2-1/2 teaspoons cornstarch
1/3 cup reduced-sodium soy sauce
1/4 cup white wine or reduced-sodium chicken broth
2 teaspoons sesame oil
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
1/2 cup reduced-sodium chicken broth
2 tablespoons sugar
1 tablespoon Worcestershire sauce
3/4 teaspoon chili powder
3 ounces uncooked thick rice noodles
4 teaspoons canola oil, divided
3 cups fresh broccoli florets
2/3 cup chopped green onions
3 garlic cloves, minced
2 teaspoons minced fresh gingerroot
1/4 cup unsalted dry roasted peanuts

Steps:

  • In a small bowl, combine the cornstarch, soy sauce, wine or broth and sesame oil until smooth. Pour 1/4 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 20 minutes. Add the broth, sugar, Worcestershire sauce and chili powder to remaining marinade; set aside. , Cook rice noodles according to package directions. Meanwhile, drain and discard marinade from chicken. In a large nonstick skillet or wok, stir-fry chicken in 2 teaspoons canola oil until juices run clear; remove and keep warm. , Stir-fry broccoli in remaining canola oil for 5 minutes. Add the onions, garlic and ginger; stir-fry 3-5 minutes longer or until broccoli is tender. Return chicken to the pan. Stir reserved broth mixture and stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain noodles; toss with chicken mixture. Garnish with peanuts.

2 skinless boneless chicken breasts (sliced into bite-size strips)

1/2 cup chicken stock
2 tablespoons soy sauce

Steps:

  • Fill pot with water add salt and bring it to a boil. Place noodles into the pot and cook them on medium heat until barely tender, about 2 minutes. Drain the water and stir in 1 tablespoon of olive oil. Set aside.
  • In a large skillet, heat 2 tablespoons of olive oil over high heat, carefully add chicken and stir-fry on high heat, constantly stirring for about 3 minutes. Remove chicken from the skillet on to the plate and set aside.
  • Combine bell peppers, broccoli, mushrooms, and ginger in the same skillet and stir-fry on medium heat for 3 minutes.
  • Using a mixing bowl and a spoon, whisk chicken stock, soy sauce, ketchup and cornstarch.
  • Return chicken to the skillet, add noodles and chicken broth mixture and stir-fry for 3 minutes or until chicken is cooked through. When serving drizzle sesame oil. Grab a fork and enjoy!

1 tsp cornflour / cornstarch ((optional))
1 tsp oil ((peanut, vegetable, canola) (optional))

1 tbsp dark soy sauce ((Note 2))
1/2 tsp each sesame oil, sugar ((optional))
1 1/2 tbsp Chinese cooking wine ((Shoaxing wine) OR Mirin (Note 3))

Steps:

  • Mix chicken, cornstarch and oil in a bowl.

  • Add noodles, Choy Sum leaves and Sauce. Toss for 1 minute until leaves have wilted and Sauce has evaporated. Don't toss for more then 1 1/2 minutes - noodles may break.

7 ounces rice stick noodles
1/2 cup chicken broth or vegetable broth
1 tablespoon soy sauce (more to taste)
1 tablespoon Shao Hsing rice wine or dry sherry
1 tablespoon minced garlic
1 tablespoon minced ginger
1/4 to 1/2 teaspoon red pepper flakes (to taste)
2 tablespoons peanut oil or canola oil
1 pound chicken breasts, cut across the grain into slices 1/4 inch thick
3/4 pound carrots, peeled and cut into 2-inch-long julienne (matchsticks)
3/4 pound turnips, peeled and cut into 2-inch-long julienne (matchsticks)
2 tablespoons sesame seeds
Salt to taste
1/2 teaspoon sugar
1/4 cup coarsely chopped cilantro
2 teaspoons sesame oil

Steps:

