2 tablespoons ghee or canola oil
1 medium yellow onion, halved and thinly sliced
2-inch piece fresh ginger, peeled and finely grated
1 serrano chile, finely diced
3 cloves garlic, finely chopped
1 tablespoon tomato paste
2 teaspoons smoked Spanish paprika
2 teaspoons garam masala
1 (28-ounce) can plum tomatoes, pureed until smooth
Honey
1/4 to 1/2 teaspoon chile de arbol or cayenne powder (depending on how spicy you like it)
1/2 cup water
Salt and freshly ground black pepper
3/4 cup heavy cream
Chopped cilantro leaves
1 red onion, cut into thin rings and soaked in ice water
1 1/2 cups basmati rice
1 1/2 tablespoons vegetable oil
1 1/4 teaspoons black mustard seeds
1/2 cup finely diced yellow onion
6 cardamom pods
4 whole cloves
1 (3-inch) cinnamon stick
2 1/4 cups simmering water
1 1/2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
2 teaspoons fresh lime juice
3/4 cup frozen green peas

Steps:

  • Heat the ghee in a medium Dutch oven over medium heat until it begins to shimmer. Add the onion and cook until soft and lightly golden brown, about 10 minutes. Stir in the ginger, chile and garlic and cook for 1 minute. Add the tomato paste, paprika, and garam masala and cook for 1 minute. Add the tomatoes, honey, to taste, the chile de arbol or cayenne and 1/2 cup of water and cook, stirring occasionally, until slightly thickened. Season with salt and pepper, to taste.
  • Stir in the heavy cream, bring to a simmer and cook until the sauce thickens. Add the chicken to the sauce and cook for a few minutes, just to heat through. Serve over basmati rice pilaf with peas and garnish with cilantro leaves.
  • Put the rice in a mesh strainer and rinse with cold water several times. Set aside and let drain.
  • Heat the vegetable oil in a large saucepan over medium-high heat until it begins to shimmer. Add the mustard seeds and cook until they just begin to pop, about 20 seconds. Add the onion and saute until lightly browned, about 3 minutes. Add the cardamom, cloves, cinnamon, rice, the simmering water, salt, pepper and lime juice, and bring to a boil.
  • Reduce the heat to medium, and cook until liquid is nearly absorbed, about 10 minutes Fold in the peas, then over, reduce heat to low, and cook 8 to 10 minutes longer. Remove from the heat and let stand for 5 minutes, uncovered. Remove and discard the cardamom, cloves, and cinnamon and fluff with a fork. Transfer the pilaf to a serving dish and serve.

  • Reduce the heat to medium, and cook 10 minutes or until liquid is nearly absorbed. Fold in the peas. Cover, reduce heat to low, and cook 8 to minutes longer. Remove from heat; let stand for 5 minutes uncovered. Remove and discard cardamom, cloves, and cinnamon and fluff with a fork.

1/4 cup chopped dried apricots
2 wide strips lemon zest
2 cups cold water
3 tablespoons unsalted butter
1 teaspoon garam masala (an Indian spice blend)
1 medium onion, diced
1 1/4 teaspoons kosher salt
1 cup basmati rice, lightly rinsed and drained
Freshly ground black pepper
1 bay leaf
1/3 cup fresh mint leaves
1/4 cup toasted unsalted pistachios or cashews

Steps:

  • Put the apricots and lemon zest in the 2 cups of cold water. Melt the butter in a medium saucepan over medium heat, add the garam masala, and toast, stirring, until fragrant, about 1 minute. Add the onion and 1/4 teaspoon of the salt and cook, stirring occasionally, until the onion is tender and translucent, about 6 minutes.
  • Stir in the rice and cook, stirring occasionally, until it begins to brown, about 4 minutes. Stir in the water along with the apricots, lemon zest, the remaining 1 teaspoon salt, and pepper to taste. Bring to a simmer. Reduce the heat to low, wrap a clean dish towel around the saucepan lid, and cover saucepan. Cook for 10 minutes, set aside for 5 minutes undisturbed, then remove lid and fluff with a fork. Mound the pilaf on a serving platter or in a shallow bowl, tear the mint over, and top with the nuts.
  • Game Plan: Toast the nuts while the rice cooks.

