CRESCENT CHICKEN BUNDLES
Steps:
- Preheat oven to 350 degrees and lightly grease a baking sheet.
- In a large bowl, use a hand-held mixer or a wooden spoon to mix the cream cheese, 2 tablespoons melted butter, milk, salt, pepper, and red pepper flakes together.
- Stir in the chicken and green onions.
- Unroll the crescent roll dough and separate it into 8 rectangles. Try to stretch them a little into more of a square shape. Press on the preforations to seal them.
- Divide the chicken mixture evenly between the 8 pieces of dough, placing it in the center of each piece.
- Bring the edges of the dough up to the center to form a bundle and press to seal the edges.
- Place them on the prepared baking sheet. Brush the tops with the remaining 2 tablespoons of melted butter.
- Sprinkle the tops with the stuffing mix and Parmesan cheese.
- Bake for 20 to 25 minutes.

Steps:
- Combine first six ingredients on medium bowl. Set sauce aside.
- Bring broth to boil in large saucepan. Working in batches, add cabbage leaves. Cover and simmer until leaves are wilted, about 2 minutes. Using slotted spoon, transfer leaves to bowl of cold water. Drain leaves; pat dry. Add beans to broth in pan; until tender, about 2 minutes. Using slotted spoon, add beans to sauce. Pour off all but 1/4 cup liquid from saucepan. Add chicken; stir over medium heat until cooked through, breaking up meat with spoon, about 3 minutes. Drain chicken; add to sauce. Season with salt. Cool. (Can be made 3 hours ahead. Cover chicken mixture and cabbage seperately; chill. Bring to room temperature before continuing.)
- Place 1 cabbage leaf on work surface. Mound scant 1/4 cup chicken mixture in center of leaf. Fold in 3 sides of leaf; roll up to form bundle. Reapeat with remaining 11 cabbage leaves and chicken mixture.

- Heat oven to 375°F In medium bowl, mix all ingredients except dough and additional sliced green onions; set aside.
- On large ungreased cookie sheet, unroll dough and separate into 4 rectangles; press each into 7x4 1/2-inch rectangle, firmly pressing perforations to seal.
- Spoon about 1/2 cup chicken mixture onto one end of each rectangle. Fold dough in half over filling; firmly press edges with fork to seal. With fork, prick top of each to allow steam to escape.
- Bake 13 to 18 minutes or until deep golden brown. Immediately remove from cookie sheet. Garnish with additional sliced green onions. Serve warm.

BARBECUE CHICKEN BUNDLES
I got this recipe a long time ago from a Land O Lakes cooking mag. This is excellent for summer BBQ's as a steak or burger alternative. You can also use different types of cheese as well. You can also broil this dish in the oven at 400 degrees for 30 minutes, then turn over and cook for 20 minutes. You will need to half cook the bacon first if you broil this dish!

Steps:
- Prepare grill: place coals to one side.
- Heat until coals are ash white.
- Prepare aluminum foil drip pan, place opposite coals.
- Make slit in each chicken breast half to form a pocket.
- Place 1 chunk of cheese in each pocket.
- Roll each chicken piece into a bundle, and wrap bacon criss cross (2 slices) around chicken.
- Secure bacon with wooden picks.
- Place bundles on grill over drip pan.
- Grill, turning every 15 minutes, for 30 to 45 minutes, or until chicken is fork tender.
- Baste with barbecue sauce during the last 10 minutes of grilling.
- If crisp bacon is desired, place bacon over direct heat, turning 2-3 times during the last 10 minutes.
CHICKEN BUNDLES
Easy recipe that everyone has loved so far! The recipe originally came from a Pillsbury cookbook from the grocery store, but after experimenting a bit this is what I came up with!

Steps:
- Heat 2 tablespoons butter in a large skillet on medium heat.
- Sprinkle chicken breasts with pepper. Saute about 5 minutes on each side until browned.
- While chicken is cooking, roll out crescent rolls to make 4 rectangles.
- Spread garlic-cheese on each crescent rectangle.
- When the chicken is browned, place each breast in the center of a rectangle.
- Wrap the chicken in the crescent rectangles.
- Place in the oven for 25 minutes at 350°F.
- During the last 5 minutes in the oven, spread melted butter onto the bundles and sprinkle with Mrs. Dash garlic and herb seasoning.

- Cook onions in olive oil. In large mixing bowl combine spinach, ricotta cheese, Parmesan cheese, garlic powder, oregano, nutmeg, and lemon juice. Stir in chicken and onions. Season to taste with salt and pepper.
- Spray eight, 10-oz. custard cups with non-stick spray. Line each dish with an egg roll wrapper. Divide chicken mixture among the 8 dishes. Fold the ends of each wrapper over the top of the chicken mixture,sealing to make a bundle. Brush with melted butter. Bake in 350°F oven for 20-25 minutes or until tops are golden.
- To serve, loosen bundles with a knife and and remove from cups.
POBLANO CHICKEN BUNDLES
As the saying goes, "this dish is right up my alley". We love poblano peppers and this recipe combines them with Monterey jack cheese rolled up in a chicken breast. - Place each chicken breast half between two pieces of plastic wrap. Using the flat side of a meat mallet, pound chicken until 1/8 inch thick. Remove plastic wrap.
- Divide the 2 tablespoons cilantro evenly among the chicken pieces. Place a cheese stick and three poblano strips across the center of each chicken piece. Fold in sides; roll up from bottoms and secure with wooden toothpicks.
- In a shallow dish combine cornmeal, chili powder, and salt. In another shallow dish combine egg white and the water. Dip chicken bundles into egg white mixture and then into cornmeal mixture, turning to coat.
- In a large nonstick skillet heat oil over medium heat. Add chicken bundles, seam side down. Cook about 10 minutes or until browned on all sides, turning occasionaly. Reduce heat to medium-low. Cover and cook for 10-12 minutes more or until no longer pink turning once. If desired, serve with pico de gallo and sprinkle with additional cilantro.