  • Place the noodles in a large bowl and cover with warm water. Soak for at least 20 minutes, until soft. Drain in a colander and, using kitchen scissors, cut into 6-inch lengths. Set aside within reach of your wok or pan.
  • Combine the broth, soy sauce and rice wine or sherry in a small bowl. Combine the garlic, ginger and pepper flakes in another bowl. Have everything within reach of your wok or pan.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in 1 tablespoon of the oil and add the chicken in a single layer. Season with salt and let sit for 1 minute without stirring, then stir-fry for another 2 to 3 minutes, until opaque. Scoop out of the wok or pan and set aside in a bowl or on a plate.
  • Swirl the remaining oil into the wok or pan and add the garlic, ginger and chili flakes. Stir-fry no more than 10 seconds and add the carrots, turnips and sesame seeds. Stir-fry for 1 minute and add the broth, the chicken with any liquid that has gathered in the bowl or on the plate, the salt and the sugar, and stir-fry for 1 minute. Add the noodles, reduce the heat to medium-high and stir-fry 1 to 2 minutes, until the vegetables are crisp-tender. Add the cilantro and sesame oil, remove from the heat and serve.

1 cup bean sprouts
1/2 cup diced pinapple (optional)
2 tablespoons canola or vegetable oil
3 tablespoons red curry paste

Steps:

  • Bring a large pot of water to a boil. Simmer rice noodles for about 5 minutes. Strain and set aside.
  • Heat 1 tablespoon of oil in a wok or large pan on medium-high heat. Add chicken and season with salt and pepper. Simmer until cooked through, about 5-7 minutes. Add broccoli, pineapple, carrots, sprouts, soy sauce, and oil. Simmer until tender, about 5 minutes. Transfer all contents to a bowl and set aside.
  • Add coconut milk, red curry paste, garlic, and sriracha to the now empty wok or pan. Stir and boil for 5-7 minutes or until slightly reduced.

1 garlic clove, (finely chopped)
1/2 small onion, (thinly sliced)
80 gm pak choy or you choice of Asian green, (roughly chopped)
200 gm chicken breast or thigh, (thinly sliced)
600 gm fresh rice noodles
2 tsp water
1 tsp dark soy sauce
1 tbs oil
100 gm bean sprouts
2 tbsp light soy sauce
2 tbsp oyster sauce
1 tbsp Chinese cooking wine
1 tsp sugar
1 stalk spring onion (scallion), (chopped (optional))
4 stalks coriander, (chopped (optional))
sriracha sauce ((optional))

Steps:

  • Prepare all your vegetables and chicken, and combine all the sauce ingredients in a bowl.
  • In a large bowl, add your rice noodles. With your hands, pull apart any strands that are stuck together.
  • In a small bowl, mix the water with the dark soy sauce. Then pour over the rice noodles and use your hands to gently combine. Leave aside until needed.
  • Bring a large non stick fry pan / wok to high heat and add 1 tbsp of oil. Once smoking, add the chicken and fry for 30 seconds.
  • Add the garlic and onion. Cook until there is no pink left on the chicken and then add 2 tbsp of the sauce and stir-fry for 20 seconds.
  • Add the pak choy to the fry pan / wok and toss. Once the pak choy starts to wilt add the noodles and the rest of the sauce. Toss the noodles and let it warm through for a minute.
  • Check the noodles are hot, then add the bean sprouts. Toss the noodles again and serve immediately.
  • Garnish with coriander and/or spring onions and serve with sriracha (if using).

Steps:

  • Boil a pot of water and cook noodles according to package directions until they're just tender.

  • Add the oil and chicken to a skillet or wok. Cook on medium-high heat for 5 minutes, stirring often.
  • Add the sauce to the pan and give it a good stir to coat the chicken. Cook for an additional couple minutes, stirring often, or until the chicken is cooked through (but don't overcook). The sauce will thicken up.

  • Bring medium size pan of salted water to a boil. Add noodles and cook them on medium heat for about 2 to 4 minutes (depending on thickness of noodles), or until barely tender. Drain and stir in 1 tablespoon of vegetable oil.
  • In a large wok or skillet, heat 2 tablespoons of vegetable oil over high heat. Season chicken lightly with salt and pepper then place it into the hot skillet and stir-fry about 3 minutes or until just cooked through. Remove from the skillet and set aside.
  • Add bell peppers, broccoli and mushrooms and saute 1 minute then add ginger to the skillet and stir-fry for another 2 minutes.
  • In a mixing bowl combine chicken stock, soy sauce, ketchup and cornstarch.
  • Add chicken, noodles, and broth mixture to the skillet and stir-fry for 3 minutes or until chicken is hot and fully cooked through.
  • Right before serving drizzle sesame oil and season to taste with salt and pepper as desired. Grab a fork and enjoy!

