beaten egg, whisking constantly. This is tempering the egg so that it doesn’t scramble when it’s added to the pot.

In recent years, rice pudding has fallen back into favor as a classic, nostalgic dessert and it’s a bit sweeter, too.
