1 cup canned pumpkin
1 cup white sugar
½ cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder

1 tablespoon vanilla extract
2 cups semisweet chocolate chips
½ cup chopped walnuts

Steps:

  • Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
  • Add vanilla, chocolate chips and nuts.
  • Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.

2 cups white sugar
2 eggs
2 teaspoons vanilla extract
1 (15 ounce) can pumpkin puree
4 cups all-purpose flour
1 ½ teaspoons baking soda
1 ½ teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1 pinch ground nutmeg
1 cup semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening and white sugar until smooth. Beat in the eggs one at a time. Stir in the vanilla and pumpkin until well blended. 1 can pumpkin puree (15 ounce)

Steps:

  • Preheat your oven to 350 degrees F and line a baking sheet with parchment or a baking mat.
  • In a medium mixing bowl add the dry cake mix (but none of the other ingredients called for on the box), 1 can pumpkin puree, and one egg.
  • Mix to combine well. Add the chocolate chips and stir to combine.
  • Using a cookie scoop, place a large tablespoon of dough on your cookie sheet 2 inches apart. They don't spread much so you can get them closer than other cookies.
  • Bake for 12-14 minutes until they spring back slightly when touched and no longer look shiny.
  • Let cool on the pan for 3 minutes before placing cookies on a wire rack to finish cooling.
  • Repeat baking instructions with remaining dough.

1 cup (226g) unsalted butter (melted)
⅔ cup (134g) granulated sugar
1 cup (200g) brown sugar (packed)
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda

3 cups (372g) all-purpose flour
3 cups (510g) semi-sweet chocolate chips
1 10.8 ounce bag Werther's Originals Chewy Caramels, unwrapped
⅓ cup (79ml) heavy whipping cream
1 tablespoon (8g) all-purpose flour

Steps:

  • Preheat oven to 350°F. Line a 9x13-inch pan with foil and spray it with nonstick cooking spray.
  • Place melted butter in a large bowl. Add granulated and brown sugars and stir until the mixture is smooth. You can use a mixer if you prefer but it's easy to do by hand.
  • Stir in eggs and vanilla extract, then stir in baking soda and salt. Slowly mix in 3 cups flour and stir just until the batter is smooth and comes together. Stir in chocolate chips.
  • Press half the batter into the bottom of the prepared pan.
  • Place caramels and cream in a medium microwave-safe bowl. Heat on high power for 1 minute, then stir until the cream mixes into the melted caramels, heating in additional 30 second increments until caramel is melted and smooth. You can also do this in a medium saucepan over medium-low heat.
  • Stir remaining 1 tablespoon flour into the caramel. Pour caramel mixture over cookie dough in pan, leaving a small border around all the edges.
  • Break off pieces of the remaining dough and flatten between your hands. Lay on the top of caramel. Continue until the entire pan is covered, pressing the edges to seal them together. The cookie dough won't make a solid cover and a little of the caramel may peek through.
  • Bake for 30-35 minutes, or until the bars are light golden around the edges and on top. Cool completely before slicing.