8 oz rice noodles ((beehoon) (225g))
8 oz chicken breast ((cut into strips) (225g))
1 tbsp Shao Hsing cooking wine
3 tbsp soy sauce ((divided))
3 tbsp vegetable oil
1 red onion ((thinly sliced))
1 medium carrot ((julienned))
10.5 oz broccoli ((cut into florets) (300g))
2 cloves garlic ((minced))
2 tbsp fish sauce
Salt (and pepper to taste)
4 tbsp fried shallots ((for garnishing))
Pickled green chilies ((optional))

Steps:

  • Soak rice noodles (beehoofor 30 minutes. Drain. Combine chicken, Shao Hsing rice wine, soy sauce, and a dash of pepper in a bowl. Mix well.
  • Heat 1 tablespoon vegetable oil in a wok. Stir fry red onion, carrot, and broccoli for 3 minutes. Remove and set aside.
  • Add remaining 2 tablespoon vegetable oil to the wok. Saute garlic for 30 seconds. Add chicken and stir fry for 3 minutes.
  • Add rice noodles, fish sauce and remaining 2 tablespoon soy sauce. Stir to get everything well mixed. This should take about 5 minutes.
  • Return cooked vegetables to the wok. Season with salt and pepper. Stir to get everything well mixed, about 2 to 3 minutes. Turn off stove.
  • Serve immediately with fried shallots and pickled green chilies.

This stir fried carrot noodles dish produces a wonderful wok hay flavor from stir frying the carrots at searing high heat. The carrot noodles added an extra layer of flavor to the dish that you normally would not get using wheat noodles.

1 pound boneless skinless chicken thighs ((450g, cut into bite-sized pieces))
2 teaspoons vegetable oil ((plus 2 tablespoons))
1 teaspoon sesame oil
2 teaspoons cornstarch
1 teaspoon sugar ((or honey))
1 1/2 tablespoons soy sauce ((plus 1 tablespoon))
1/2 teaspoon crushed red pepper flakes
5 slices ginger
6 medium carrots ((julienned or spiralized into long "noodles"))
2 scallions ((cut into 2-inch lengths))
3 cups baby spinach

Steps:

  • In a bowl, combine the chicken with 2 teaspoons oil, sesame oil, cornstarch, sugar or honey, 1 1/2 tablespoons soy sauce, and crushed red pepper flakes. Set aside to marinate for 30 minutes.
  • Heat 2 tablespoons of oil in a wok or skillet over medium heat. Add the ginger, and fry for 1-2 minutes, until fragrant and slightly crisp. Add the chicken all in 1 layer, and allow to sear on one side for 1 minute.
  • Once seared, stir-fry the chicken for a few seconds, and then add the carrot noodles. Stir-fry for another 1-2 minutes, and add an additional tablespoon of soy sauce, along with the scallions. Stir-fry for 1 minute, and then add the baby spinach.
  • Stir in the spinach until it's just wilted (it should only take a few seconds). Serve, and top with more chopped scallions if desired!

Steps:

  • In a large bowl, soak the rice noodles in 10 to 12 cups of cold water for 2 hours. Drain and cover with a damp towel to retain moisture. In a wok or large frying pan, heat the oil and stir-fry the garlic until it is light brown. Add the shrimp, bean curd and pickled turnips; stir in the vinegar, fish sauce, paprika and sugar. When thoroughly mixed, fold in the noodles. When the noodles are completely coated, spread them out to the sides of the wok or frying pan, leaving a space in the middle. Add the beaten eggs. As the eggs cook, fold the noodles over them and stir to combine all of the ingredients evenly. Stir in half of the bean sprouts, then add the scallions, ground peanuts and chopped chili pepper. Toss several times to mix well. Serve on a large platter with lemon wedges. Top with the remaining bean sprouts and garnish with coriander leaves. Serve the crushed red pepper on the side, for those who like it extra-spicy.