3/4 pound red-skinned potatoes, peeled, cut into 1/2-inch cubes
3/4 TSP turmeric
1 10oz package frozen peas
1/4 TSP cayenne pepper
2 cups basmati rice
4 cups water
1 1/2 TSP salt
3/4 TSP ground garam masala
1/2 cup chopped fresh cilantro

Steps:

  • Stir first 6 ingredients in large saucepan over medium heat-high heat until cumin is slightly darker, about 2 minutes. Add potatoes. Saute until potato edges are translucent, about 4 minutes. Add turmeric; stir 30 seconds. Add peas and cayenne; stir 1 minute. Add rice; stir 1 minute. Add 4 cups water, salt, and garam masala; bring to boil. Stir, reduce heat to very low, cover, and cook until rice is tender and water is absorbed, about 22 minutes. Using fork, fluff rice pilaf. Mix in cilantro and serve.

1/2 teaspoon ground allspice
6 ounces firm or extra-firm tofu, drained well, cut into 1/2-inch pieces
1 1/2 cups frozen peas, thawed
3 tablespoons chopped fresh cilantro

Steps:

  • Heat oil in heavy large skillet over medium heat. Add onion; sauté until golden, about 6 minutes. Add tomatoes with their juices, potato, cumin and allspice. Cover; simmer until potato is just tender, stirring occasionally, about 8 minutes. Add tofu, peas and cilantro. Simmer uncovered until vegetables are tender, about 6 minutes. Season with salt and pepper.

4 whole cloves
3 black cardamom seeds
6 whole black peppercorns
2 (3 inch) cinnamon sticks
2 teaspoons garlic powder
2 tablespoons water
1 cup frozen green peas, thawed
2 cups uncooked basmati rice, rinsed and drained
4 cups water
salt to taste

Steps:

  • Heat the oil in a deep heavy skillet over low heat. Add the cloves, cardamom seeds, peppercorns and cinnamon sticks. Cook for a few minutes to bring out the aroma of the spices. Stir the garlic powder and 2 tablespoons of water together to make a paste; mix into the pan with the spices.
  • Add the green peas to the pan, cover and cook for about 5 minutes.
  • Add the remaining 4 cups of water and rice to the pan. Season with a little salt. Bring to a boil, then cover, and cook for about 15 minutes, until the rice is tender and the water has been absorbed. Taste, and adjust the salt before serving.

2 cups basmati rice (or long grain rice)
2 cups water
2 tablespoons butter (or ghee)
1 tablespoon cumin seed
1 tablespoon fresh ginger, grated
1 cup shelled green peas
1 cup potato, peeled and chopped fine
2 tablespoons powdered coriander seeds
1 teaspoon powdered garam masala
1 tablespoon salt
1 teaspoon turmeric
4 cups water

Steps:

  • Wash rice and soak in 2 cups of water for an hour. Drain well.
  • In a heavy pan, heat the butter and add the cumin and the ginger.
  • When the ginger becomes a light brown, add the peas and potatoes, coriander, garam masala, salt and turmeric. Stir-fry till well mixed.
  • Add the drained rice & 4 cups of water, bring to a boil uncovered, then lower the heat to simmer and cover. The rice should be done in 10 minutes.
  • Serve hot.

Steps:

  • Preheat oven to 350°F.
  • In a medium stove-to-oven pot melt butter over medium heat.
  • Add chopped onions, garlic and garam masala and cook 3 to 5 minutes, stirring until onions are softened.
  • Add rice and stir until well coated.
  • Add vegetable stock, salt and pepper to taste.
  • Bring to a boil.
  • Cover and bake in the oven until the rice is tender and the stock is absorbed, about 20 to 25 minutes.
  • Let stand, covered for 5 minutes before serving.
